This Apple Cinnamon Bread blends shredded and diced apples with warm cinnamon sugar for texture and flavor in every bite. A batter made from melted butter, applesauce, milk, and eggs holds it all together, while topping it with extra cinnamon sugar gives a golden, sweet crust. Slice it warm or cool, and it stays delicious for days.

Quick breads are some of my favorite recipes to develop. They are perfect any time of day because generally the sweetness isn't over powering. Check out all of my quick bread recipes. This is the perfect autumn quick bread, the apples are tossed in a cinnamon sugar mixture and mixed throughout this cinnamon bread batter. Cinnamon and apples are just a match made in heaven, if you have more time to bake then try my Fluffy Apple Cinnamon Rolls.

The Ingredient Cast Behind This Loaf

    • Apples (Shredded + Diced): Shredded apples lock in moisture; diced apples add bursts of texture and bite.  I used Granny Smith but you could use another variety of Cooking Apples: Granny Smith, HoneyCrisp, Pink Lady, Fuji, Gala, Braeburn, Cortland.
    • Butter, Applesauce & Milk: These wet ingredients help keep the crumb moist without being overly dense.
    • Flour, Baking Powder, Baking Soda, Salt, Cinnamon: The dry base and leaveners give structure and lift; cinnamon weaves in warm depth.
    • Eggs & Vanilla: They bind the batter and bring a comforting flavor note.
    • Extra Brown Sugar + Cinnamon Topping: Sprinkled on top before baking, this caramelizes into a sweet, crusty finish.

Adding a ½ cup to 1 cup of roasted pecans or roasted walnuts would be a lovely idea!

    • Total Time: 65 Minutes
    • Yield: 8-10 Slices 1x

    Ingredients

    Units Scale
    • 4oz (½ Cup) Salted Butter, melted
    • 150 grams (¾ Cup) Light Brown Sugar
    • 2 Large Eggs, at room temperature
    • 2 Teaspoons Pure Vanilla Extract
    • 4oz (½ Cup) Apple Sauce
    • 40z (½ Cup) Whole Milk
    • 250 grams (2 Cups) All-Purpose Flour
    • 1 Teaspoon Baking Powder
    • ½ Teaspoon Baking Soda
    • 1 Teaspoon Ground Cinnamon
    • ½ Teaspoon Salt
    • ¾ cup Cooking Apples, diced
    • 1 cup Cooking Apples Shredded
    • ⅓ cup Light Brown Sugar
    • 1 ½ Teaspoon Ground Cinnamon

    Instructions

    1. Preheat the oven to 350F/180C and grease a 9"X5" loaf pan with non-stick cooking spray.
    2. In a large bowl whisk together the butter, sugar, eggs, vanilla extract, apple sauce and whole milk. Make sure everything is fully combined. Place a fine mesh sieve on top of the bowl then sift in the flour, baking powder, baking soda, ground cinnamon, and salt. Gently fold the dry ingredients into the wet until just almost fully combined.
    3. In a separate bowl combine the diced apples, shredded apples, brown sugar and cinnamon. Add the cinnamon apples the bread batter and fold until just combined.
    4. Pour into the prepared pan. Sprinkle additional brown sugar and cinnamon on top if desired. Bake for 45-55 minutes, I tent the bread the last 10 minutes to help it not over brown. Cool in the pan for thirty minutes then invert onto a wire rack to cool completely. Store leftovers in an airtight container at room temperature for up to 5 days.
