Take your oats and put them in a high powered blender or food processor and blend until a fine flour.

Make Oat Flour

In a medium bowl mix together the oats, baking soda, salt, and pumpkin spice.

Mix the Dry Ingredients 

In a large mixing bowl mix together the melted butter, sugar, eggs, vanilla, Greek yogurt and pumpkin puree.

Mix the Wet Ingredients 

Mix in the dry ingredients to the wet ingredients gently folding until no oat flour streaks remain.

Combine both

Pour the pumpkin batter into prepared pan. Bake for 55-65 minutes. Of course, always check with a toothpick to make sure it is fully cooked
