I had so many plans for these blondies. But things just didn’t go according to plan, and I am soooooo happy they didn’t.

First I wanted to swirl the blondies with caramel, but I didn’t have any made and I didn’t have time to make any.

Then I wanted to do a maple version, since I freaking love maple. But I was out of maple syrup.

So then I was going to do an apple blondie and do a browned butter glaze.

But then I thought of sautéing the apples in some brown sugar and butter like I did in this cake and then folding the semi cooked apples into a delicious blondie batter.

Yes that was the winner, carmelized apples into a delightful blondie batter.

Yes it was amazing, it still is. I am eating a bite or two while writing this post.

Brown Sugar Apple Blondies

Brown Sugar Apple Blondies

Ingredients

    Apple Mixture
  • 2 tbsp butter, unsalted
  • 3 tbsp dark brown sugar
  • 1 large apple, cut into small pieces
  • Blondie
  • 1/2 cup unsalted butter, melted
  • 1 cup dark brown sugar
  • 1 large egg
  • 1 tbsp vanilla extract
  • 1 1/4 cup all purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Instructions

    Apple Mixture
  1. Preheat oven to 350F and line a 8X8 pan with foil and grease.
  2. In a medium saucepan cook apple chunks in butter and brown sugar. Cook on medium heat for 4-6 minutes, until apples are slightly softened.
  3. Blondie
  4. In a medium bowl mix butter and sugar together. Whisk in egg and vanilla extra. Mix in flour, baking soda and salt. Fold in all of apple mixture. Pour into prepared pan and bake for 35-40 minutes, until middle is set and golden brown. Place on wire rack and let cool completely before slicing.

Well caramelitas are a favorite of just about everyone. And lately I have been in a peanut butter phase so I thought why not combine the two? Well it was a good idea. You get all the flavors in these bars- caramel, peanut butter, chocolate, oatty goodness.

Peanut Butter Carmelitas

Peanut Butter Carmelitas

Ingredients

  • 3/4 cup heavy whipping cream
  • 30 unwrapped caramels
  • 3/4 cup brown sugar
  • 3/4 cup butter melted (1 1/2 sticks)
  • 1/4 cup creamy peanut butter
  • 1 cup all purpose flour
  • 1 cup rolled oats
  • 1 tsp baking soda
  • 15 Rolo’s
  • 1 1/2 cup milk chocolate chips

Instructions

  1. Preheat oven to 350F and line a 8 X 8 pan with foil and spray with non-stick cooking spray.
  2. In a saucepan over low-medium heat melt the caramels and heavy cream. Watch carefully as they can burn easily. Once melted set aside.
  3. In a medium bowl mix brown sugar, melted butter and peanut butter. Add flour, oats, and baking soda and mix until just combined.
  4. Press half of mixture into pan and bake for 10 minutes.
  5. Take pan out of the oven after 10 minutes. Sprinkle chocolate chips on top of the dough. Then pour the melted caramel on top. Sprinkle rest of dough on top and bake for another 15 minutes or until edges are golden brown. Let cool completely otherwise you will have a hot gooey mess.

And lemme tell you these were bomb freaking diggity. Like DAYUUUUUM GINA! They went quick, too quick for my liking. Caramel Cheesecake Bars

Prep Time: 25 minutes

Cook Time: 40 minutes

Yield: 16 Bars

Ingredients

    Crust
  • 21 Oreos
  • 4 tbsp butter, melted
  • Cheesecake
  • 16 oz cream cheese at room temp
  • 3/4 cup granulated sugar
  • 2 large eggs, at room temp.
  • 1 tbsp vanilla
  • 3/4 cup salted caramel homemade or store bought

Instructions

    Crust
  1. Preheat oven to 325F and line a 9X9 pan with foil and grease it heavily, including up the sides.
  2. In a food processor crush the Oreo cookies into fine crumbs. In a small bowl combine the crushed Oreos and melted butter. Once combined press into prepared pan.
  3. Cheesecake
  4. In the bowl of an electric mixer beat the cream cheese for two minutes. Add the granulated sugar and mix for another 2 minutes, make sure to scrap sides of bowl so all is incorporated evenly. Add in eggs, one at a time and then vanilla.
  5. Pour on top of prepared crust. Spoon 8 tbsp sizes dollops of salted caramel and use a knife to swirl into bars. Bake for 38-42 minutes or until center stops giggling. Set on wire rack and let cool for 30 minutes, then place in fridge to chill for 2 hours or do 40 minutes in fridge and 30 in freezer.
  6. Drizzle more salted caramel on top, if desired. Store in fridge.

