Baileys Double Chocolate Ice Cream Cake will be your new favorite make ahead party dessert! A crunchy Oreo Crust filled with Double Fudge Brownie Ice Cream, Baileys Irish Cream, Fresh Whipped Cream and topped with melted chocolate and tons of Heath Bar bits! This is the perfect ice cream cake, easy to put together and anything but ordinary!

Ingredients

Units Scale

Oreo Crust

  • 1-14oz Package Oreo Cookies, finely crushed
  • 2oz (4 Tablespoons) Unsalted Butter, melted

Baileys Chocolate Ice Cream Filling

  • 1.5 quart Double Fudge Brownie Ice Cream, at room temp (let sit out for 30 minutes)
  • 5.3oz (2/3 Cup) Bailey's Irish Cream
  • 8oz (1 Cup) Heavy Whipping Cream
  • 6oz (1 Cup) Chopped Heath Bar or Bit's O' Brickle

Topping

  • 3oz (1/2 cup) Chocolate Chips/ Chunks
  • 1.5oz (1/4 cup) Chopped Heath Bar or Bit's O' Brickle

Instructions

Oreo Crust

  1. Place crushed Oreo crumbs and melted butter in a bowl and mix until combined. In a 9-inch spring-foam pan place the Oreo mixture and press into the bottom and up the sides of the pan. Set aside.

Baileys Chocolate Ice Cream Filling

  1. In a large bowl mix together ice cream and Irish cream. Fold in whipped topping and Heath Bar/ Bit's O' Brickle. Pour into prepared pan. Cover with plastic wrap and freeze overnight.

Topping

  1. In a microwave-safe bowl melt chocolate chips for 20-second increments until melted. Mine took about 40 seconds. Drizzle on top of cake and place remaining Heath Bars/Bites.
