Step 1

Make the choux pastry then add it to a piping bag.

Pipe the dough on to a cookie sheet and then bake and let cool.

Cut the choux pastry with a serrated knife so you can fill it with whipped cream.

Add all the chocolate whipped cream ingredients and beat on medium speed for 3-5 minutes, or until you have stiff peaks.

 In a saucepan add cream and cook until just before the boiling point. Pour directly over the chocolate,  add the golden syrup or corn syrup then mix the chocolate and cream until a silky texture.

Pipe the whipped cream into each pastry shell then place the lid back on top. Then dip the top lid in the ganache.
