    Peanut Butter M&M Cookies

    So until recently I didn't know that Peanut Butter M&M's existed. Then my sister brought them with us to Utah earlier this year. I became ADDICTED. They are soooo good, I mean really that good. The trouble is you can easily buy a "share" bag but I don't end up sharing, I end up devouring.

    The other day I felt like baking but didn't know what to bake, I continued pottering around the house doing other things, snacking on these Peanut Butter M&M's. I found myself talking to myself to stop eating them, then it hit me Peanut Butter M&M Cookies.

    These cookies are perfectly soft with an ever so slight soft crunch on the outside, they literally melt in your mouth. I added some semi-sweet chocolate chips- because more chocolate is always better.

    Let's get to the recipe.

    How do you make Peanut Butter M&M Cookies?

    These cookies are chilled cookies, it takes about ten minutes to make the cookie dough, then I scoop it into balls and wrap in plastic wrap then chill in the fridge for at least two hours. You could do this a few days in advance or even freeze balls of dough.

    Freezing a few is my preference- then you can always have fresh cookies. There is no need to thaw the frozen cookie dough just bake it for an extra minute or two!

    In the bowl of an electric mixer cream butter and peanut butter for 2 minutes. Add in brown sugar for 3 minutes.

    Add in egg and vanilla extract, mix for another 2 minutes.

    In a medium bowl mix together flour, baking soda, and salt set aside.

    Gently mix in flour mixture then fold in Peanut Butter M&M's and chocolate chunks.

    Scoop dough into 1.5 Tablespoons, place on a tray and cover with plastic wrap. Chill dough for 2 hours then preheat oven to 350F/180C and line a baking sheet with Silpat (affiliate link) liner, if using one.

    Bake for 8-10 minutes. I like to take cookies out when they look almost done and let sit in the pan for 5 minutes then transfer to wire rack to cool completely.

    Perfectly melt in your mouth peanut butter cookies are filled with Peanut Butter M&M's. You won't be able to each just one!

    Ingredients

    Units Scale
    • 188 grams (1 ½ cup) All-Purpose Flour
    • ¾ Teaspoon Baking Boda
    • ¾ Teaspoon Salt
    • 2 Teaspoons Cornstarch
    • 4oz (½ cup /1 stick) Unsalted Butter, at room temp.
    • 4oz Creamy Peanut Butter
    • 100 grams (½ Cup) Brown Sugar
    • 50 grams (¼ Cup) Granulated Sugar
    • 1 Large Egg, at room temp.
    • 2 Teaspoons Pure Vanilla Extract
    • 4oz (½ Cup) Semi-Sweet Chocolate Chips
    • 4oz (½ Cup) Peanut Butter M&M's

    Instructions

    1. In the bowl of an electric mixer cream butter and peanut butter for 2 minutes. Add in granulated sugar and brown sugar mix for 3 minutes. Add in egg and vanilla extract, mix for another minute.
    2. In a medium bowl mix together flour, baking soda, cornstarch, and salt set aside.
    3. Gently mix in flour mixture to the wet ingredients, then fold in Peanut Butter M&M's and chocolate chunks. Scoop dough into 1.5 Tablespoons, place on a tray and cover with plastic wrap. Chill dough for 2 hours then preheat oven to 350F/180C and line a baking sheet with Silpat (affiliate link) liner, if using one.

      When you double or triple the recipe the flower quantity does not change.

        Hi Amanda the first quantity listed changes but the additional quantity in brackets does not change. Im sorry it won't change both options only the first. Goodluck baking. XX Liz
