Press into bottom and slightly up upsides of prepared pan. Bake the crust for 5-8 minutes to set it.

Beat cream cheese for 3 minutes at low speed. Add the sugar and beat for 2 minutes on low. Add the heavy cream, sour cream, vanilla beans, lemon zest, and vanilla extract.

Once all the liquid ingredients are added mix on low speed and be sure to scrape the sides of the bowl a few times.

Add in eggs one at a time, add the additional yolk with the first egg. You should have a creamy batter with no lumps.

Pour cheesecake on top of crust.
Place in a water bath. Bake for 1 hour 15 minutes to 1 hour 30 minutes, the middle of the cheesecake should jiggle just a little bit.

Chill for at least 8 hours in the fridge then top fresh whipped cream and berries.
