Step 1

In a medium bowl whisk together the dry ingredients.

Combine Dry Ingredients

In a large bowl whisk together the wet ingredients.

Combine Wet Ingredients

Add the shredded carrots and crushed pineapple to the wet ingredients and whisk to combine.

Combine the Carrots and Pineapple

Gently fold in the dry ingredients and roasted nuts and raisins and coconut if using.  Don't overmix the cake batter.

Add the Dry Mixture

Pour the cake batter into the prepared pan and bake for 25-30 minutes

Add the Cream Cheese frosting and any other toppings you like.
