    Salted Caramel Chocolate Chip Cookies

    Take the classic cookie up a notch to Salted Caramel Chocolate Chip Cookies! Smooth and Creamy Homemade Salted Caramel is mixed with the butter and sugar mixture of the recipe. Creating a sweet cookie with a great depth of flavor!

    I have this thing for cookies. And I also have this thing for salted caramel. I've added the two together in the past here and here. But I something wasn't right. The caramel didn't really work stuffed into a cookie as it was too runny or if you used caramels and sea salt the caramels could go a bit hard.

    Then I had this brainwave. Cream the butter and sugar together WITH salted caramel! I am not going to lie, I was  SO freaking happy with the results. Seriously perfection baby!!!

    You know what is also perfection? Me spending time with my family in England and off tomorrow to Barcelona. Woo HOO! life is good I am blessed and so happy that I have the family I do!!

    Ingredients

    For these cookies you will need:

    • All-Purpose Flour. Make sure you measure your flour properly.

    Baking is a science and to really achieve the best results I highly recommend investing in a kitchen scale. This OXO Kitchen Scale is the one I use and is also the number one recommended kitchen scale by Cook's Illustrated. Think about it -what one person scoops into a "cup" is completely different from what someone else scoops!

    • Baking Soda. This chemical leavening agent helps the cookies, rise, spread and brown while baking.
    • Salt. Salt enhances all of the other ingredients' flavor profiles.
    • Cornstarch. This ingredient will help create a soft and tender cookie.
    • Butter. The butter will cream with the sugar and caramel so it needs to be at room temperature.
    • Homemade Salted Caramel Sauce or Store-bought. Since you all need a little bit this is a great way to use leftovers up.
    • Sugar. For the perfect combination of sweet cookies that spread but have chew, you'll want brown sugar and white sugar.
    • Pure Vanilla Extract. The vanilla helps get you that iconic chocolate chip cookie flavor!
    • Large Eggs. You'll need one whole egg and one additional egg yolk. The additional egg yolk helps create a moist and chewy cookie.
    • Chocolate Chips. I like to save a couple of chocolate chips to add to the top of the cookie before baking so it looks prettier.
    • Sea Salt for Garnish Cookies. This is optional! I love it on cookies but some don't!

    How to make

    In a large bowl whisk together flour, baking soda, salt, and cornstarch.

    In the bowl of an electric stand mixer fitted with a paddle attachment or a large bowl with handheld mixer cream butter, salted caramel, granulated sugar, and brown sugar together for 2 minutes.

    Scrape down the sides of the bowl then add the egg and vanilla. Once combined mix in the additional egg yolk.

    Slowly add in dry ingredients. Then fold in chocolate chips.

    Using a medium cookie scoop, portion the dough out into cookie dough balls and place them on a sheet tray. Cover with plastic wrap and chill for at least two hours.

    Preheat oven to 350F/180C line a baking sheet with a Silpat liner, if using. Place dough balls on a silpat or parchment-lined baking sheet at least two inches apart. Bake for 9-11 minutes, the dough should be just set. Let the cookies cool on the tray for 5-10 minutes, then transfer to a wire rack to cool completely. Store cookies in an airtight container for up to 5 days.

    Ingredients

    • 250 grams (2 Cups) All-Purpose Flour
    • 1 Teaspoon Baking Soda
    • 1 Teaspoon Salt
    • 1 ½ Teaspoons Cornstarch
    • 4oz (½ Cup) Butter, at room temperature
    • 2.67oz (⅓ Cup) Homemade Salted Caramel Sauce or Store-bought
    • 50 grams (¼ Cup) Granulated Sugar
    • 100 grams (½ Cup) Light Brown Sugar
    • 2 Teaspoon Pure Vanilla Extract
    • 1 Large Egg + 1 Large Egg Yolk
    • 240 grams (1 ½ Cups) Chocolate Chips
    • Sea Salt for Garnish Cookies

    Instructions
