Ribeye Roast Recipe
Take the meat out of the fridge and let it sit at room temperature for a few hours, you do not want to cook a cold piece of meat.
In a small bowl mix together the butter and garlic. Then rub over meat.
Then sprinkle the salt and pepper all over and use your hands to press it into the butter.
Add salt and pepper
Place the pan on the top rack and roast the beef for 20 minutes then reduce heat to 325F and roast for an additional 16 minutes per lb.
When cooked to your liking remove the beef from the oven and carefully place it on a plate and cover with foil and let it sit for 20 minutes to rest.
Slice the roast against the grain and serve with your favorite sides!
