In a food processor, crush the Oreos until they become a fine crumb. Add melted butter, stirring until fully combined.

Press into bottom and slightly up upsides of prepared pan. Bake the crust for 5 minutes to set it.

Beat cream cheese for 3 minutes on low to medium speed, making sure to scrape the sides and bottom of the bowl. Your cream cheese should be smooth and creamy with no lumps

Add granulated sugar to cream cheese and beat on low for another 1-2 minutes.

Add the sour cream and vanilla extract mixing until fully combined. Make sure to scrape the bowl!

Add in eggs and yolks one at a time. Mixing on low and scraping down the bowl.

Gently crush some more Oreos. Gently fold in crushed Oreos.

Pour cheesecake on top of crust.  Place in a water bath. Bake for 1 hour 15 65 to 80 minutes, the middle of the cheesecake should jiggle just a little bit to 1 hour 30 minutes, the middle of the cheesecake should jiggle just a little bit.

Once cheesecake has chilled overnight. Make chocolate ganache then spread on top of chilled cheesecake.
