Any kind of warm dessert topped with ice cream is heaven, something about the hot with the cold. The ice cream melting, and melting into whatever dessert it is, today Brown Butter Peach Crumble, it’s just irresistible.

My number one grip at restaurants is they never serve enough ice cream for the pie, crumble, cake…etc. As a waitress I always make sure to give a nice big scoop. There’s nothing like eating a dessert and not having enough ice cream.

Needless to say at home that is not a problem, big ol ice cream scoop here I come.

Now while I would love a whole large pan of peach crumble sometimes it’s just not realistic when you’re going to St. Thomas in a week and you have eaten everything but the kitchen sink as of late.

And the beauty of this Brown Butter Peach Crumble for two is that it’s an easy last minute, I want something amazing, kind of dessert.

Well that is if you have butter already browned. Which I actually usually do have ready to go in the fridge. But I am kind of an addict when it comes to brown butter. Can you blame me?

Anyways back to the recipe.

In a small bowl mixed together granulated sugar and cornstarch then squeezed in half a lemon. Folded in 2 peaches, sliced into medium thin slices. Used my hands to mix the peaches into the sugar mixture, then placed them evenly between the two ramekins.

 

Then the crumble. I first blended Almonds in a food processor until they were broken down but still a bit chunky. Then I added four, brown sugar to that mixture, blended it for another 45 seconds or so then added the rolled oats and blended for 25 seconds or so, so that the oats were not fully broken down. Then I poured that into a big bowl and used my hands to rub in the cold brown butter. Jaysus if you could smell thru this blog, because brown butter crumble = heaven. Sprinkled the crumble on top baked for 28 minutes or so, until that golden brown action is happen’n. Then loaded a big ol scoop of vanilla ice cream. Then I died and went to heaven.

Brown Butter Peach Crumble for Two

Ingredients

    Crumble
  • (30 grams) 1/4 Cup Almonds
  • (120 grams) 1/3 Heaping Cup All Purpose Flour
  • (50 grams) 1/4 Cup Brown Sugar, Packed
  • (23grams) 1/4 Cup Rolled Oats
  • 2 oz Browned Butter (cold)
  • Filling
  • 3 Tablespoons Granulated Sugar
  • 1 Tablespoon Corn Starch
  • 1 Tablespoons Fresh Lemon Juice
  • 2 Peaches, unpeeled and sliced

Instructions

  1. Preheat oven to 350F and grease two 10 oz ramekins, set aside.
  2. In a food processor break add almonds and process until you have only small chunks of almonds. Add flour, brown sugar and rolled oats processing again for another 20- 30 seconds, just to break the oats up a little. Add chunks of the browned butter and process until the mixture becomes like bread crumbs.
  3. In a clean bowl mix together cornstarch, granulated sugar and lemon juice. Gently fold in peaches trying to cover evenly with the mixture.
  4. Add peaches to prepared ramekin and then top with crumble.
  5. Bake 26-28 minutes, or until golden brown. Served best with a scoop of vanilla ice cream.

Chewy Lemon Cookies

I WENT SCUBA DIVING!! Sorry for all the caps but seriously I am amazed at myself.  You see, I do not like going far into the ocean when I cannot stand because I like to be in control and the ocean you are so not in control. So the fact that I went is freaking amazing.

Also, I went TWICE!

I was in The Great Barrier Reef  so I HAD to scuba dive right? That’s what I was telling myself and it worked. And of course thanks to my amazing instructor, Jake, from The Atlantic Clipper Boat I was on. He was so helpful and made me feel comfortable.

The colors in the Reef are unreal. It really is like Finding Nemo- everything is so rich and vibrant. I was amazed. I originally told Jake I was going to hold on to him the whole time and that we would be besties by the time this was over but then when we were down there I was like let go of me I want to explore! LOL he was so confused!

