In a food processor, crush the graham crackers until they become a fine crumb. Add sugar, melted butter, stirring until fully combined.
Mix in the butter so you get a sand mixture. Press into the bottom and slightly up upsides of prepared pan. Bake for 5-8 minutes to set the crust.

Beat cream cheese for 3 minutes at low speed. It should be smooth with no lumps. Add the sugar and salt then beat for another 2 minutes on low speed.

Add heavy cream, sour cream, and salted caramel mixing until fully combined.

Add in the eggs one at a time, mixing well after each addition. Mix in the Vanilla.

Add salted caramel dollops on top of the cheesecake.

Use a butter knife to swirl the caramel into the cheesecake. Then place the cheesecake into the oven for 60 to 75 minutes. Let cool completely.

Once chilled in the fridge. Pipe some whip cream on to the cheesecake, and drizzle with more caramel.
