In a large bowl add the graham crackers and granulated sugar mixing to combine then add the melted butter
Press crust into bottom and slightly up upsides of pan.
Bake for 5-8 minutes, until slightly golden brown.
In a large bowl beat cream cheese on medium speed for 2-3 minutes, until light and fluffy.
Beat cream cheese
Add heavy cream, sour cream, and vanilla extract and mix. Add in eggs one at a time. Gently fold in mini chocolate chips.
Add rest of cheesecake ingredients
Pour cheesecake batter on top of crust then place in a water bath to bake.
Once baked turn oven off and let cool in the oven for 1 hour then cool on the counter for an hour. Wrap with plastic wrap and chill in the fridge for at least 6 hours
Top with fresh whipped cream. Sprinkle mini chocolate chips on top.
