I am a sweet person, but you knew that from my baking blog didn't you? But I am also, a CHEESE person. Camembert, Double Cream Brie, English Cheddar.. oh god cheese is so good. Nothing beats coming home after a long day and having some delicious cheese on crackers, buttered crackers of course.
Have you ever tried the Extraordinary Cheddar from Trader Joe's? It's a blend of Parmesan and White Cheddar!! I mean really though how amazing!!! Seriously at my house, we go through blocks on blocks of that cheese. IF you have never tried it go to TJ's NOW!!
I also love cheesey bread. You do too. Who doesn't? Crazy people!! So it was natural for me to adore these pizza puffs.
These are so easy to make. Start with Pillsbury biscuits cut them into thirds, flatten to discs, add cheesey mixture and extra cheese of course, pinch together then roll in butter and sprinkle with more cheese and if you are feeling frisky add some pepperoni inside! Bake till golden brown and devour.

Ingredients
To make these scrumptious pizza puffs you'll need:
- Cream Cheese. Make sure it is softened to room temperature.
- Garlic. Use as much as your heart desires!
- Fresh Herbs Finely Chopped. I like Basil, Chives, and Parsley
- Shredded Italian Cheese Blend. I get a bag of this at Trader Joe's. It's got parmsean, asiago, fontina and provolne.
- Pillsbury Grands Flaky Layers Biscuits. I normally just yse the buttery ones but they also have some honey butter biscuits that are delicious as a pizza puff too!
- Pepperoni Pieces. Classic pizza flavor to me is pepperoni so had to throw some in. Using cooked sausage crumbles would be delicious too!
- Butter. This coats the outside of the biscuit ball and helps the cheese stick.
And if you want serve them with your favorite pizza sauce or marinara sauce.
You can customize these little pizza puffs to your liking, use some bell peppers or ham and pineapple, but our favorite are pepperoni pizza puffs!

Instructions
In a bowl of an electric mixer fitted with the paddle attachment or a large bowl with a handheld mixer or whisk beat cream cheese for two minutes, until light and fluffy. Then stir in garlic and fresh herbs. If you don't have fresh herbs you could use some Italian seasoning.

Mix until fully combined then fold in cheese. Set the bowl in the freezer while you prepare the rest of the recipe.

Preheat oven to 350F/180C and grease a mini muffin pan.
Cut biscuits into thirds. Flatten each third of the biscuit into a disc shape.

If using pepperoni place a piece of pepperoni over the biscuit then using a ½ teaspoon scoop a dollop of cream cheese mixture onto the disc, press on some more cheese then pinch the dough closed, and roll the ball to completely enclose. Repeat with all biscuit pieces.



Place melted butter in a bowl.
Place dough ball quickly in butter then place in the prepared muffin tin, one ball to one muffin slot.

Sprinkle more cheese on if desired.
Bake 16-19 minutes, until golden brown. Some balls will open up showing the gooey cheese, this is normal. Let cool for 5 minutes then devour!

Serve with your favorite pizza sauce or marinara sauce! I served these mini pizza bites at a Galentine's party and they went so quick, everyone loved them! I hope you do too!

Can you make these ahead of time?
You can totally make these pizza puffs ahead of time. You can prepare them in the morning before you bake them that night. Prepare them up until baking then wrap the baking tray in plastic wrap and store in the fridge up until baking.
