When I was growing up my aunty would make millionaire’s shortbread occasionally. I love millionaire’s shortbread. So darn good. Caramel, shortbread and chocolate? Sign me the heck up!!

It recently occurred to me adding sea salt would probably be an amazing idea. It was. I died, went to heaven and indulged on three million bars of these.

This is super easy to make, the only time consuming part is making the caramel layer. Stirring a pot of caramel over a hot stove, will make you hot. But worth it. Sooooooo worth it.

Not to mention this Salted Millionaire’s Shortbread Recipe is perfect Christmas treat for friends and family! The recipe makes lots of little bars, by all means eat them all yourself just be prepared for a sugar coma!!

Salted Millionaire’s Shortbread

Ingredients

    Shortbread Crust
  • 6.25 ounces All-Purpose Flour
  • 1.75 ounces Granulated Sugar
  • Pinch of Salt
  • 8 tablespoons Unsalted Butter, melted
  • Caramel Layer
  • 7oz Sweetened Condensed Milk
  • 3.5oz Brown sugar
  • 2oz Heavy Cream
  • 2oz Light Corn Syrup
  • 4 Tablespoons Unsalted Butter
  • 1 Teaspoon Sea Salt
  • Chocolate Layer
  • 5.5oz Semi Sweet Chocolate (4 oz chopped fine, 1.5 oz grated)
  • Sea Salt for sprinkling on top of bars

Instructions

    Shortbread Crust
  1. Preheat oven to 350F and line a 9X9 pan with foil so the foil overhangs.
  2. In a large bowl mix together flour, sugar and salt. Add the melted butter and stir buttery is fully combined, the crumbs will be moist. Press dough into bottom of prepared pan. Press dough to create an even layer, then use a fork to prick the dough every inch.
  3. Send to oven to bake for 20-25 minutes. Then let cool on a wire rack for 20 minutes.
  4. Caramel Filling
  5. In a large heavy bottom pan add condensed milk, brown sugar, heavy cream, corn syrup, and unsalted butter. Over medium heat stir often until mixture register to 236F to 240F degrees. This will take about 15- 20 minutes of stirring.
  6. Once temperature is reached take off heat and add the sea salt. Then pour the caramel over the shortbread crust.
  7. Chocolate Topping
  8. Using a double broiler or microwave melt the first 4 oz of chocolate being careful not to burn, then add the grated chocolate to the melted chocolate. Spread chocolate over the caramel layer and sprinkle with sea salt. Chill in fridge for 30 minutes, until set. Cut into bars and store in air tight container for up to 1 week.

When we were kids we went to a summer camp and once in a while the camp took us took a swimming pool. While most kids would love the pool, we did, but we had our own pool, we loved that we could get hot fresh cookies at this public pool.

Chocolate Chip Cookies, Peanut Butter Cookies, disgusting Oatmeal Raisin Cookies and my sisters favorite Double Chocolate Chip Cookies. They were always so ooey gooey, the chocolate still melting and the cookies hot. Kind of like the cookies from Middle School and High School in the blue and white paperbag, those chocolate chip cookies were what got me through school.

When I made these Sea Salt Double Chocolate Cookies, I was baking them because of my new favorite ingredient in cookies, milk powder. It wasn’t until my sister had a one six cookies that it dawned on us that they were just like those amazing double chocolate cookies we had as children. Bar the sea salt. But sea salt makes everything better, as an adult anyways 😉

Sea Salt Double Chocolate Cookies

Prep Time: 2 hours, 15 minutes

Cook Time: 10 minutes

Total Time: 2 hours, 25 minutes

Yield: 32 Cookies

Ingredients

  • 1 Cup of Unsalted Butter (2 Sticks), at room temp.
  • 3/4 Cup of Brown Sugar
  • 1/2 Cup of Granulated Sugar
  • 2 Large Eggs, at room temp.
  • 1 tbsp Real Vanilla Extract
  • 1 2/3 cup AP Flour
  • 1/2 cup Cocoa Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 tbsp Cornstarch
  • 1 tbsp Milk Powder
  • 1 cup Chopped Milk Chocolate or Chips
  • 1/2 cup Mini Semi Sweet Chocolate Chips
  • Fleur De Sel Sea Salt for Sprinkling

Instructions

  1. In the bowl of an electric mixer combine the butter, brown sugar and granulated sugar. Beat until light and fluffy and the color has lightened. About 3-5 minutes.
  2. In a large bowl sift together flour, cocoa powder, baking soda, baking powder, salt, cornstarch and milk powder.
  3. When the butter/sugar mixture has lightened add the eggs one at a time beating on medium speed. Add vanilla and beat mixture for another 2 minutes.
  4. Slowly add the dry mixture and as the dry mixture is half mixed in add the chocolate.
  5. Using a medium (2 T) cooke scoop, scoop the batter into balls on a parchment lined baking sheet or plastic container. Once you have scooped the cookies sprinkle sea salt on top and slightly press into the dough. Chill the cookies for at least 2 hours.
  6. Preheat oven to 350F and place cookies on a silpat lined baking sheet. Bake for 9-12 minutes. Sprinkle more sea salt on top if desired.