Then the second day there was a second dive and me and my sister looked at each other like YOLO let’s do it again!! And so glad we did. We were able to touch, hug and kiss a huge fish they call “Elvis” and also found Nemo!!

These lemon cookies were a pleasant surprise for me, I feel in love. They are soft, chewy, thin cookies that I literally could not stop eating. I made some with white chocolate chips but felt the cookies were perfect without the chocolate chips, but totally up to you!

Chewy Lemon Cookies

Prep Time: 15 minutes

Cook Time: 11 minutes

Yield: 22 medium size cookies

Chewy Lemon Cookies

Ingredients

  • 1 1/3 cups unbleached all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 small box lemon pudding
  • 14 tbsp unsalted butter
  • 1 1/4 cup granulated sugar
  • 1/4 tsp lemon extract
  • 1 large egg
  • 1 large egg yolk
  • Zest of one small lemon
  • Juice of one small lemon
  • Optional: 3/4 cup White Chocolate Chips

Instructions

  1. Whisk the flour, baking soda, salt and pudding mix together and set aside.
  2. In the bowl of an electric mixer combine softened butter and sugar until light and fluffy, 3-4 minutes. Add in lemon extract then egg and egg yolk mix until fully combined, about 3 minutes. Add in zest and juice of lemon, mix until fully combined, mixture will be wet.
  3. Mix in the flour mixture until fully combined. Fold in white chocolate chips if using.
  4. Either cover with plastic wrap and chill in bowl inside the fridge for 2 hours or scoop out the balls and place on a flat sheet, cover with plastic wrap and chill for at least 2 hours. ( I prefer scooping the dough out before chilling)
  5. Preheat oven to 350F and line a baking sheet with a silpt liner, if using. If you have already scoped the dough then just place dough balls on sheet or roll out dough into 3 tbsp size balls. I use a cookie scoop to create uniform cookies. Bake for 10-12 minutes. Mine baked for 11 minutes exactly, you want the dough to be set but still shiny, this creates a chewier soft cookie. Cook longer if you like a more crunchy cookie. Store in an airtight container.

Notes

I originally made some cookies with the white chocolate chips but I prefer the cookies without the white chocolate chips.

Caramel Apple Crisp

So I’ve had a craving for apple crisp for almost 6 weeks now. You’d think I would have gotten round to making it. But life has been BUSY!!! Well in between the madness, it really was yesterday ( I worked 7am-3pm and 4:30pm-10:30pm) and made this in between that short little break.

 

Now, I do realize apple baking isn’t really in “season” but for me apple baking is all year long! Cooked apples are one of my all time favorite desserts, whether they are baked in a cake, topped with a crumble, inside a pie, on their own, inside a cookie.. you name it I like it!

Luckily this recipe is DEAD easy! I had salted caramel in the fridge so I used salted but feel free to use good ol’ caramel. Caramel Apple Crisp

Prep Time: 5 minutes

Cook Time: 40 minutes

Total Time: 45 minutes

Yield: 6 Portions

Caramel Apple Crisp

Ingredients

  • 4 small-medium sized Granny Smith apples
  • 3/4 cup caramel, homemade or storebought
  • 1 cup old fashioned oats
  • 1 1/4 cup flour
  • 3/4 brown sugar
  • 3/4 butter, at room temp

Instructions

  1. Preheat oven to 350F. Spray a 9X9 square baking dish with non stick spray.
  2. Peel your apples and slice thin-medium sized slices. Place apples directly inside the pan. Drizzle 3/4 cup caramel on top and mix together so all apples are coated.
  3. In a medium bowl mix together oats, flour, sugar and butter. Sprinkle evenly on top of apples. Bake for 35-45 minutes, or until golden brown top.

Notes

If you don't want to make Salted Caramel store bought caramel will work fine. Or melt wrapped caramels with some heavy cream.

