Brittle Cookies

Step 1

In the bowl of an electric mixer fitted with a paddle attachment combine butter and sugars.

Mix the Butter and Sugars

Step 2

Add in the whole egg, vanilla extract, and almond extract, and mix until fully combined. Then stir in the additional egg yolk, mixing until no trace of egg yolk remains.

Add Eggs and Extracts

In a medium-sized bowl whisk together the flour, baking soda, baking powder, and salt

Mix the Dry Ingredients

Gently fold in dry ingredients.

Mix together

Step 4

Stir in the chopped California Brittle, do not over-stir!

Add the Brittle

Step 5

Scoop the cookie dough then chill the cookie dough for at least two hours or up to 48 hours.

Scoop and Chill

Step 7

Bake the cookies for 9-11 minutes, sprinkle sea salt on top and use a large cookie scoop to circle around the cookies to create a perfectly rounded cookie.