I have my days living in southern california, 90% of the time I feel so blessed and lucky to have the surroundings I do but then some days, like when I think about it has only rained like twice in the last year ( and that is no exaggeration) I get sad we don’t have seasons. I have always wanted to watch “the leaves change” in fact, one year I specifically booked my NYC trip around it, and did we see leaves change? The few days before we go there they were having record heat and then when we got there it dropped to snow!! Where did fall go? I missed it some how. Guess I’ll have to plan another trip and try to catch it!! So for now I will just bask in the scorching hot sun!! One of my favorite cakes ever is Coffee Cake, and not the American breakfast coffee cake, the English actual cake, no crumble, coffee flavored cake and coffee flavored frosting… cake.

When I was in Australia a few weeks ago we made my Nan’s delicious coffee cake. I devoured it. Literally, I finished the cake off. Oops. Anyways, I got to thinking about how great the coffee flavored frosting was and wondered why I don’t use coffee flavored frosting more often. So I did. With chocolate cake, and added some salted caramel for good measure. I mean what doesn’t become better with salted caramel. If you’re wondering, the answer is nothing. Salted caramel makes everything better. I took these into work and they were gone in no time. In fact I went to have one (I already had one earlier) and there were none left. Imagine my disappointment!!

Caramel Coffee Chocolate Cupcakes

Prep Time: 25 minutes

Cook Time: 20 minutes

Yield: 28 Cupcakes

Caramel Coffee Chocolate Cupcakes

Ingredients

    Chocolate Cupcakes
  • 1 box Chocolate cake mix
  • 4 large eggs, at room temp.
  • 1 cup greek yogurt
  • 1/2 cup milk
  • 1 cup vegetable oil
  • 1 cup mini chocolate chips
  • Frosting
  • 1 tbsp instant coffee
  • 2 tbsp hot water
  • 1 stick unsalted butter, at room temp.
  • 2 1/2-3 cups powdered sugar
  • 1/4 cup heavy cream

Instructions

    Cupcakes
  1. Preheat oven to 350F and line a cupcake pan with liners.
  2. In the bowl of an electric mixer combine cake mix, eggs, greek yogurt, milk and oil until fully combined- but do not over mix. Fold in chocolate chips then pour batter into cupcake liners, filling 2/3rds full. Bake for 18-20 minutes. Let cool completely.
  3. Frosting
  4. Once cupcakes are completely cool start frosting. Beat butter for 3 minutes. Add vanilla extract, powdered sugar and heavy cream. Beat on low until powdered sugar is combined then beat on high for 4minutes. Fold in rainbow chips and pipe or spread onto cupcakes

So lately I have been EXTREMELY busy. Like unreal. You see a couple weeks ago my mom got Vertigo. We thought it was a stroke, but LUCKILY thank you god it was not! It was a pretty dramatic day though. I work with my mom, and yes we get along great. We share an office and one day she was at her desk, me at mine and she looked at me and said something was wrong naturally I thought she had done something on the computer and needed my help fixing it. But I was WRONG! She was the problem, she thought she was having a stroke. I don’t think I have ever been more scared in my life. The fire department were there in about 3 minutes then 5 minutes after that the paramedics. The checked her out and said she was not having a stroke but should go to the hospital just to be careful. I was told to follow the ambulance in my car so we had a car to leave the hospital. We got to the hospital and checked her in and I got a hold of my sisters and dad.

