Is there anything better than an ice cream cake on a hot day? Living in Southern California we have many hot days. I for one don't love the summertime, the thing is the "winter" here is so great- 70's and sunny most of the time. Luckily this Baileys Ice Cream Cake helps beat the heat. Not to mention it starts off with an Oreo crust. One of my all time favorites!!

🍴How do you make an Oreo Crust?
I think an Oreo crust is the best crust there is in the world. Almost every cheesecake recipe on my site includes one because in my opinion graham cracker crusts are not as good.
In a food processor add a whole 14oz pack of Oreos and process until fine crumbs. Add them to a large bowl, then add the melted butter, mix to combine and then press tightly into a prepared pan. I often use the bottom of a glass or cup to get the crumbs nice and tight. I personally love a crust that goes up the sides of the springform pan as well. Then place the crust in the freezer while you make the rest of the baileys chocolate ice cream cake.
🍫What ingredients go in the filling?
The most fabulous part of this recipe is how easy it is to make. Grab a 1.5-quart container of your favorite chocolate ice cream, I think this Double Fudge Brownie Ice Cream is the bomb. Then whip up some fresh whipped cream, you could use cool whip if you want. Add in some delicious Baileys Irish Cream Liqueur and either chopped Heath Bars or you could add the Heath Bits o' Brickle. (I have made the recipe with both)
Once all mixed together pour into the prepared Oreo Crust, wrap in plastic wrap and place in the freezer, then the hard part comes. We wait, at least 8 hours or overnight to be exact.
Once the cake has frozen for at least 8 hours. Make your melted chocolate, either in 30-second increments in the microwave or in a makeshift double boiler over the stove. I find it easiest to use a plastic squeezy bottle to make nice drizzles but by all means, just use a spoon to drizzle the chocolate. Then sprinkle with Heath bits. Place back in the freezer for at least 10 minutes.

To serve this cake let it sit out of the freezer for a couple of minutes then use a small spatula and run it around the cake and pan- to help make sure the crust is not stuck to the pan. Then use the springform pan to release the ice cream cake.
🍸 Can I make this without alcohol?
Of course, if Baileys isn't your thing just omit it. Or try mixing another liqueur in if you want- Frangelico sounds delicious!
This cake is delicious, sweet and the perfect summer treat. The cake goes a long way which makes it perfect for your next party (and it's made ahead) but since you store the cake in the freezer it's also great to keep for a week or two to keep nibbling on each night 😉

Ingredients
Oreo Crust
- 1-14oz Package Oreo Cookies, finely crushed
- 2oz (4 Tablespoons) Unsalted Butter, melted
Baileys Chocolate Ice Cream Filling
- 1.5 quart Double Fudge Brownie Ice Cream, at room temp (let sit out for 30 minutes)
- 5.3oz (⅔ Cup) Bailey's Irish Cream
- 8oz (1 Cup) Heavy Whipping Cream
- 6oz (1 Cup) Chopped Heath Bar or Bit's O' Brickle
Topping
- 3oz (½ cup) Chocolate Chips/ Chunks
- 1.5oz (¼ cup) Chopped Heath Bar or Bit's O' Brickle
Instructions
Oreo Crust
- Place crushed Oreo crumbs and melted butter in a bowl and mix until combined. In a 9-inch spring-foam pan place the Oreo mixture and press into the bottom and up the sides of the pan. Set aside.
Baileys Chocolate Ice Cream Filling
- In a large bowl mix together ice cream and Irish cream. Fold in whipped topping and Heath Bar/ Bit's O' Brickle. Pour into prepared pan. Cover with plastic wrap and freeze overnight.
Topping
- In a microwave-safe bowl melt chocolate chips for 20-second increments until melted. Mine took about 40 seconds. Drizzle on top of cake and place remaining Heath Bars/Bites.

I whipped up this cake in all of about 10 minutes, well I let the ice cream and Cool Whip sit at room temp for about 30 minutes. Then I popped it in the freezer and let it harden overnight. Each bite is filled with Bailey's Irish Cream, I personally love Bailey's but you can, of course, cut the quantity. The Heath Bars add wonderful texture and hey its English toffee, how can it not make anything better?! I do not know!!

I made this yummy ice cream cake for a dessert after a summer BBQ and everyone loved it . I did substitute some things like Trader Joe’s Jo Jo cookies, and Caroline’s liquor instead of Bailey’s. Also think I used Thrifty’s ice cream! LOL! It was delicious anyway and very easy to put together.
