  Maple Almond Granola Clusters I used to love Honey Bunches of Oats cereal but I don’t eat much cereal these days. I do miss those big clusters. So I get my full with a little granola in my Greek yogurt.

Sometimes I will buy store bought granola but let’s be honest it’s crap compared to homemade. And making it is so stinkin easy and takes all of 6 minutes before baking. And it smells delightful.

I made this last week, it makes quite a bit of granola. But that didn’t stop my family. It was gone in three days. Guess that’s what I get for leaving it in a container on the counter. A handful here, there and boom it’s gone.

If I wasn’t in Nashville right now you can guarantee I would be making this.

Maple Almond Granola Clusters

Prep Time: 5 minutes

Cook Time: 40 minutes

Total Time: 45 minutes

Yield: 4 cups

Ingredients

  • 1/3 cup maple syrup
  • 1/3 cup brown sugar
  • 1/4 cup coconut oil, melted
  • 1 tbsp vanilla extract
  • 3 cups old fashioned oats
  • 1 cup quick oats
  • 1 cup sliced almonds

Instructions

  1. Preheat oven to 325F and line a baking sheet with a silpat liner or parchment paper.
  2. In a medium bowl mix together the maple syrup, brown sugar, coconut oil and vanilla extract. Fold in oats and almonds and mix until fully combined.
  3. Dump onto baking sheet and using a spatula press down so granola is in a compact even layer.
  4. Bake for 35-40 minutes, the granola will be a beautiful golden brown.
  5. Let cool on baking rack for 1 hour then break into clusters. Store in an air tight container for up to 2 weeks.

Maple Apple Cheesecake Bars

Maple Apple Cheesecake Bars

Ingredients

    Crust
  • 1 1/2 cup flour
  • 3/4 cup brown sugar
  • 3/4 cup butter, at room temp.
  • Cheesecake Filling
  • 2 8oz packages cream cheese, at room temp
  • 3/4 cup sugar
  • 2 large eggs, at room temp.
  • 2 tsp vanilla extract
  • Apple Mixture
  • 2 apples, diced into small pieces
  • 1/4 tsp ground cloves
  • 1/4 tsp ground cinnamon
  • 2 tbsp sugar
  • Crumb topping
  • 3/4 cup flour
  • 3/4 cup quick cooking oats
  • 1/2 cup brown sugar
  • 1/2 stick butter melted
  • Maple Glaze
  • 1 cup powdered sugar
  • 1/2 tsp maple extract
  • 3-5 tbsp milk

Instructions

    Crust
  1. Preheat oven to 350F and line a 9X9 deep baking pan with foil. In a small bowl combine flour, brown sugar and butter. Cut in butter with a pastry blender, two knives or I like to just rub everything together with my clean hands. Press into prepared pan and bake for 12 minutes. Set on wire rack to cool while preparing remaining components. Reduce oven temp to 325F.
  2. Cheesecake
  3. In the bowl of an electric mixer beat cream cheese for 3 minutes. Then add in sugar and beat for another 2 minutes. Add eggs in one at a time and vanilla. Beat for another 5 minutes. Pour on top of cooled crust.
  4. Apple Mixture
  5. Cut apples up into small pieces, roughly a 1/4 of an inch chunks. Toss apples in a small bowl with cloves, cinnamon and sugar. Sprinkle evenly on top of cheesecake mixture.
  6. Crumb topping
  7. In a medium bowl mix together flour, oats, brown sugar and butter. Sprinkle evenly on top of apples.Bake for 38-45 minute, until cheesecake is set. Let cool completely. I like to let the pan sit on a wire rack for 1 hour then chill in fridge for 2 hours.
  8. Maple Glaze
  9. Mix together powdered sugar and maple extract. Slowly add in milk 1 tbsp at a time until you reached desired consistency, I used 4 tbsp. Drizzle on top of cooled bars. Store in fridge.

Let me just say how badly I love that these are “muffins” so it is perfectly acceptable to eat them anytime of the day. Amazing.