Maple Apple Cheesecake Bars

Maple Apple Cheesecake Bars

Ingredients

    Crust
  • 1 1/2 cup flour
  • 3/4 cup brown sugar
  • 3/4 cup butter, at room temp.
  • Cheesecake Filling
  • 2 8oz packages cream cheese, at room temp
  • 3/4 cup sugar
  • 2 large eggs, at room temp.
  • 2 tsp vanilla extract
  • Apple Mixture
  • 2 apples, diced into small pieces
  • 1/4 tsp ground cloves
  • 1/4 tsp ground cinnamon
  • 2 tbsp sugar
  • Crumb topping
  • 3/4 cup flour
  • 3/4 cup quick cooking oats
  • 1/2 cup brown sugar
  • 1/2 stick butter melted
  • Maple Glaze
  • 1 cup powdered sugar
  • 1/2 tsp maple extract
  • 3-5 tbsp milk

Instructions

    Crust
  1. Preheat oven to 350F and line a 9X9 deep baking pan with foil. In a small bowl combine flour, brown sugar and butter. Cut in butter with a pastry blender, two knives or I like to just rub everything together with my clean hands. Press into prepared pan and bake for 12 minutes. Set on wire rack to cool while preparing remaining components. Reduce oven temp to 325F.
  2. Cheesecake
  3. In the bowl of an electric mixer beat cream cheese for 3 minutes. Then add in sugar and beat for another 2 minutes. Add eggs in one at a time and vanilla. Beat for another 5 minutes. Pour on top of cooled crust.
  4. Apple Mixture
  5. Cut apples up into small pieces, roughly a 1/4 of an inch chunks. Toss apples in a small bowl with cloves, cinnamon and sugar. Sprinkle evenly on top of cheesecake mixture.
  6. Crumb topping
  7. In a medium bowl mix together flour, oats, brown sugar and butter. Sprinkle evenly on top of apples.Bake for 38-45 minute, until cheesecake is set. Let cool completely. I like to let the pan sit on a wire rack for 1 hour then chill in fridge for 2 hours.
  8. Maple Glaze
  9. Mix together powdered sugar and maple extract. Slowly add in milk 1 tbsp at a time until you reached desired consistency, I used 4 tbsp. Drizzle on top of cooled bars. Store in fridge.

Double White Chocolate Cranberry Cookies

So I went to dinner the other week with my girlfriends at a very nice restaurant. I got home from the restaurant, now in light (as the restaurant was dimely light) I looked down at my hands to see them dirty and black.

First I thought, that was a nice restaurant it couldn’t be dirty, then after about 10 minutes of thinking I finally realized it was these new black jeans I just bought. I was so excited to get them. They are some skinny Hudson jeans and since I have the blue jean version and wear them to pieces I just knew it was a fabulous purchase getting them in black.

Well I washed them after that experience, twice now, but they still make my hands so dirty!! I hate it but I love these jeans!!

So these cookies.

I am usually not one for dried fruit. I am always so depressed when I grab a bar of what I think its Cadbury Dairy Milk only to find out its Fruit & Nut, gross. I like nuts by most of the time I am a nut less in my desserts kind of girl. I do however love nuts in my toffee brittle. But fruit not so much, except for fruit pies or fruit tarts but I guess thats not dried fruits. Well anyways, everyone and there mom seems to love white chocolate cranberry cookies so naturally I decided to give em a go.

I put my spin on them and used White Chocolate Pudding in the mix. I’m sure someone else out there has done it but I sure haven’t seen it before!  I was pleasantly surprised how much I enjoyed these cookies. I took some to work and would eagerly eat my lunch to get to my cookie. These are soft, chewy, and irresistible!

