One of the summer's simplest pleasures, a tomato sandwich is made with fresh summer tomatoes & a few simple ingredients. Yes, it really is as simple to make as it seems.

Ingredients

  • 2 Slices Fresh French Bread
  • 2-3 Good Quality Tomatoes, I prefer Campari or Heirloom
  • 2 Tablespoons Good Quality Mayonaise, I prefer Dukes or Chosen Foods Avocado Oil Mayo
  • Salt & Pepper

Instructions

  1. Wash and slice your tomatoes into thickish slices then sprinkle some salt and pepper on top, set aside while you prepare the bread.
  2. Slice your bread into thick slices then lightly toast your bread, you want some golden brown spots but you still want it to be a soft bite.
  3. Slather a thick layer of mayonnaise, I use around one tablespoon per slice, on the toasted bread then top with the tomatoes. I prefer to keep the sandwich open-faced but you can add another slice of lightly toasted bread that has been spread with mayonnaise on top. Let the sandwich sit for 5 minutes for the tomato juices and mayonnaise to marinate together then enjoy.
