Sweet Shortcrust Pastry Recipe

Step 1

Start by mixing the egg yolk, heavy cream, and vanilla extract in a small bowl. Set that aside.

Mix Liquid Ingredients

Mix the flour, sugar, and salt, process until combined. Add  butter and pulse on high 10-15 times- you will have a crumbly texture with some chunks of butter.

Mix Dry Ingredients

Gently stream in the cream/ egg mixture. If using a food processor the dough, it will lump up into a ball, turn off, do not over mix.

Add the Liquid Ingredients

Pat into a 6 inch round disc. Wrap in plastic wrap and let chill in the fridge for 30 minutes or up to 4 days.

Form and Chill

Gently roll the dough onto the rolling pin and slide the tart tin underneath the roll the dough onto the tart tin.

Add to Tart

Step 5

Press dough into the mold. Use a rolling pin to roll on top of the tart tin to remove any excess dough and use a knife to trim any specific areas. Bake according to the recipe.