Happy Monday! Woo Hoo another week! I love new beginnings and each week I am so excited for one and then before I know it we are back at Sunday night. Time flies when you’re having fun, or busy! 😉

These Cookie Butter Sea Salt Truffles were  inspired by some of my favorite cookies. And I can’t lie I made them gosh, almost a month ago! Obvi, I have been too busy to share these because if I had time I would have shared them right AWAY!!

These are truffles, so they are going to be over the top, chocoaltey, sweet, intense in an amazing way. I personally couldn’t help but devour them, my sister found them too much but shes just cray cray and not a real chocoholic! How we are related is beyond me 😉

I like to keep thees truffles in the fridge, so then I can always pop one EVERY SINGLE time I walk past the fridge, that’s not normal is it? 😉 Oh and I enjoy them chilled!!

Cookie Butter Sea Salt Truffles

Ingredients

  • 14 tbsp unsalted butter (1 3/4 sticks)
  • 1 3/4 cups ap flour
  • 1/2 cup granulated sugar
  • 3/4 cup dark brown sugar
  • 1 tsp salt
  • 1 tbsp vanilla extract
  • 1 1/2 cups milk chocolate chips
  • 1 1/2 ish cups cookie butter/ Biscoff spread
  • Chocolate Coating
  • 2 cups milk chocolate chips
  • 4 tbsp Crisco Vegetable Shortening

Instructions

    Cookie Dough
  1. To brown the butter cook 10 tbsp of butter over low to medium heat. Swirl it every so often. The process will take around 5 minutes.Continue cooking the butter until you get a nutty aroma. The scent is nutty yet caramel-y.
  2. Pour the brown butter into the bowl of an electric mixer or a heatproof bowl. Mix in the last 4 tablespoons of butter. Mix until completely dissolved in the brown butter.
  3. Add in the brown sugar, granulated sugar, salt and vanilla. Mix in cookie butter until fully combined. Mix in the flour mixture until fully combined. Fold in chocolate chips. Chill for 30 minutes. Scoop 2 tbsp or so of dough and roll it into a ball. Once all dough is rolled into balls pop in the freezer for 30 minutes.
  4. Chocolate Coating
  5. In a microwave safe bowl melt chocolate chips and Crisco together in 30 second increments, make sure to mix after each 30 seconds, be careful not to burn. Place wax paper on a cookie sheet.
  6. Using a fork dip each cookie dough ball into melted chocolate, make sure to tap to remove excess chocolate. Make sure to sprinkle sea salt quickly after dipping cookie dough. After all of cookie dough is dipped, chill in fridge until set up. Place in an airtight container.

At the beginning of the year I made these Cookie Butter Sea Salt Chocolate Chip Cookies and they were deeeeelicious. Loved every single bite, I ate half the batch myself. And since then I have made them a few times, still eating half the batch!

You know where I am going, you saw the title, I made them into blondies. Because blondies are easy and I  LO LO LO LO VE them.. just like the ashlee simpson song. And these are probably one of my most favorite blondies ever so chewy, moist, chocolatey, sweet but salty, cookie butter-y, basically I fell in love at first bite.

Not going to lie that happens a lot with me and food but for now these are my new favorite!! Can’t wait to make them again- I only shared them at one location of my work so maybe I need to make them againt o share at the other? Excuses… LOL

My sister fell in LOVE with these as well, she had some at home and when she saw I took them to work she came in and grabbed a bunch and hid them from the other staff for her secret stash… that must say something right?!

Ingredients

  • 1/2 cup butter, melted
  • 1/4 cup sugar
  • 3/4 cup brown sugar
  • 2 tsp vanilla extract
  • 1 egg, at room temp.
  • 1/2 cup cookie butter
  • 1 1/4 cup flour
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 1 cup chocolate chips/ chocolate chunks
  • Sea salt for garnish

Instructions

  1. Preheat oven to 350F and line a 9X9 inch pan with foil, spray with non stick cooking spray.
  2. In a medium bowl combine melted butter, sugars and vanilla. Once combined add egg, mix until incorporated. Mix in cookie butter. Set aside.
  3. In a medium bowl combine flour, baking soda and salt. Add dry ingredients into wet ingredients, fold in chocolate chips/chunks and pour into prepared pan. Sprinkle more sea salt on top bake for 22-25 minutes until set. Let cool on tray for 30 minutes then pull out of pan by foil. 🙂

I have this thing for cookies. And I also have this thing for salted caramel. I’ve added the two together in the past here and here. But I something wasn’t right. The caramel didn’t really work stuffed into a cookie as it was too runny or if you used caramels and sea salt the caramels could go a bit hard.

