    Tomato Sandwich

    One of the summer's simplest pleasures, a tomato sandwich is made with fresh summer tomatoes & a few simple ingredients. Yes, it really is as simple to make as it seems.

    During the months of July and August, the tomatoes at my local farmers' market are just unreal. One of my favorite ways to really enjoy them is in a classic tomato sandwich.

    Tomatoes are so simple yet so beautiful, another tomato recipe I love is my easy tomato tart.

    Ingredients

    The key to a good tomato sandwich is using quality ingredients, trust me - get the fresh bread and good tomatoes.

    • Fresh French Bread. I like to use a good quality french bread loaf or French baguette. Good quality white bread is my preference here. If you have a fresh loaf of sourdough that would be delicious too!
    • Good Quality Tomatoes. I use Campari tomatoes or Heirloom tomatoes. Make sure you have ripe tomatoes and make thick tomato slices. If you are lucky enough to have a farmers market near you, you are sure to find some amazing tomatoes there, probably much better than the grocery store!
    • Good Quality Mayonaise. I prefer Duke's Mayonnaise or Chosen Foods Avocado Oil Mayo.
    • Salt & Black Pepper

    Sure you can add some cucumber, fresh basil, bacon slices, fresh lettuce, or cheeses but I love the simplicity without anything else added to this sandwich.

    Instructions

    Wash and slice your fresh tomatoes into thickish slices then sprinkle some salt and pepper on top, set aside while you prepare the bread.

    Slice your bread into thick slices then lightly toast your bread, you want some golden brown spots but you still want it to be a soft bite.

    Slather a thick layer of mayonnaise on the toasted bread then top with the tomatoes. I prefer to keep the sandwich open-faced but you can add another slice of lightly toasted bread that has been spread with mayonnaise on top. Let the sandwich sit for 5 minutes for the tomato juices and mayonnaise to marinate together then enjoy.

    Ingredients

    Scale
    • 2 Slices Fresh French Bread
    • 2-3 Good Quality Tomatoes, I prefer Campari or Heirloom
    • 2 Tablespoons Good Quality Mayonaise, I prefer Dukes or Chosen Foods Avocado Oil Mayo
    • Salt & Pepper

    Instructions

    1. Wash and slice your tomatoes into thickish slices then sprinkle some salt and pepper on top, set aside while you prepare the bread.
