- 2oz (1/4 Cup) Melted Butter
- 100 grams (1/2 Cup) Light Brown Sugar
- 2 Large Eggs, at room temperature
- 2 Teaspoons Pure Vanilla Extract
- 3 Medium Bananas, very ripe
- 336 grams (3 Cups) Almond Flour
- 1/2 Teaspoon Salt
- 1 Teaspoon Baking Soda
- Optional Topping: 3 Tablespoons Brown Sugar
Instructions
- Preheat oven to 350F/180C and grease a 9X5 loaf pan.
- In a medium bowl whisk together the almond flour, salt, and baking soda.
- In a large bowl mix together the butter, sugar, eggs, and vanilla.
- Add bananas and use a potato masher to mash them. Gently fold in the dry ingredients until just combined.
- Pour into prepared pan. Sprinkle optional brown sugar topping.
- Bake for 48-53 minutes or until a toothpick inserted comes out clean. Let cool at least 30 minutes before removing from pan. Let cool on a wire rack. Store at room temperature unless you live in a warm climate store in the fridge.
