Carrot Cheddar Sandwiches

This super easy carrot cheddar sandwich recipe is something different that you'll be sure to love. The sweet carrot against the sharp Cheddar cheese is a fantastic combo.

Ingredients

  • 2 Medium Carrots, roughly 1 heaping cup of shredded carrot
  • 3oz Sharp Cheddar Cheese
  • 2-3 Tablespoons Good Quality Mayonnaise
  • White Pepper, to taste
  • 4 Slices of Your Favorite Sandwich Bread

Instructions

  1. Clean your carrot, I don't bother peeling unless it is really stringy and dirty. Use the medium opening on a box grater and grate the carrots. Then grate the sharp cheese. 
  2. Add both to a bowl and add the mayo and white pepper. And mix until fully combined, this shouldn't be super mayo-y, the mayonnaise is just a binder to hold it together, 
  3. Spread four slices of bread with salted butter and pack half of the mixture on two buttered slices then top with the other slices of bread. Use a serrated knife to trim the crusts off and cut them into thirds to create three rectangles. 
  4. These are best enjoyed right away but you can make them an hour or two ahead of time and store them in the refrigerator covered with a damp cheesecloth or paper towel on top to help them from drying out.
