Bake the tart in parchment paper and pie weights or dried beans or rice to weigh it down so it doesn't rise.

When you are ready to assemble melt together some apricot or orange jam with a bit of water to thin it out and create a glaze-type consistency. This is what will give the fruit that gorgeous shine.

Add the pastry cream to the pastry crust and use an angled spatula to spread it into an even layer.

Once you add the fruit in a pretty design, use a silicone pastry brush to add the glaze to the fruit.
