Add chicken to pot. Then add water to the pot to cover the chicken about ½ an inch above the chicken.

Set on the stove over high heat, once the water comes to a boil lower heat to medium. Use a thermometer to check the chicken reaches internal temperature of 165F when done.

Add chicken to the bowl of an electric stand mixer. Let cool for 20 minutes then mix the chicken for 2 minutes
to shred the chicken.