The doctors didn’t know what was going on with my mom but 7 hours later figured it out. It is vertigo, what a nasty disease. My mom wasn’t able to get out of bed the first 5 days and then can get up for a little bit now but goes really dizzy and has to sit down after standing for a few minutes. In the beginning she also could barely eat without throwing up. Luckily she is on the mend and hopefully will be back to work next week.

Lemme tell you when you run two restaurants and your office manager is unexpectedly out it is stressful. The first week she was gone I also had numerous events and other things planned becuase normally I would have her help but I survived. Then on Thanksgiving my sister and I ended up cooking and it was delicious, amazing, I want more leftovers now!!! But this has left me no time/room in my schedule to bake!! It’s been sad, really sad. I made these cookies two days before my moms incident and it’s taking me this long to post.

These cookies are darker in color due to the salted caramel in the batter. When they first came out of the oven my sisters thought they were burned but luckily they were not! They were delicious, one of my sissies even said these were the type of cookies she could eat alllllll day long. I’ll take that as a compliment 😉 My sisters are after all quite picky 😉

Salted Caramel Apple White Chocolate Cookies

Yield: 26 Cookies

Salted Caramel Apple White Chocolate Cookies

Ingredients

  • 2 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 1/2 tsp cornstarch
  • 1 stick butter, at room temp
  • 1/3 cup salted caramel
  • 1/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 tsp vanilla
  • 1 large egg
  • 1 large egg yolk
  • 1 1/2 cup white chocolate chips
  • 1 medium sized apple, diced into small chunks
  • Sea Salt for garnishing cookies

Instructions

  1. In a large bowl whisk together flour, baking soda, salt and cornstarch.
  2. In the bowl of an electric mixer fitted with the paddle attachment cream butter, salted caramel, granulated sugar, and brown sugar together for 3 minutes. Add egg, yolk, and vanilla. Slowly add in dry ingredients. Then fold in white chocolate chips and apples. Cover and chill dough for at 3 hours or longer.
  3. Preheat oven to 350F line a baking sheet with silpat liner, if using. Roll into 2 tbsp size balls and sprinkle sea salt on top each cookie, bake for 9-11 minutes.

I made this pie 6 days ago, a very long long long 6 days ago. I made it on a whim, I only had a pinch of time before work. But something told me I needed to bake. Usually when this happens I succeed.

I took it out of the oven, drizzled the salted caramel on top and could just tell this was going to be a winner. I took it to work that evening, I also was training my baby sister at work that night- oh what a fun night! Everyone had a slice and LOVED it! Lydia, my sister, said it was soooo good it was on the same level as my chocolate cake! Let me tell you Lydia speaks honestly, I can even tell by looking at her if she likes what I make.

Salted Caramel Apple Upside Down Pie

Ingredients

    Crust
  • 2 cups ap flour
  • 1/2 tsp salt
  • 6 tbsp shortening
  • 2 tbsp cold butter
  • 7 tbsp orange juice
  • Pie Topping
  • 4 tbsp butter, melted
  • 1/2 cup brown sugar
  • 1/2 cup pecans
  • Apple Filling
  • 7 medium apples (I used granny smith and pink lady), peeled and sliced to 1/4 inch
  • 2 tbsp lemon juice
  • 1/2 cup all purpose flour
  • 1/2 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground nutmeg
  • 1 cup salted caramel

Instructions

    Crust
  1. In a large bowl mix together the flour and salt, cut in the shortening and butter. Once the mixture resembles crumbs slowly add orange juice with a fork mixing until the whole mixture begins to form a ball. Divide ball into two pieces, wrap in plastic wrap and refrigerate at least 30 minutes.
  2. Pie Topping
  3. Preheat oven to 375F and line a 9 inch deep dish pie plate with foil and HEAVILY grease with cooking spray.
  4. In a medium sized bowl combine butter, brown sugar and pecans. Place mixture evenly on bottom of pie plate.
  5. Apple Filling
  6. Mix apple slices, flour, brown sugar, cinnamon nutmeg and cloves until fully combined. Roll one ball of pastry out to fit pie plate. Place half of apples evenly on bottom of pastry drizzle 1/4 cup salted caramel on top, place remaining apples then another 1/4 cup salted caramel.
  7. Roll out second ball of pastry to fit pie. Seal both pastry pieces together, you do not need to make a beautiful design because the pie is going to be flipped upside down. Make sure to still cut four 1-inch slits in the pie crust before baking. Bake for 50-55 minutes, check pie at 35 minutes if crust is becoming to brown cover with foil for remaining baking time. Let pie cool on wire rack for 15 minutes. Place serving dish on top of pie and flip over. Drizzle pie with remaining salted caramel. Serve with ice cream.