I may or may not have licked all the cream out before I devoured the rest of the muffin. Ahh, why are they gone!

Maple Cream Filled Pumpkin Muffins

Yield: 6 Regular Size Muffins

Maple Cream Filled Pumpkin Muffins

Ingredients

    For Pumpkin Muffins
  • 1 cup all purpose flour
  • 3/4 tsp baking powder
  • 1/4 tsp baking soda
  • 2 tsp pumpkin pie spice
  • pinch of salt
  • 1/2 cup brown sugar
  • Scant 1/4 cup granulated sugar
  • 1 cup pumpkin puree
  • 1 large egg
  • 2 tsp vanilla
  • 1/4 vegetable oil
  • For Maple Cream:
  • 1/4 Cup Shortening
  • 1/4 Cup Butter, at room temp
  • 1 tbsp Maple Extract
  • 1 1/4 Cup Powdered Sugar

Instructions

  1. Preheat oven to 350F and grease a muffin/cupcake pan and set aside.
  2. In a medium sized bowl combine flour, baking powder, baking soda, pumpkin pie spice and salt. Set aside.
  3. In the bowl of an electric mixer combine sugars, pumpkin puree, eggs, vanilla and vegetable oil until fully combined, Mix dry ingredients into wet ingredients until just combined. Scoop batter evenly into muffin pan, don't be afraid to fill them to the top. Bake for 16-18 minutes or until a toothpick inserted in comes out clean.
  4. Maple Cream
  5. Once muffins have cooled completley start filling. In a large bowl combine shortening and butter for 2 minutes. Add in maple extract, then powdered sugar. Beat until fully combined.
  6. Fill a pastry bag and large round top with cream filling poke tip directly into the middle of each muffin and squeeze, the muffin will begin to expand when filled. Dust powdered sugar on top.

Apple Cupcakes with a Maple Cream Cheese Frosting

Apple Cupcakes with a Maple Cream Cheese Frosting

Ingredients

  • 1 3/4 cup ap flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves
  • 1/2 tsp cinnamon
  • 2 large eggs, at room temp.
  • 2 tbsp vanilla extract
  • 3/4 cup sugar
  • 1/3 cup brown sugar, packed
  • 4 oz apple sauce
  • 1/3 cup chobani greek yogurt
  • 2 medium granny smith apples, peeled and diced
  • Frosting:
  • 8 oz Cream Cheese, softened at room temp.
  • 2 tbsp butter, softened
  • 1 tbsp maple extract
  • 2 1/2-3 1/2 cups powdered sugar

Instructions

  1. Preheat oven to 350F and line cupcake sheet with liners.
  2. In a large bowl mix together flour, baking soda, baking powder, nutmeg, cloves and cinnamon.
  3. In the bowl of an electric mixer combine eggs, brown sugar, granulated sugar, apple sauce and greek yogurt. Mix until fully combined. Slowly mix in dry ingredients, fold in apples.
  4. Bake for 17-20 minutes or until set and no wet batter comes out on toothpick. Let cool completely before frosting.
  5. Maple Cream Cheese Frosting
  6. In the bowl of an electric mixer beat cream cheese for 3-4 minutes. Add in butter and mix for another minute. Add maple extract and powdered sugar. Mix until combined. Pipe on to frosting.

So this one time I made this amazing Oat Flour Pumpkin Bread, my sister and I fell in love with it.

It was so moist, perfectly spiced and full of pumpkin flavor, not too oaty, and the maple glaze.. to die!

Then I went outside to snap a few pics, I tripped and it went everywhere. I also cut myself twice at work that day and the phone lines went down and I got a call for some credit card fraud. It was a great day, until my beloved Oat Flour Pumpkin bread fell all over the floor.

