    Classic Cream Cheese & English Cucumber Sandwich

    Craving a light, fresh snack that's as easy as it is elegant? This Cucumber & Cream Cheese Sandwich is your new go‑to: soft white bread, a generous layer of softened cream cheese, crisp cucumber slices, and a sprinkle of salt & pepper. Ready in about five minutes and perfect for afternoon tea, picnics, or a quick garden-party nibble.

    One of my favorite parties to host is an Afternoon Tea. There is something so beautiful about getting together with my girlfriends and enjoying a variety of sandwiches, individual desserts, and scones with lots of clotted cream!

    The sandwiches we love are egg salad, curried chicken salad, smoked salmon, carrot cheddar sandwiches, and this cucumber and cream cheese sandwich. They are all great appetizer sandwiches for parties too!

    Simple Ingredients for Classic Tea-Time Sandwiches

    You only need a few things, but make sure they are of good quality! The same principle applies to my tomato sandwich, so easy and delish!

    • White Sandwich Bread. I prefer to use soft white bread slices or soft whole wheat bread.
    • Softened Cream Cheese. You can use block-style cream cheese or use whipped cream cheese. I prefer to use whipped cream cheese since it spreads easier but if you have block cream cheese only then let it sit at room temperature a little bit to soften.
    • Cucumbers. In my opinion, the best are English Cucumbers or Persian Cucumbers. Slice them very thin so you can stack them high. Sometimes it's nice to peel the cucumbers but I like to visually see the dark edges of them.
    • Salt and Pepper. Be generous with the salt and pepper, season to taste!

    From Classic to Creative: Cucumber Sandwich Variations

    • Mix cream cheese and mayo together.
    • If you like fresh herbs you could add them- some like fresh dill or chives, sometimes I use watercress on the sandwich too! A squeeze of fresh lemon juice always brightens things up as well. 
    • ¼ of a teaspoon garlic powder sprinkled on top of the cream cheese spread would be scrumptious too!

    Let's Make This Sandwich in 5 Minutes

    Make sure your slices of bread are fresh!

    Spread the bread with cream cheese.

    Thinly slice them you need about 2"-3" of cucumber per sandwich.

    Layer the sliced cucumbers on and sprinkle on salt and pepper then top with the other slice of cream cheese bread.

    Use a serrated knife to cut the crusts off.

    Slice the sandwich into three rectangles or slice the sandwich in a diagonal both ways to create 4 triangles.

    If preparing ahead of time place on a sheet pan and place a damp paper towel on top of keeping the sandwiches from drying out. But don't prepare the sandwiches too far in advance or you risk the bread getting soggy.

    There you have it my favorite cucumber and cream cheese sandwiches! The recipe is written for one sandwich, so adjust accordingly to however many sandwiches you need!

    Here is how to make an easy, fresh cucumber and cream cheese sandwich. Cucumber-cream cheese sandwiches are easy to make and tasty. Often served at Afternoon Tea, this sandwich is perfect anytime.

    • Total Time: 5 minutes
    • Yield: 1 Sandwich 1x

    Ingredients

    Scale
    • 2 Slices White Sandwich Bread
    • 1oz-2oz Softened Cream Cheese, Whipped or Block
    • 1 English Cucumber or Persian Cucumber
    • Salt and Pepper, to taste

    Instructions

    1. Take two slices of white bread and spread them both with cream cheese. I like to use whipped cream cheese but you can use block cream cheese that has been softened. 
    2. Clean your cucumbers and thinly slice them you need about 2-inches of cucumber per sandwich. Layer the cucumbers and sprinkle on salt and pepper then top with the other slice of cream cheese bread. Use a serrated knife to cut the crusts off and slice the sandwich into three rectangles or slice the sandwich in a diagonal both ways to create 4 triangles. Serve immediately. 
    3. If preparing ahead of time place on a sheet pan and place a damp paper towel on top of keeping the sandwiches from drying out.