Ingredients

  • 2 1/2 cups flour
  • 1 tsp baking soda
  • Pinch of salt
  • 2 sticks butter at room temp
  • 3/4 cup brown sugar
  • 1/4 cup white sugar
  • 2 eggs at room temp
  • 1 tbsp vanilla
  • 1 small box Hershey's white chocolate pudding
  • 1 cup white chocolate chips
  • 1 cup dried cranberries

Instructions

  1. Preheat oven to 350F and line a baking sheet with silpat liner.
  2. In a large bowl mix together the flour, baking soda and salt. Set aside.
  3. In the bowl of an electric mixer cream the butter and sugars for 2 minutes. Add in vanilla and eggs, one at a time. Mix in pudding mix until fully combined. Add dry ingredients to wet ingredients. Fold in white chocolate chips and cranberries.
  4. Place 2 tbsp size balls 2 inches apart on prepared baking sheet. Bake for 9-11 minutes, let cool on wire rack for 5 minutes before removing from pan.

So lately I have been EXTREMELY busy. Like unreal. You see a couple weeks ago my mom got Vertigo. We thought it was a stroke, but LUCKILY thank you god it was not! It was a pretty dramatic day though. I work with my mom, and yes we get along great. We share an office and one day she was at her desk, me at mine and she looked at me and said something was wrong naturally I thought she had done something on the computer and needed my help fixing it. But I was WRONG! She was the problem, she thought she was having a stroke. I don’t think I have ever been more scared in my life. The fire department were there in about 3 minutes then 5 minutes after that the paramedics. The checked her out and said she was not having a stroke but should go to the hospital just to be careful. I was told to follow the ambulance in my car so we had a car to leave the hospital. We got to the hospital and checked her in and I got a hold of my sisters and dad.

The doctors didn’t know what was going on with my mom but 7 hours later figured it out. It is vertigo, what a nasty disease. My mom wasn’t able to get out of bed the first 5 days and then can get up for a little bit now but goes really dizzy and has to sit down after standing for a few minutes. In the beginning she also could barely eat without throwing up. Luckily she is on the mend and hopefully will be back to work next week.

Lemme tell you when you run two restaurants and your office manager is unexpectedly out it is stressful. The first week she was gone I also had numerous events and other things planned becuase normally I would have her help but I survived. Then on Thanksgiving my sister and I ended up cooking and it was delicious, amazing, I want more leftovers now!!! But this has left me no time/room in my schedule to bake!! It’s been sad, really sad. I made these cookies two days before my moms incident and it’s taking me this long to post.

These cookies are darker in color due to the salted caramel in the batter. When they first came out of the oven my sisters thought they were burned but luckily they were not! They were delicious, one of my sissies even said these were the type of cookies she could eat alllllll day long. I’ll take that as a compliment 😉 My sisters are after all quite picky 😉

Yield: 26 Cookies

Salted Caramel Apple White Chocolate Cookies

Ingredients

  • 2 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 1/2 tsp cornstarch
  • 1 stick butter, at room temp
  • 1/3 cup salted caramel
  • 1/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 tsp vanilla
  • 1 large egg
  • 1 large egg yolk
  • 1 1/2 cup white chocolate chips
  • 1 medium sized apple, diced into small chunks
  • Sea Salt for garnishing cookies

Instructions

  1. In a large bowl whisk together flour, baking soda, salt and cornstarch.
  2. In the bowl of an electric mixer fitted with the paddle attachment cream butter, salted caramel, granulated sugar, and brown sugar together for 3 minutes. Add egg, yolk, and vanilla. Slowly add in dry ingredients. Then fold in white chocolate chips and apples. Cover and chill dough for at 3 hours or longer.
  3. Preheat oven to 350F line a baking sheet with silpat liner, if using. Roll into 2 tbsp size balls and sprinkle sea salt on top each cookie, bake for 9-11 minutes.

I made this pie 6 days ago, a very long long long 6 days ago. I made it on a whim, I only had a pinch of time before work. But something told me I needed to bake. Usually when this happens I succeed.

I took it out of the oven, drizzled the salted caramel on top and could just tell this was going to be a winner. I took it to work that evening, I also was training my baby sister at work that night- oh what a fun night! Everyone had a slice and LOVED it! Lydia, my sister, said it was soooo good it was on the same level as my chocolate cake! Let me tell you Lydia speaks honestly, I can even tell by looking at her if she likes what I make.