Ingredients

  • 1 stick/ 1/2 cup unsalted butter
  • 1 cup of granulated sugar
  • 2 large eggs
  • 1 TSP Vanilla Extract
  • 1 3/4 cups oat flour (Blend 1 3/4 cup old fashioned oats until flour)
  • 1 TSP baking soda
  • 1/2 TSP salt
  • 1/2 tsp cinnamon
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg
  • 1/ 2 cup / roughly1 individual container of Greek Yogurt Plain or Vanilla
  • 1 cup pumpkin puree
  • Maple Glaze (Optional)
  • 1 heaping cup powdered sugar, sifted
  • 3 tbsp maple syrup
  • 1 tsp maple extract
  • 1 tbsp hot water

Instructions

  1. Preheat oven to 350F and grease a 9X5 loaf pan.
  2. Melt butter. In a large bowl mix together the butter and sugar. Then add eggs and vanilla. Mix in oat flour, baking soda, salt, cinnamon, cloves and nutmeg.
  3. Fold in greek yogurt and pumpkin into the flour mixture.
  4. Pour into prepared pan.
  5. Bake for 45 minutes. Of course always check with a toothpick to make sure it is fully cooked. Or a knife if you want to reach the bottom.
  6. Optional Maple Glaze
  7. In a small bowl mix together powdered sugar, maple syrup, maple extract and hot water. If too think add a tsp of water at a time to reach desired consistency. Drizzle on top of bread.

Prep Time: 15 minutes

Cook Time: 16 minutes

Yield: 12 Regular Size Muffins

Pumpkin Muffins

Ingredients

  • 2 cups all purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp pumpkin pie spice
  • pinch of salt
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 14oz can pumpkin puree
  • 2 egg
  • 1 tbsp vanilla
  • 1/2 cup vegetable oil
  • Streusel
  • 1/2 cup flour
  • 1/4 cup brown sugar
  • 8 tbsp butter, at room temp.
  • 1/4 cup oats
  • Maple Glaze
  • 1 heaping cup powdered sugar, sifted
  • 3 tbsp maple syrup
  • 1 tsp maple extract
  • 1 tbsp hot water

Instructions

  1. Preheat oven to 350F and grease a muffin/cupcake pan and set aside.
  2. In a medium sized bowl combine flour, baking powder, baking soda, pumpkin pie spice and salt. Set aside.
  3. In the bowl of an electric mixer combine sugars, pumpkin puree, eggs, vanilla and vegetable oil until fully combined, Mix dry ingredients into wet ingredients until just combined. Scoop batter evenly into muffin pan, don't be afraid to fill them to the top.
  4. For the streusel in a medium bowl mix flour, brown sugar, butter, oats, pinch of cinnamon, nutmeg and cloves. Sprinkle heavily over muffin batter and bake muffins for 15-18 minutes or until a toothpick isnerted comes out clean.
    For the maple glaze
  5. In a small bowl mix together powdered sugar, maple syrup, maple extract and hot water. If too think add a tsp of water at a time to reach desired consistency. Lay a dishtowel down and place wire rack on top of towel. Dip donuts in glaze, place on wire rack. Enjoy 🙂

  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 can 15 oz pumpkin puree
  • 2 egg
  • 1 tbsp vanilla
  • 1/2 cup vegetable oil
  • Maple Glaze
  • 1 heaping cup powdered sugar, sifted
  • 3 tbsp maple syrup
  • 1 tsp maple extract
  • 1 tbsp hot water

Instructions

  1. Preheat oven to 350F and grease a donut pan, set aside.
  2. In a medium sized bowl combine flour, baking powder, baking soda, pumpkin pie spice and salt. Set aside.
  3. In the bowl of an electric mixer combine sugars, pumpkin puree, eggs, vanilla and vegetable oil until fully combined, Mix dry ingredients into wet ingredients until just combined. Scoop into donut pan and bake for 8-10 minutes.
  4. For the maple glaze
  5. In a small bowl mix together powdered sugar, maple syrup, maple extract and hot water. If too think add a tsp of water at a time to reach desired consistency. Lay a dishtowel down and place wire rack on top of towel. Dip donuts in glaze, place on wire rack. Enjoy 🙂

I have never been a muffin girl, unti lately. I do recall years ago my mom or teaches getting a large pack of muffins from Costco and one was apple with a maple glaze. I remember always begging for that muffin. It was delish.

