With layers of fudgy chocolate brownie, melty marshmallows, and a graham cracker topping, they bake up with a chewy top and gooey interior. Perfect for sharing, and ideal for dessert when you want flavor turned up.

    Months ago I asked on Instagram for recipe creation ideas. My friend Karla suggested S'mores Brownies. I am embarrassed to say how long it has taken me. To be honest I was kinda over marshmallows and the whole S'mores flavor. I think I just overdid it for a while. Well damn S'mores, I am back and in love. These brownies were freaking fantastic.     Graham Cracker + Brownie + Marshmalllow = Genius Combo

    For these brownies you'll have a few layers; the crust, the brownies and the topping.

    • Graham Cracker Crust
    • Brownies: You can use my homemade recipe or your favorite homemade brownies OR use a boxed brownie mix!
    • Marshmallows: The brownies are topped with a layer of chocolate chips then a layer of marshmallows. We love milk chocolate chips but semi-sweet work great too!

    Mix crushed graham crackers, granulated sugar, and melted butter. Stir until the mixture resembles wet sand.

    Pour the crust into the prepared baking pan and use the bottom of a glass or measuring cup to pack the crust tightly.

    Cover the whole pan in mini marshmallows into a single layer.

    Turn the broiler on low and place the brownies under the heat to broil. Watch carefully so they do not burn.

    These S'mores Brownies are a rich and indulgent twist on classic campfire treats no fire needed. With layers of fudgy chocolate brownie, melty marshmallows, and a graham cracker topping, they bake up with a chewy top and gooey interior.     Ingredients

    Scale

    Graham Cracker Crust

    • 190 Grams (6 ¾oz) Graham Cracker Crumbs, about 11 full-size graham crackers
    • 2 Tablespoons Granulated Sugar
    • 4oz (8 Tablespoons) Unsalted Butter

    Brownies or use a Boxed Brownie Mix

    • 2oz (¼ Cup) Water
    • 1oz (2 Tbsp) Unsalted Butter
    • 250 Grams(1 ¼ cups) Granulated Sugar
    • 90 Grams (Scant Cup) Dutch Cocoa Powder
    • 3oz (scant ⅓ cup) Vegetable Oil
    • 2 Teaspoons Pure Vanilla Extract
    • 1 Large Egg Yolk and 1 Large Egg, at room temp.
    • ⅛ Teaspoon Baking Soda
    • ½ Teaspoon Salt
    • 1 Tablespoon Cornstarch/ Cornflour
    • 60 Grams (scant ½ cup) All-Purpose Flour/ Plain Flour
    • 4oz (½ heaping cup) Chocolate (chips, chunks, or bars chopped)

    Topping 

    • 3.5oz (½ Cup) Chocolate Chunks/ Chips
    • 5oz (1 Cup) Mini Marshmallows

     

    Instructions

    Graham Cracker Crust

    1. Preheat your oven to 350F/180C and line a 9-inch square pan with foil and grease heavily.
    2. In a large bowl whisk the graham cracker crumbs and granulated sugar together. Pour in the melted butter and whisk to combine.
    3. Pour the crust into the prepared pan and use the bottom of a glass or measuring cup to pack the crust. Bake crust at 350F for 10 minutes. While crust is baking prepare brownies.

    Brownies

    1. In a large pot add the water, butter, sugar, and cocoa powder. Cook on medium heat for 2-3 minutes until it is all combined together, the mixture will look weird and not liquidy enough, which is fine. Then add the oil and vanilla extract. Cook on low an additional minute and mix to combine everything.
    2. Take off of the heat, let sit for 5 minutes then add the egg and egg yolk. Whisk to combine.
    3. Add the baking soda, salt, cornstarch, and mix to combine. Gently add the flour by using a spatula to fold in until just combined, just before there are no flour streaks add your chocolate chunks/ chips. Do not over mix, this will affect the end product.
    4. Pour into prepared pan and bake 25-27 minutes. 

    Topping

    1. When brownies are just baked sprinkle on chocolate pieces and cover the whole pan in mini marshmallows turn the broiler on low and place the brownies under the heat. Watch carefully so they do not burn. Take out and let cool completely. To achieve clean cuts you must run your knife under hot water and clean the knife after each slice.