Salted Caramel Apple Upside Down Pie

Ingredients

    Crust
  • 2 cups ap flour
  • 1/2 tsp salt
  • 6 tbsp shortening
  • 2 tbsp cold butter
  • 7 tbsp orange juice
  • Pie Topping
  • 4 tbsp butter, melted
  • 1/2 cup brown sugar
  • 1/2 cup pecans
  • Apple Filling
  • 7 medium apples (I used granny smith and pink lady), peeled and sliced to 1/4 inch
  • 2 tbsp lemon juice
  • 1/2 cup all purpose flour
  • 1/2 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground nutmeg
  • 1 cup salted caramel

Instructions

    Crust
  1. In a large bowl mix together the flour and salt, cut in the shortening and butter. Once the mixture resembles crumbs slowly add orange juice with a fork mixing until the whole mixture begins to form a ball. Divide ball into two pieces, wrap in plastic wrap and refrigerate at least 30 minutes.
  2. Pie Topping
  3. Preheat oven to 375F and line a 9 inch deep dish pie plate with foil and HEAVILY grease with cooking spray.
  4. In a medium sized bowl combine butter, brown sugar and pecans. Place mixture evenly on bottom of pie plate.
  5. Apple Filling
  6. Mix apple slices, flour, brown sugar, cinnamon nutmeg and cloves until fully combined. Roll one ball of pastry out to fit pie plate. Place half of apples evenly on bottom of pastry drizzle 1/4 cup salted caramel on top, place remaining apples then another 1/4 cup salted caramel.
  7. Roll out second ball of pastry to fit pie. Seal both pastry pieces together, you do not need to make a beautiful design because the pie is going to be flipped upside down. Make sure to still cut four 1-inch slits in the pie crust before baking. Bake for 50-55 minutes, check pie at 35 minutes if crust is becoming to brown cover with foil for remaining baking time. Let pie cool on wire rack for 15 minutes. Place serving dish on top of pie and flip over. Drizzle pie with remaining salted caramel. Serve with ice cream.

I LOVE LOVE LOVE monkey bread, like any excuse to make it I do. I especially love cream cheese stuffed monkey bread, its the bomb! Literally my favorite. I have made it many a times. Last time my nan was here from England  (she will be here Dec 5 for two months woo hoo) on her last day she requested monkey bread, one of my best friends requests it on her birthday each year and friends at work request it for early morning meetings or christmas decorating mornings! Honestly SOOOOO good.

But naturally with the season I have become a tad bit obsessed with baking with apples, I freaking L_O_V_E cooked apples, like the Miley Cyrus song “And we can’t stop, And we won’t stop” I literally WILL NOT STOP cooking with apples. But really that is a good things right, how does that saying go? An apple a day, keeps the doctor away? 😉

It was only made sense that I would cook apples in some monkey bread!! I made these about two weeks ago on a beautiful californian autum day, lezzzz be honest here we don’t really have “seasons” her in SO Cal but this day was close to one.

I made the dough and also froze half for later so when I get the craving for cooked apples again I will be able to make these Mini Apple Monkey Bread on the spot!

The dough and apples are baked with a delicious cinnamon sugar kind of thick glaze that I could have drank. Very easily.

Mini Apple Monkey Bread

Yield: 24 muffin size monkey bread

Mini Apple Monkey Bread

Ingredients

    Monkey Bread Dough
  • 1 package Red Star Platinum Yeast
  • 1/4 cup warm water (115F)
  • 1 cup warm milk
  • 2 tsp milk powder
  • 1/3 cup butter, melted
  • 1/4 cup sugar
  • 2 eggs
  • 1 tsp salt
  • 5 cups flour
  • Apple Mixture
  • 2 medium sized apples, peeled and sliced
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 tbsp vanilla extract
  • 2 tsp ground cinnamon
  • 6 tbsp butter melted

