    S'mores Treats with Golden Grahams and Chocolate Chunks

    s'mores treats stacked on each other on a light surface.

    These s'mores treats are chewy, gooey, and packed with all the flavors of a classic campfire s'more. I love that they start with Golden Grahams cereal because I've found it gives you that graham cracker flavor in every bite without any extra work. The combination of melted marshmallows, pockets of chocolate, and crunchy cereal creates the perfect mix of textures.

    If you love S'mores and you love rice krispies treats then you're gonna adore these S'mores treats. Perfect to make with your kids and everyone loves them! They are delicious all year long and perfect for parties!

    The S'mores Treat Dream Team

    Two quick notes.

    Since this is quite a sweet recipe I always use salted butter, but if you need to use unsalted butter I would just toss in a pinch of salt.

    Trust me when I say the quality of the chocolate makes a difference. You can use chocolate chips or chunks, I use Callebaut Chocolate Callets. Milk chocolate is traditional for S'mores but you can use dark or semi-sweet if you prefer! I suggest using a combination of milk and dark chocolate.

    Step-by-Step: Gooey Cereal Treat Perfection

    Melt the butter. Once fully melted mix in marshmallows and mix until the marshmallows have completely melted and you have a sauce. Take the pot off of the heat and mix in vanilla extract until fully combined

    Stir in marshmallows, so you are leaving just a handful to decorate the top. You want the mini marshmallows, to sort of melt in, but also keep their shape.

    Now quickly mix in the chocolate, you want some of it to melt but some of it to stay whole.

    Press into a pan lined with parchment paper. Once in an even layer stick on some mini marshmallows and chocolate chips for decoration.

    Allow the s'mores treats to set up for a few hours, then slice and enjoy.

    These s'mores treats are chewy, gooey, and packed with all the flavors of a classic campfire s'more. I love that they start with Golden Grahams cereal because I've found it gives you that graham cracker flavor in every bite without any extra work.     • Yield: 20 Pieces 1x

    Ingredients

    Units Scale
    • 4oz Salted Butter
    • 16oz Mini Marshmallows, divided
    • 1 Teaspoon Vanilla Extract
    • 280 grams (7 Cups) Golden Grahams Cereal
    • 160 grams (1 Cup) Good Quality Chocolate (chips or chunks)

    Instructions

    1. Line a 9" X 13" pan with parchment paper and non-stick spray. In a heavy-bottomed large pot over low to medium heat melt the butter. Once fully melted mix in 10 ounces of marshmallows and mix until the marshmallows have completely melted and you have a sauce.
    2. Take the pot off of the heat and mix in vanilla extract until fully combined, and then mix in the golden graham cereal. Once the golden grahams are mostly covered stir in 5 ounces of marshmallows (so you are leaving just a handful to decorate the top). You want the mini marshmallows, to sort of melt in, but also keep their shape, so don't mix for too long.
    3. Now quickly mix in the chocolate, you want some of it to melt but some of it to stay whole then press into the prepared pan. Once in an even layer stick on some mini marshmallows and chocolate chips for decoration. Allow the s'mores treats to set up for a few hours, then slice and enjoy. Store leftovers in an airtight container for up to five days.
