Holy Cow! Words cannot describe my happiness when I tried one of these for the first time. The rich chocolatey cookie, like no other chocolate cookie I’ve had before, filled with creamy homemade ice cream with crushed Oreo’s & M&M’s.

The perfect 4th of July treat. And bonus make them the day before, so the day of you just pull them out of the freezer when you’re ready. I made the ice cream in the morning and before bed made the cookies and assembled them.

While these will be perfect for 4th of July with the Red, White & Blue M&M’s you can make them year round with regular M&M’s. I made them look like good ol’ AMURICA but they’ll be long gone before then in fact I might need to make another batch!

Brownie Cookie Ice Cream Sandwich

Yield: 12-13

Serving Size: 1 Brownie Cookie Sandwich

Ingredients

    No Churn Ice Cream
  • 466 Grams (2 Cups) Heavy Cream
  • 1 Tablespoon of Vanilla Extract
  • 397 Grams ( 14oz) Sweetened Condensed Milk
  • 170 Grams (1/2 Cup) Crushed Oreos
  • 170 Grams (1/2 Cup) M&M's
  • Brownie Cookies
  • 113 grams (4oz) Milk Chocolate
  • 113 grams (4oz) Semi Sweet Chocolate
  • 113 grams (4oz) Dark Chocolate
  • 91 Grams (5 tbsp) Unsalted Butter
  • 150 Grams (3 Large ) Eggs, at room temp.
  • Brown Sugar (Light or Dark)
  • 100 Grams (3/4 Heaping Cup) All Purpose Flour
  • 3 Grams (1/2 tsp) Baking Powder
  • 3 Grams (1/2 tsp) Salt
  • 60 Grams (1/3 Cup) M&M Candies, you may use more or less depending on how many you want

Instructions

    No Churn Ice Cream
  1. In the bowl of an electric mixer fitted with a whisk attachment beat the heavy cream and vanilla extract until medium peaks form.
  2. In a seperate bowl mix sweetened condensed milk with curshed Oreo's and M&M's. Fold the mixture into the whipped cream. Place mixture in an airtight container and place in freezer for a minimum of 6 hours.
  3. Brownie Cookies
  4. Chop the chocolate into small pieces. Place a glass bowl sitting over a pot with a little water on low- medium heat, make sure that the bowl is not touching the water. Place the butter, cut into chunks, into the bowl with the chocolate. Mix until chocolate and butter are melted. Set aside to cool for a few minutes.
  5. In the bowl of an electric mixer beat the brown sugar and eggs, beat for 2-3 minutes you will see the mixture begin to lighten.
  6. In a separate bowl whisk together the flour, baking powder and salt, set aside.
  7. Slowly add the cooled chocolate mixture to the brown sugar mixture. Mix until fully combined, fold in the flour mixture just until no flour streaks remain. Pour into an airtight container and let chill in fridge for 2 hours or up to 2 days.
  8. Preheat oven to 350F and line a baking sheet with a Silpat Liner. Scoop 2 tbsp of dough onto sheet making sure to leave an inch between each cookie. Bake for 9-11 minutes, the cookies will begin to have the crunchy brownie top look on them. When done place tray on a wire rack and let cool for 20-30 minutes before transferring to a wire rack.
  9. When ready to prepare cookie ice cream sandwiches, remove ice cream out of freezer and let sit for 5 minutes.
  10. Scoop 1/4 cup ish of the ice cream, place one scoop of ice cream on the bottom of a cookie and take another cookie and put it on top of the ice cream. Wrap the cookie sandwich in plastic wrap, twice.
  11. I did two sandwiches at a time and placed them in the freezer then did another batch.

Salted Caramel Apple Bars

So I know this is kind of a late post. Like its more of a “fall” type dessert and we are in “winter” but inSouthern California we don’t really have seasons as much. So I tend to eat lemon bars in fall and caramel apple bars in winter.

Caramel and apples are two of my all time favorite flavors. It’s a classic and goes back to eating caramel apples as a kid for me.

And then when you add a shortbread crust and an oaty brown sugary crumble, well I kind of die. And while these are bars, and you do not need ice cream, sometimes I like things over the top. Because let’s be honest, everything is better a la mode.

I miss blogging. My job keeps me SOO busy. And this time of year, is the best time of year, is also the craziest time of the year. We have so many people calling in for a last minute reservations, and of course it’s 40 people, coming in tomorrow. We also have the Dickens Christmas Carolers coming in, they carol at disneyland, they are sooo expensive but so amazing!!

My new years resolution is to get back into the swing of things. And I am trying to start that new year resolution now, with these Salted Caramel Apple Bars!

Salted Caramel Apple Bars

Ingredients

    Crust
  • 3/4 Cup AP Flour
  • 3/4 Cup Brown Sugar
  • 1 1/2 cup Unsalted Butter, cold and diced
  • 1/4 tsp Ground Cinnamon
  • Filling
  • 3 Medium Granny Smith Apples, thinly sliced
  • 1/4 cup AP flour
  • 1/4 cup Brown Sugar
  • 1/2 tsp Ground Cinnamon
  • 1/4 tsp Ground Cloves
  • 1/4 tsp Ground Nutmeg
  • Topping
  • 3/4 Cup AP Flour
  • 3/4 Cup Brown Sugar
  • 1/2 tsp Ground Cinnamon
  • 1/4 tsp Ground Cloves
  • 1/4 tsp Ground Nutmeg
  • 6 tsp Unsalted Butter, cold and diced

Instructions

    Crust
  1. Preheat 325F and line a 8X8 pan with foil, so the foil hangs over the sides of the pan. Grease the pan and set aside.
  2. In a large bowl combine the flour, sugar and cinnamon. Using clean hands mix in the cold butter. Rub together with your fingers or a pastry blender. Once combined press into prepared pan.
  3. Bake for 15 minutes.
  4. Filling
  5. In a large bowl place thinly sliced apples, flour, brown sugar, and spices together. Set aside.
  6. Topping
  7. In a medium bowl combine flour brow sugar, cinnamon, cloves and nutmeg. Add in cold butter and rub together to create a thick crumble. Set aside until crust has baked.
  8. Once crust has baked lay apples on top in an even layer and sprinkle topping on.
  9. Increase oven temp. to 350F and bake for 35-38 minutes, until top is golden brown.