      Can you use full sized marshmallows instead? What about a 9x13 pan?

        You could definitely double the recipe to make a 9X13 pan of brownies! As far as using full-sized marshmallows- you could but they will take longer to soften/ melt. The smaller marshmallows allow the topping to kind of melt into itself, if you used the larger ones I would think that they would either burn a little if you waited for them to completely soften and combine or they wouldn't completely soften and combine as well as mini marshmallows do. I hope that makes sense, if you have any more questions please do not hesitate to ask!

      Made these tonight for a backyard fire pit get together. Such an easy, mess free option for s’mores!!! I think when I do them again I’ll make the graham crust a little thicker and the brownie a little thinner and maybe sprinkle some cracked Graham’s on top. They were almost too chocolatey (is that even a thing???). Definitely a keeper of a recipe though- thanks for posting it!!

      The brownie recipe was outstanding! I added a layer of crushed Oreos between the marshmallows and brownies as well for extra yumminess. I could have used a few more minutes in the oven but the brownies were fudgey and a huge hit.

      What a great idea!! I made a twist on these for a bbq with some friends and they went down so well! I used sugar free digestives (as I can’t get Graham Crackers here in Greece) and omitted the sugar from the base, and made it with coconut oil, a brownie recipe ive saved over the years and colourful chopped up marshmallows for the top! It was ooey gooey and toasty!

      Any recommendations for cutting these? I made them and they were absolutely delicious but when I cut them, the marshmallow layer was super sticky and came off the top!

        Hey Nicole, glad you enjoyed them. I personally have not had issues with slicing. I would suggest trying spraying a knife with nonstick spray or using a hot knife-- dip it in hot water and wipe clean before each slice. I hope that helps, please let me know if it does. Thanks!! XX Liz

      Used a box mix and broke up Hershey bars as the chocolate chips and it turn out wonderful! These were a huge hit!! Perfect to bring to a bbq! Make these ASAP!

      Hi there! 930am in California right now and I'm planning to make these for my niece/nephew twin's COVID quarantine party in a box we're taking to them tomorrow morning. Question, doesn't the crust over bake when you precook it first then cook it again after baking the brownie mix? Just curious. I don't want to ruin these by having too hard or burnt tasting crust. Lol. Would it be safer to not pre cook the pie crust, Instead refrigerate it for an hour and only cook it when you're ready to bake the brownie batter which usually takes 20 minutes or so? Thank you! 🙂

        Hi, Nicole Thanks for reaching out! I am in CA too, Orange County specifically gonna be a hot one today!!! The crust I prebake to "set it" to help it not be too crumbly when cutting it later on. The same concept when making a cheesecake and I prebake the crust for 5-10 minutes then it still bakes with the cheesecake the rest of the time. With the weight of the brownie batter on top of the crust, I don't think it should overbake, I have never had this issue and have made these brownies plenty of times. I would make sure to let them cool completely and use a hot knife wiped dry and clean after each slice to try and prevent as much marshmallow pulling as possible.       What if I only have a 12x10 pan and am using marshmallow fluff? Also, I was thinking of doing a layer of graham crust, brownie, marshmallow fluff, brownie. Or doing a poke brownie then add the marshmallow fluff. I don't know if any of this works, so I would like to know if it will before making a mess of the kitchen. Thank you.

        Hi There! You could do a layer of marshmallow fluff in the center, I do that with my Cookie Butter S'mores Bars recipe. Check out that recipe to see how I suggest layer. If you are using a 12X10 pan then I would personally double the recipe as you are risking very thin layers with such a large pan, you could also try and block off the pan with foil to kind of make a smaller size pan within that pan.         Hi Viv, you could use either, keep in mind the 8inch pan will have a longer bake time. But with the round pan you cant cut perfect squares easily. Totally up to you! I would personally do the 9 inch round pan. Please let me know if you have any questions or if you try the recipe XX Liz

      Omg! I made these last night. Best brownies EVER !!

      I do have a few questions! So I’m making these for a bake-off that me and my coworker do for fun on Saturdays and I made a trial batch yesterday!

      Let me preface this by saying I’m the worst baker out there LOL!