Instructions

    Monkey Bread Dough
  1. In a large bowl place yeast and warm water to dissolve yeast. Add the milk, milk powder, butter, sugar, eggs, salt and 3 cups of flour. Beat on medium speed for 3 minutes then add in the remaining 2 cups of flour and mix until a firm dough is made. Knead by hand for 6-8 minutes or knead in electrical kitchen mixer for same time.
  2. Either place in the refrigerator over night or Turn oven on to 200F, heavily grease a bowl and place kneaded dough into the bowl. Turn oven off and place bowl in the oven with a towel over the top.
  3. In the morning take the dough out of the fridge and let come to room temp for 30 minutes OR if dough was rising in the oven take it once it is doubled in size about 45 minutes.
  4. You may use all of the dough to make 24 mini monkey bread muffins or cut the dough in half and freeze the other half for use later. Cut the dough into one inch size pieces, place on a silpat lined cookie sheet and let rise another 45 minutes.
  5. Apple Mixture
  6. Once dough has risen, preheat oven to 350F and grease a muffin pan.
  7. In a microwave safe bowl melt the butter. In a medium sized bowl mix together brown sugar, granulated sugar, vanilla extract and cinnamon together.
  8. Take a chunk of dough, dip it in the melted butter then roll in the cinnamon sugar mixture. Place three dough chunks inside each muffin, repeat until all dough is used up. Mix apples in remaining sugar mixture and place 2-3 apple slices in between dough. Place muffin pan on a cookie sheet and bake for 20-25 minutes or until golden brown.

As I post this I am leaving for Vegas! Woohoo I have been looking forward to this for months now, there are 9 of us girls going and we are all the crazy, don’t care if we make fools of ourselves, break out in song and dance in the middle of nowhere kind of girls. So you know it’s going to be memorable. I am making Bagel Bombs for the drive up, and thank goodness I am not driving because I would fall asleep so thank you to Cassie and Abbey for driving!! I am also very proud of myself for NOT going and buying 6 dresses for the 2 nights I will be there. I decided to use some brand new dresses that have been sitting in my closet for months. You see I kind of have a dress obsession. I am wearing a red dress one night and a black dress the next, totally Vegas appropriate colors!!

Salted Caramel Cinnamon Apple Snickerdoodle Cookies

Salted Caramel Cinnamon Apple Snickerdoodle Cookies

Ingredients

    Salted Caramel Cinnamon Apple Snickerdoodle
  • 1 1/2 sticks unsalted butter
  • 2 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons cream of tartar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 tsp cornstach
  • Previously Browned Butter
  • 1/2 cup salted caramel
  • 1 cup dark brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 tablespoon vanilla extract
  • 3 tablespoon plain greek yogurt/sour cream
  • 1 medium size Granny Smith apple, chopped in small chunks
  • Cinnamon Buttercream
  • 1 stick unsalted butter, at room temp.
  • 1 tbsp vanilla extract
  • 2 tsp ground cinnamon
  • 2 cups powdered sugar
  • 2 tbsp milk

Instructions

    Salted Caramel Cinnamon Apple Snickerdoodle
  1. n a saucepan melt butter and "brown it". Heat the butter on low-medium and let it melt and cook until it browns, watch carefully as it can burn quickly. Once browned set aside for 10 minutes to cool then place in fridge to solidify
  2. In a medium bowl mix together the flour, baking soda, cream of tartar, 1/2 tsp cinnamon and salt. Set aside.
  3. Im bowl of an electric mixer combine browned butter, salted caramel, brown sugar and 1/2 granulated sugar until mixed together. Add in egg and egg yolk. Add in vanilla and greek yogurt.
  4. Slowly mix dry ingredients into wet ingredients, then fold in apple chunks. Wrap in plastic wrap and chill for at least 30 minutes.
  5. After chilling preheat oven to 350F and line a baking sheet with a silpat liner. Place 2tbsp size balls of dough on baking sheet and bake for 9-11 minutes. Take them out when they look almost done. Let cool on pan for 5 minutes then transfer to a wire rack.
  6. Cinnamon Buttercream
  7. In the bowl of an electric beat butter for 3 minutes. Add in vanilla extract, cinnamon, powdered sugar and milk, mix on low until combined. Then beat for 3 minutes until all fully combined. Spread on top of cookies.

