PumpkinPie  Bars

Step 1

In a large bowl add the flour and sugars and mix.

Make the base

Add the cubes of cold butter. Mix with  two knives or a pastry blender until coarse crumbs

Stir in the oats and chopped pecans.

Add Oats and Pecans

Add the base to the pan minus one cup. Press the majority of the oat shortbread mixture into the pan and bake for 15 minutes.

Add mix to pan

Whip the cream cheese until fluffy then add the sugar and vanilla.

Make the filling

Step 5

 Add the eggs, pumpkin puree, and pumpkin pie spice. Mix until fully combined.

Add the remaining ingredients

Pour pumpkin cream over the warm crust.

Add to Crust

Step 7

Sprinkle the remaining oat mixture and butterscotch chips on top. Bake the bars for 23-26 minutes, until the filling is completely set.

Add Crumbs

Step 7

Let pan cool on a wire rack for 1 hour, then chill in the fridge for two hours before slicing.

Cool