Then I had this brain wave. Cream the butters and sugar together WITH salted caramel! I am not going to lie, I was  SO freaking happy with the results. Seriously perfection baby!!!

Salted Caramel Chocolate Chip Cookies

Ingredients

  • 2 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 1/2 tsp cornstarch
  • 1 stick butter, at room temp
  • 1/3 cup salted caramel
  • 1/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 tsp vanilla
  • 1 large egg
  • 1 large egg yolk
  • 1 1/2 cup chocolate chips
  • Sea Salt for garnishing cookies

Instructions

  1. In a large bowl whisk together flour, baking soda, salt and cornstarch.
  2. Cream butter, salted caramel, granulated sugar, and brown sugar together for 3 minutes. Add egg, yolk, and vanilla. Slowly add in dry ingredients. Then fold in chocolate chips. Cover and chill dough for at 3 hours or longer.
  3. Preheat oven to 350F line a baking sheet with silpat liner, if using. Roll into 2 tbsp size balls and sprinkle sea salt on top each cookie, bake for 9-11 minutes.

Sea Salt Truffles #chocolateparty

 Truffles are for chocolate lovers. I am a chocolate lover. If you are not a chocolate lover, feel free to move on to something less chocolatey like cake batter puppy chow.

When I found this recipe on The Pioneer Woman I knew I had to make these.

This recipe is all that I imagine a truffle to be. Rich, chocolatey and creamy. With an added twist of sea salt, these truffles are one of my favorites.

These would be PERFECT to make for Valentines day!!

First melt your chocolate. I used a large metal bowl on top of a pot of simmering water. You do not want your bowl to touch the water. The steam should melt the chocolate. This way the chocolate will not burn. Because once your burn chocolate there is no going back.

Once the chocolate cooks for about 2-3 minutes add the sweetened condensed milk.

Stir the chocolate and sweetened condensed milk together.

The texture of these bars is a bit weird. Ree mentioned this in her post which was a relief because it was a thick freaky texture.

Once all the chocolate and sweetened condensed milk is combined take off heat and add vanilla. Then pour the mixture into a dish.

Press the mixture flat into the dish and cover with plastic wrap. Place in the fridge for 2 hours.

Once the chocolate has set roll into 1/2 inch size balls. Put back into the fridge to keep them hard.

Melt your chocolate, make sure to temper the chocolate. Dip the truffle in the melted chocolate. I use a fork to shake some of the chocolate off.

On a parchment lined cookie sheet place the dipped truffle and sprinkle sea salt on top.

  • 8oz semi-sweet chocolate
  • 8oz bittersweet chocolate
  • 1 14oz can of sweetened condensed milk
  • 1 tbsp vanilla extract
  • 10oz melted chocolate
  • Sea salt for sprinkling.
Directions
  1. Create your own double broiler. Place a pot on top of the pan on the stove. Do not place the bowl so it is touching the water. You want the steam from the hot water to melt the chocolate.
  2. After 2-3 minutes pour in the condensed milk and stir. The consistency of the chocolate and milk will be weird but that is fine.
  3. Once the chocolate and milk are completely combined take off heat and stir in vanilla.
  4. Pour into a flat casserole dish and cover with plastic wrap. Let chill in fridge for 2 hours.
  5. Once chilled roll chocolate into ½ inch size balls. Dip in melted chocolate and sprinkle with sea salt.

So it’s clear that chocolate chip cookies are a favorite of mine. Biscoff/ Cookie Butter is also a favorite of mine.  And I’ve just begun to like sea salt.

Everyday I crave a chocolate chip cookie. Okay I lied. I should have said “Everyday I crave MANY chocolate chip cookies”

Since making chocolate chip cookies is not instantaneous I have come up with a quick fix for those cravings. A chunk of milk chocolate dipped into Cookie Butter. Seriously AHMAZZZZING!! Try it some time, but please do not do what I did and buy a Pound Plus bar from Trader Joes and continue to have  just one more chunk of chocolate. Because this chocolate bar is over a pound people.

When I made these cookies I made the cookie dough, rolled it into a ball and stuck my finger in the dough to create a hole. I then filled the hole with cookie butter and closed it up. Then sprinkled the dough with sea salt. Bake away. Side note my hand looks freakishly pink in this picture maybe its karma for always saying my skin was olive and my sisters was pink!

  7. Scoop 2 tbsp or so of dough and roll it into a ball. Stick your finger in it to make a hole. Fill the hole with 1 tsp of cookie butter and fold the rest of the dough around the cookie butter.
  8. Sprinkle your desired amount of sea salt on each cookie.
  9. Bake for 10-12 minutes or until golden brown but still look a bit under cooked.
