Pumpkin Snickerdoodle Cookies

Step 1

Brown the butter then pour into a heatproof bowl. Mix in the cold butter until completely dissolved in the brown butter.

Add in the brown sugar, granulated sugar, and vanilla extract. Mix until fully combined.

Add in the pumpkin puree, egg yolk, and vanilla extract beat for two minutes on medium-low speed.

Add the eggs and pumpkin puree

After the two minutes let the batter rest for 30 seconds and repeat the process 2 more times.

Keep Mixing

In a separate bowl mix together all of the dry ingredients

Slowly add dry ingredients and mix until just combined.

Add dry ingredients

Coat each dough ball. Place the cookie dough balls in an air-tight container in the fridge for 30 minutes to an hour.

Roll the dough and dip in spice

Step 7

Bake on 9 - 11 minutes
