Christmastime is a great time to make a double or triple batch of this recipe and share it with loved ones. Sometimes I make a box and add my chocolate toffee brittle or almond roca recipe too. This is also great to make during the summer as you don't need to turn the oven on!

Let's get to the recipe
What is chocolate salami?
Chocolate salami is an Italian dessert with chocolate, biscuits, and nuts. There is no meat in chocolate salami. The name chocolate salami comes from the appearance of the dessert once it is sliced up to be served. The inside of the chocolate log has all the different colors and sizes bits of biscuits and nuts then it's sliced into rounds creating a salami look. You can also find versions of this delicious chocolate treat in Eastern European countries.
Ingredients
For this chocolate treat you will need:
- Good Quality Dark Chocolate. Chocolate is the star of the show here so don't skimp out on cheap chocolate. I use Callebaut Chocolate Callets. Any good quality chocolate bar chopped up would be great too!
- Salted Butter. The butter gives the chocolate salami a gorgeous buttery taste.
- Heavy Whipping Cream. The cream helps the chocolate become more liquid to help create the binder for the biscuits.
- Digestive Biscuits or Amaretti Biscuits. I use Digestive Biscuit's but you can also use Amaretti biscuits if you want. Or use another kind just make sure they are plain & crunchy. Maria cookies would work great.
- Hazelnuts and Pistachios. These are my two favorite nuts to use but you could use other nuts if you wanted. I highly suggest using toasted or roasted nuts because the flavor profile is so much better. Walnuts, almonds, or pecans are great options!
- Confectioner's Sugar. The sugar acts as the coating outside which helps give it the iconic salami look.
- Sea Salt. When I serve a plate of these sometimes I add some sea salt just for a sweet and salty flare!
If you are into fruit and nuts then you could add a ½ cup of dried fruit, I would try dried cherries, raisins, or cranberries!
If you are looking for an adult-friendly treat try adding a teaspoon or two of your favorite liqueur like Kahlua or some brandy to the chocolate ganache once it's melted.

Instructions
In a large, heavy-bottomed pot over low to medium heat on the stove, melt together the chocolate, butter, and heavy cream. Make sure you stir continuously so that the chocolate does not burn. Once most of the chocolate has melted. You can take it off the heat and the residual heat will continue to melt the remaining chocolate.
Place the digestive biscuits in a Ziploc bag and crush them up into medium and small chunks. On a clean cutting board with a sharp knife roughly chop the nuts.

When the chocolate mixture is fully melted stir in the cookies/nuts, mixing until fully combined. Take a long place piece of plastic wrap and dump the chocolate salami mixture on it, use your clean hands and the plastic wrap to form the mixture into a log, then roll it tight and place it in a large cup if it overhangs that is OK. Store the chocolate log in the refrigerator for at least four hours or overnight, storing it in the cup helps keep the round shape as opposed to it falling flat on a shelf.

Once the chocolate salami has set up unroll it and add powdered sugar using your clean hands to press it into all the sides of the salami.

Use a sharp knife to slice a third of an inch-sized pieces. Store leftovers in an airtight container in the refrigerator for up to a week. I also love to freeze the chocolate salami for a delicious frozen treat, I let it thaw just a little bit so I don't break my teeth!
