White Chocolate Cranberry Cheesecake

In a medium pot add the cranberries, water, and sugar, and cook over medium heat. Stir frequently for 8-10 minutes

Make a puree

Place the mixture through a fine-mesh sieve into a clean bowl. Discard fruit solids and cover and refrigerate cranberry puree.

Strain the Cranberry Sauce

In a bain-marie or microwave-safe bowl add the white chocolate and cream to melt.

Melt the chocolate

Beat cream cheese for 3 minutes on medium speed. Add the sugar and beat for another 3 minutes.

Add the sour cream, vanilla extract, and white chocolate mixture- mixing until fully combined

Add more ingredients

Add in eggs one at a time. You should have a creamy batter with no lumps.

Add the eggs

Pour half of the cheesecake batter into the prepared pan then spoon half of the cranberry puree and swirl then top with the remaining cheesecake batter.

Pour mixture through a strainer to get rid of all seeds, set aside.

Place fresh whipped cream on the cheesecake with sugared cranberries.
