These Carrot Cheddar Sandwiches are a delightful twist on classic tea sandwiches, pairing sweet shredded carrot with sharp cheddar and just enough mayonnaise to bind everything together. They come together in about five minutes and taste fresh yet simple. Perfect for light lunches or elegant tea-time bites.

Growing up there were special occasions when my mom would treat us to afternoon tea. She always made her glorious scones and shortbread and sometimes we would get these special sandwiches too.
I remember this one vividly, because, who wanted a carrot sandwich? I admit it did not sound appetizing at first. But the sweetness of the carrot with the sharp cheese, it's just spectacular.

Sweet Carrot + Sharp Cheddar = Flavor Harmony
For these scrumptious sandwiches you will need:
- Shredded Carrots (about 1 heaping cup from 2 medium carrots) They add moisture, sweetness, and a fresh crunch. Pat dry if the carrots are too wet to help prevent soggy sandwiches.
- Sharp Cheddar Cheese (3 oz, freshly grated) Choose a robust, sharp cheddar-its bold flavor complements the carrots and keeps the sandwich from tasting bland.
- Good-Quality Mayonnaise (2-3 Tbsp) Acts as a binder to help the filling hold together. Using a high-quality mayo makes a noticeable flavor difference.
- White Pepper (to taste) Adds a gentle, warm spice without overpowering the other flavors.
- Sandwich Bread (4 slices, your favorite) Choose soft, neutral bread, buttered on the outside for a light barrier that helps keep sandwiches moist.
We have mixed in chopped green onion to the mix and loved that as well.

You can double or triple this recipe to serve how ever many people you need. Generally as a rule of thumb you should account for 4 tea sandwiches per person.

Ingredients
- 2 Medium Carrots, roughly 1 heaping cup of shredded carrot
- 3oz Sharp Cheddar Cheese
- 2-3 Tablespoons Good Quality Mayonnaise
- White Pepper, to taste
- 4 Slices of Your Favorite Sandwich Bread
Instructions
- Clean your carrot, I don't bother peeling unless it is really stringy and dirty. Use the medium opening on a box grater and grate the carrots. Then grate the sharp cheese.
- Add both to a bowl and add the mayo and white pepper. And mix until fully combined, this shouldn't be super mayo-y, the mayonnaise is just a binder to hold it together,
- Spread four slices of bread with salted butter and pack half of the mixture on two buttered slices then top with the other slices of bread. Use a serrated knife to trim the crusts off and cut them into thirds to create three rectangles.
- These are best enjoyed right away but you can make them an hour or two ahead of time and store them in the refrigerator covered with a damp cheesecloth or paper towel on top to help them from drying out.