      The brownies took quite long to cook, maybe like 40 mins? I kept sticking a toothpick in it. Once I thought it was ready I put my marshmallows on, It did seem like the edges burned a bit, should I take them out earlier and rely on the broiler to finish them off once I put the marshmallows on? Or should I just put foil on top so it doesn’t burn the top? Also my graham cracker crust didn’t stick together well, is this because I didn’t pack it enough? I thought I did but maybe didn’t! Also one more thing, can I use baking paper instead of foil? Okay thank you so much! This is such a beautiful recipe!!

        Hi Delaney, I made two batches of these brownies today! I was tweaking it and I think the crust does need a little more butter, so I have updated the recipe to call for 4oz of butter in the crust, that helped the graham cracker crust stick a bit better but you will still end up with crumbs, that's just how it is with a graham cracker crust! The brownies for me both cooked at about 25 minutes at 350F, I used a toothpick stuck in the center and I had moist thick crumbs, not wet batter. Everyone's oven is different so I would check that it is calibrated properly and adjust accordingly. I have always used heavily greased foil since I find that a bit stronger when removing the brownies from the pan.         Hi Deb, thanks for reaching out. I have frozen tons of brownies and always have success but I have never frozen these with the marshmallow top so I am just not 100% sure how well the marshmallows do with freezing and thawing. I would wrap each piece in plastic wrap twice then store in a large freezer-safe bag or container. Then thaw a piece at a time on the counter for an hour or so depending on how large your brownie pieces are.       I had sky high hopes for these brownies, but in reality it was more how I thought about them than how they actually taste. They should be eaten while still warm for any kind of benefit of the marshmallows, otherwise it's just like a slab of rubber on top of some good brownies. The graham cracker crust was okay, but not very forward in the mix of the brownie and marshmallows and chocolate chips.
      I think I'll stick to making s'mores and making brownies, but not together.

      Do you know how I would adjust the baking time if I want to make brownie BITES?

        Hi Dana, I have a brownie bites recipe to https://confessionsofabakingqueen.com/brownie-bites/ I would follow that but maybe bake the crust for 4-5 minutes then take the brownies out at minutes 18-20 and add marshmallows on top to cook the marshmallows. I have personally never done this so I cannot say with certainty but that would be my guess. Please report back if you try it, would love to know how you get on! thanks! XX Liz

      These brownies were a greasy mess - too much butter in the graham cracker crust!
      A waste of good ingredients. Very disappointing.

      I made these for my mom's bake sale and they were a massive hit! I didn't get to taste any, but they looked so delicious that I'll be making them again tonight for my roommate and I. I don't have a 9x9 so I'll be using an 8x8; I will probably leave out a tiny bit of brownie batter to account for overflowing of the marshmallows at the end + bake for longer. Thanks for the awesome recipe!

      This is super tasty and looks just like the pics. Directions were spot on. The brownies are fudgy and a little hard to pour over graham cracker base so take your time to not break the crust. I baked the marshmallows for about five minutes before broiling them. Yum and would make again.

      I made the brownies exactly as written and they came out perfect.
      I brought them to book club and everyone raved.
      with the graham cracker crust, the fudgy brownies, and toasted marshmallows, what's not to love?!

        Hi Chanel, I have never frozen these, I would be a little hesitant with the marshmallows. Maybe freeze them without the marshmallows and do that part once they are thawed again. Please let me know if you have any questions or if you try I would love to know what you think! XX Liz

      Delicious and very easy (I used a boxed brownie mix). The marshmallows look so beautiful on top! Don’t ignore her mention of getting the knife hot when you cut but first wait for the brownies to cook completely to make it the neatest. Yummy recipe they were a hit!! VERY rich though so I cut them in small bite size pieces

      I am excited to make these, I am going to use 2 boxes of Giardelli mix and I will click on 2x to get the proper amounts of other ingredients, is that correct? Going to a bbq and think these will be a big hit!

        Yay! I am sure you will love them Jenn! Just be careful because when you press 2X it doubles the first quantity but because I list two measurement quantities for example the butter in the crust if you press the 2X the 4oz turns to 8oz but the tablespoons remain the same. So just keep that in mind! Please report back how you like the brownies! XO Liz
