    Cake Mix Banana Bread

    Looking for a delicious and easy banana bread recipe? Look no further! This cake mix banana bread is the perfect solution for a quick and tasty treat.

    Banana bread is a universal love, everyone loves it, and it's a perfect breakfast, snack, or dessert! I have tons of from scratch banana bread recipes but I wanted to showcase how to utilize a cake mix to speed up the baking process! You'll end up with a banana bread that has a great banana flavor but has the depth of a cake mix flavor as well. It's soft, tender, and delicate crumb is delicious!

    Ingredients

    • Ripe Bananas. You want to make sure your bananas are brown and spotty. The bananas have become sweeter the browner they get. You will mash the bananas down. When. measuring make sure you weigh without the skins on.  
    • Salted Butter. I prefer to use salted butter in baking! But you could use unsalted butter and a ¼ teaspoon of salt. You can also use vegetable oil instead of butter in this recipe.
    • Large Eggs. The eggs provide richness and structure. These should be at room temperature. You can do this quickly by placing the eggs in a bowl of warm water for 5 minutes.
    • Pure vanilla Extract. The warmth of vanilla pairs wonderfully with the bananas.
    • Sour Cream. This moisture bomb helps create a really moist banana bread. Make sure it is at room temperature so it evenly incorporates into the rest of the ingredients.
    • Box of Cake Mix. Yellow Cake Mix, White Cake Mix, or Spice Cake Mix are my favorite to use. Make sure the cake mix is 15.25oz in size. You can of course use a chocolate cake mix for chocolate banana bread or a strawberry cake mix for strawberry banana bread!

    You could of course add ½ cup to 1 cup of chocolate chips or chopped nuts like pecans or walnuts!

    Instructions

    Preheat the oven to 350F/180C and grease two 8" X 4" loaf pans and set aside. 

    In a large mixing bowl add the ripe bananas and use a fork or potato masher to mash until no large lumps remain. Add the melted butter, eggs, vanilla extract, and sour cream and mix until fully combined.

    Sprinkle in the dry cake mix and stir until just combined.

    Pour the batter evenly between the two prepared pans, place on the middle rack in the oven, and bake for 33-38 minutes.

    Let cool on a wire rack for at least 15 minutes before gently inverting onto a wire rack to cool completely. Store the leftovers in an airtight container at room temperature for up to 5 days.

    • 12oz Ripe Bananas, mashed
    • 4oz (½ Cup) Salted Butter, melted
    • 2 Large Eggs, at room temperature
    • 2 Teaspoons Pure Vanilla Extract
    • 2oz (¼ Cup) Sour Cream, at room temperature
    • 1- 15.25oz Box of Cake Mix (Yellow Cake Mix, White Cake Mix, or Spice Cake Mix)

    * I like to sprinkle a tablespoon or two of light brown sugar on top of the banana bread before baking

      Absolutely five stars! This banana bread/cake recipe turned out perfectly and tastes amazing. I baked it in a 9 x 13 glass cake pan instead of two loaf pans. Preheated 350F oven, bake time: 27 minutes. Will definitely be making this again. Thank you for this fast, easy and delicious recipe!