Caramel Apple Cake

 Caramel Apple Cake is a moist apple cake filled with apple chunks and brown sugar caramel that is baked with lots of brown sugar caramel apple slices. This cake will not disappoint any of your friends and family.

You see Friday was my friend/co worker Tammys Birthday so I knew I wanted to make a cake and I just happend to make a Cadburys Chocolate Layer Cake the day before for my Fathers birthday so naturally a fruit cake would be best after the overload of chocolate we were experiencing.

This cake was more than I could have imagined. The caramel apples were perfect, literally amazing. And the brown sugar caramel was out of this world! Orginally I wanted to make some Salted Caramel Sauce for this cake but when I went to grab some granulated sugar I had only about 1/4 cup left but had 4 bags of powdered sugar and 4 bags of brown sugar!! Typical! But it made me make brown sugar caramel and I LOOOOOOVED it!

I made the caramel the night before so when I made the cake it was super easy to put together. But you could very easily make the caramel first then make cake right after.

I took the cake to work first but sngagged a little piece to come home and photograph. We enjoyed the cake cold with more brown sugar caramel drizzled on top and of course a scoop of vanilla ice cream. Lez be hoenst ice cream is a fabulous addition to most cakes! After I photographed the pieces at home I deciede to warm it up wtih vanilla ice cream. And now I am stumped, I do not know which I like better cold or warm?! Oh the decisions! I cannot wait to make this again!!

Caramel Apple Cake

Prep Time: 20 minutes

Cook Time: 45 minutes

Total Time: 1 hour, 5 minutes

Yield: 10 slices

Apple slices in Brown Sugar Caramel are a top of this upside down moist apple cake.

Ingredients

    Caramel
  • 2 cups brown sugar
  • 1 stick butter
  • 1/2 cup heavy cream
  • Apple Cake
  • 4 medium size Granny Smith apples
  • 1 1/2 cups flour
  • 11/2 tsp baking powder
  • 1 tsp salt
  • 3 eggs
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 1 stick butter melted
  • 1 tbsp vanilla
  • 1 medium Granny Smith apple, cut in chunks
  • 1/2 cup Caramel (see above recipe)

Instructions

    Caramel
  1. Cook brown sugar and butter until reaches in a thick bottomed saucepan until the temperature reaches 320F, (be careful, as can burn easily) then add cream, whisk vigorously until completely combined. Set aside and let cool.
  2. Apple Cake
  3. Preheat oven to 350F and grease a 10 inch round cake pan at least 2 1/2 inches deep.
  4. Peel and chop 4 medium sized Granny Smith apples. Cut 2 apples into 1/2 inch slices and 2 into 1/4 inch slices. In a medium saucepan cook 1/2 cup of the caramel and the 1/2 inch apple slices for 4 minutes add in the remaining apple slice and stir until apples are evenly coated. Pour into prepared pan.
  5. In a medium sized bowl mix the flour, baking powder and salt together. Set aside. In the bowl of an electric mixer combine eggs and sugars for 2 minutes on medium speed. Add in melted butter and vanilla. Slowly add dry ingredients and mix until just combined, fold in chopped apples. Scoop 1/2 cups worth of teaspoon size balls of caramel into batter. Pour batter on top of apple mixture and bake for 45-55 minutes or until toothpick inserted comes out clean. Let cool on wire rack for 20 minutes then place a large serving plate on the top of cake pan and flip cake. Drizzle reaming caramel sauce on top if you want.
