- 2 Medium Carrots, roughly 1 heaping cup of shredded carrot
- 3oz Sharp Cheddar Cheese
- 2-3 Tablespoons Good Quality Mayonnaise
- White Pepper, to taste
- 4 Slices of Your Favorite Sandwich Bread
Instructions
- Clean your carrot, I don't bother peeling unless it is really stringy and dirty. Use the medium opening on a box grater and grate the carrots. Then grate the sharp cheese.
- Add both to a bowl and add the mayo and white pepper. And mix until fully combined, this shouldn't be super mayo-y, the mayonnaise is just a binder to hold it together,
- Spread four slices of bread with salted butter and pack half of the mixture on two buttered slices then top with the other slices of bread. Use a serrated knife to trim the crusts off and cut them into thirds to create three rectangles.
- These are best enjoyed right away but you can make them an hour or two ahead of time and store them in the refrigerator covered with a damp cheesecloth or paper towel on top to help them from drying out.
