Step 1

Beat the heavy cream until stiff peaks form.

Beat the cream cheese until softened, 1-2 minutes. Scrape down the sides of the bowl.

Add the confectioner's sugar and brown sugar then mix on low until the sugar is incorporated.

Then add the pumpkin, pumpkin pie spice, and vanilla extract.

Add half of the whipped cream to the cream cheese mixture and use a spatula to gently fold the whipped cream in.

Pour the cheesecake into the crust & use an offset spatula to spread it into an even layer. Cover the cheesecake and place it in the fridge for at least 8 hours or overnight.