Well it’s been a few years. And the other day the muffin just popped in my head. Baked goods seem to do that to me. Anyways I left work that day and stopped at Target to pick up some ingredients. Well un benounced to me the Target by my work has a 1/8 of a baking aisle and carries not fresh fruit. So no apples for the muffins I wanted. 🙁 I was annoyed. But later that night I happened to go to Trader Joes and got my apples 🙂 so muffins would be made the next day ! WOO HOO

Fresh apple chunks and spices fill this moist, fluffy muffin. Take it to the next level with a maple glaze. These muffins are everything and more and will be made time and time again in my kitchen!

Ingredients

  • 2 cups flour
  • 1/2 cup quick oats
  • 3/4 cup brown sugar
  • 1/4 cup granulate sugar
  • 3 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp cloves
  • 1/4 all spice
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 2 eggs
  • 1/2 cup sour cream
  • 2/3 milk
  • 1/3 oil
  • 2 tsp vanilla
  • 1 large apple, cut into small chunks (mine came out to 1 1/2 cups)
  • 1/2 cup flour
  • 1/4 cup brown sugar
  • 8 tbsp butter, at room temp.
  • 1/4 cup oats
  • Pinch cinnamon, nutmeg and cloves
  • 1 heaping cup powdered sugar, sifted
  • 3 tbsp maple syrup
  • 1 tsp maple extract
  • 1 tbsp hot water

Instructions

  1. Preheat oven to 375F and heavily grease a muffin pan.
  2. In a medium bowl mix together flour, quick oats,sugars, baking powder, cinnamon, cloves, all spice, nutmeg and salt. Set aside.
  3. In a large bowl mix together eggs, sour cream, milk, oil and vanilla. Slowly mix in dry ingredients, just until no flour streaks remain. Fold in apple chunks.
  4. To make streusel topping in a medium bowl mix flour, brown sugar, butter, oats, pinch of cinnamon, nutmeg and cloves.
  5. Fill muffin pans all the way to the top with batter. Sprinkle streusel on top. Bake for 18-20 minutes. Until a toothpick inserted in comes out clean. Place on wire rack to cool.
  6. In a small bowl mix together powdered sugar, maple syrup, maple extract and hot water. If too think add a tsp of water at a time to reach desired consistency. Drizzle on top of muffins.

Homemade Maple Granola

Homemade Maple Granola www.confessionsofabakingqueen.com  As of late here in Southern California the sun has been shinning. Bikini season is almost here. Juice bars have been popping up everywhere and my yoga pants have been gettings lots of use. I wanted to ease up on the sugar, for that morning anyways. So I made some granola to go with my plain greek yogurt. Have you ever had plain greek yogurt? Ugh I cannot do it! So I decided to add granola for a fabulous texture and sweetness.

I had never made granola before but knew it couldn’t be that hard. I was right! ( funny how that happens 😉 ) This granola was super easy ot make and super tasty.

Homemade Maple Granola

Ingredients

  • 3 cups rolled oat
  • 1/2 cup slivered almonds
  • 1/2 chopped pecans
  • 1/3 cup maple syrup
  • 1/4 cup honey
  • 1/4 cup coocnut oil melted
  • 1/4 tsp maple extract
  • 1 tsp vanilla
  • 1/8 cup honey
  • 1/8 cup maple syrup

Instructions

  1. Preheat oven to 350F and line a baking sheet with a silpat liner. In a large bowl mix together the rolled oats, slivered almonds and pecans. Set aside.
  2. In a small bowl mix together the maple syrup, honey, coconut oil and maple extract. Pour over oat mixture. Mix so everything is coated. Spread on to prepared sheet and bake for 10 minutes. After ten minutes take out of oven and mix everything around. Bake for another 15 minutes.
  3. Let cool on tray. Once cooled I drizzled on an a little extra honey and maple syrup, just for fun!
  4. Store in an airtight container for up to 2 weeks.
