- 2 Slices Fresh French Bread
- 2-3 Good Quality Tomatoes, I prefer Campari or Heirloom
- 2 Tablespoons Good Quality Mayonaise, I prefer Dukes or Chosen Foods Avocado Oil Mayo
- Salt & Pepper
Instructions
- Wash and slice your tomatoes into thickish slices then sprinkle some salt and pepper on top, set aside while you prepare the bread.
- Slice your bread into thick slices then lightly toast your bread, you want some golden brown spots but you still want it to be a soft bite.
- Slather a thick layer of mayonnaise, I use around one tablespoon per slice, on the toasted bread then top with the tomatoes. I prefer to keep the sandwich open-faced but you can add another slice of lightly toasted bread that has been spread with mayonnaise on top. Let the sandwich sit for 5 minutes for the tomato juices and mayonnaise to marinate together then enjoy.