I often find myself getting ready for work and sticking my head in the freezer to cool off before I put my make up on. I can’t help it I get so hot so easily. Sometimes I feel like I am having hot flashes but then I remember I am only 25.

Golden Oreo Cake Batter Ice Cream Pie

Prep Time: 20 minutes

Yield: 10 Slices

Golden Oreo Cake Batter Ice Cream Pie

Ingredients

    Golden Oreo Crust
  • 30 Golden Oreos, crushed
  • 1/4 stick butter, melted
  • Cake Batter Ice Cream
  • 2 cups heavy whipping cream
  • 1 can sweetened condensed milk
  • 1/2 cup dry yellow cake mix
  • 1/2 cup sprinkles
  • 10 Golden Oreo's, broken into pieces
  • Sprinkles for decoration

Instructions

    Golden Oreo Crust
  1. In a medium bowl combine crushed Oreos and butter until fully combined. Press mixture into a 9 inch pan pan, making sure to make an even layer that goes high up on the sides of the pie plate.
  2. Cake Batter Ice Cream
  3. In the bowl of an electric mixer whisk the heavy cream on high until stiff peaks form.
  4. Meanwhile in a bowl combine condensed milk, cake mix, sprinkles and Golden Oreos.
  5. Fold the condensed milk mixture into the heavy whipping cream.
  6. Pour into prepared pie crust, sprinkle the sprinkles on top, cover with plastic wrap and freeze for at least 6 hours or over night.
  7. Store in freezer.

The last few weeks have been crazy. And this heat. My gosh, every year I think to myself it is hotter than last! Or it usually is not this hot this early. But every year its soooo hot.

I haven’t baked much in the past month. I have baked for a few jobs I had and requests for birthday/graduation parties but nothing too creative in the kitchen. And just when I want to start baking again the sun will not give over. It has been so hot, wake up in the middle of the night sweating, hot. Sorry was that too much?

Well since I have been waking up so hot I needed something to cool me down!!! Why not ice cream cake? Okay maybe not for breakfast.. but I did have half a slice this morning. I was taking the photos nice and earlier in hopes the cake wouldn’t melt too much. It worked but it also worked on giving me a sugar high and crashing at work.

I whipped up this cake in all of about 10 minutes, well I let the ice cream and Cool Whip sit at room temp for about 30 minutes. Then I popped it in the freezer and let it harden over night. Each bite is filled with Bailey’s Irish Cream, I personally love Bailey’s but you can of course cut the quantity. The Heath Bars add wonderful texture and hey its english toffee, how can it not make anything betteR?! I do not know!!

Bailey's Double Chocolate Ice Cream Cake

Yield: 10

Boozy Double Chocolate Fudge Brownie Ice Pie is chock full of Heath Bar bites upon an Oreo Cookie Crust. Easy and perfect for the hot summer months.

Ingredients

  • 34 Oreo Cookies, finely crushed
  • 5 tbsp butter, melted
  • 1.5 Quart Double Fudge Brownie Ice Cream, at room temp (let sit out for 30 minutes)
  • 2/3 Cup Bailey's Irish Cream
  • 1 cup Cool Whip Topping, at room temp.
  • 1 1/2 cups chopped Heath Bar
  • 1/2 cup chocolate chips

Instructions

  1. Place crushed Oreo crumbs and melted butter in a bowl and mix until combined. In a 9 inch spring-foam pan place the Oreo mixture and press into the bottom and up the sides of the pan. Set aside.
  2. In a large bowl mix together ice cream and irish cream. Fold in whipped topping and 1 cup of Heath bars. Pour into prepared pan. Cover with plastic wrap and freeze overnight.
  3. In a microwave safe bowl melt chocolate chips for 20 second increments until melted. Mine took about 40 seconds. Drizzle on top of cake and place remaining Heath Bars.

So ice cream. I love it but I am not in love with it. I am in LOVE with it when it is paired with a fresh apple pie or a warm chocolate chip cookie. But by itself most of the time I can take it or leave it. But this ice cream my friends I took it!

Soo creamy and dreamy. Inside of the ice cream are Golden Oreo’s, cake mix and sprinkles. The Oreo’s kept a crunch which was my favorite part. So often cookies & cream ice cream the Oreo’s have gone soft and chewy. Maybe because this was so fresh. I don’t know but it was amazing.

Cake Batter Golden Oreo Ice Cream

The sprinkles of course added flair to a white ice cream. So fun and pretty to look at.

How can you not smile?

 

In a small bowl combien condensed milk, dry yellow cake mix, sprinkles and crushed Golden Oreo’s.

Whip heavy cream until stiff peaks are formed.

Fold condensed milk mixture into cream.

Make sure to scarpe the bottom of the bowl to completely combine everything.

Transfer mixture to a sealed container and freeze for at least 6 hours.