As I post this I am leaving for Vegas! Woohoo I have been looking forward to this for months now, there are 9 of us girls going and we are all the crazy, don’t care if we make fools of ourselves, break out in song and dance in the middle of nowhere kind of girls. So you know it’s going to be memorable. I am making Bagel Bombs for the drive up, and thank goodness I am not driving because I would fall asleep so thank you to Cassie and Abbey for driving!! I am also very proud of myself for NOT going and buying 6 dresses for the 2 nights I will be there. I decided to use some brand new dresses that have been sitting in my closet for months. You see I kind of have a dress obsession. I am wearing a red dress one night and a black dress the next, totally Vegas appropriate colors!!

Salted Caramel Cinnamon Apple Snickerdoodle Cookies

Ingredients

    Salted Caramel Cinnamon Apple Snickerdoodle
  • 1 1/2 sticks unsalted butter
  • 2 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons cream of tartar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 tsp cornstach
  • Previously Browned Butter
  • 1/2 cup salted caramel
  • 1 cup dark brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 tablespoon vanilla extract
  • 3 tablespoon plain greek yogurt/sour cream
  • 1 medium size Granny Smith apple, chopped in small chunks
  • Cinnamon Buttercream
  • 1 stick unsalted butter, at room temp.
  • 1 tbsp vanilla extract
  • 2 tsp ground cinnamon
  • 2 cups powdered sugar
  • 2 tbsp milk

Instructions

    Salted Caramel Cinnamon Apple Snickerdoodle
  1. n a saucepan melt butter and "brown it". Heat the butter on low-medium and let it melt and cook until it browns, watch carefully as it can burn quickly. Once browned set aside for 10 minutes to cool then place in fridge to solidify
  2. In a medium bowl mix together the flour, baking soda, cream of tartar, 1/2 tsp cinnamon and salt. Set aside.
  3. Im bowl of an electric mixer combine browned butter, salted caramel, brown sugar and 1/2 granulated sugar until mixed together. Add in egg and egg yolk. Add in vanilla and greek yogurt.
  4. Slowly mix dry ingredients into wet ingredients, then fold in apple chunks. Wrap in plastic wrap and chill for at least 30 minutes.
  5. After chilling preheat oven to 350F and line a baking sheet with a silpat liner. Place 2tbsp size balls of dough on baking sheet and bake for 9-11 minutes. Take them out when they look almost done. Let cool on pan for 5 minutes then transfer to a wire rack.
  6. Cinnamon Buttercream
  7. In the bowl of an electric beat butter for 3 minutes. Add in vanilla extract, cinnamon, powdered sugar and milk, mix on low until combined. Then beat for 3 minutes until all fully combined. Spread on top of cookies.

 Caramel Apple Cake is a moist apple cake filled with apple chunks and brown sugar caramel that is baked with lots of brown sugar caramel apple slices. This cake will not disappoint any of your friends and family.

You see Friday was my friend/co worker Tammys Birthday so I knew I wanted to make a cake and I just happend to make a Cadburys Chocolate Layer Cake the day before for my Fathers birthday so naturally a fruit cake would be best after the overload of chocolate we were experiencing.

This cake was more than I could have imagined. The caramel apples were perfect, literally amazing. And the brown sugar caramel was out of this world! Orginally I wanted to make some Salted Caramel Sauce for this cake but when I went to grab some granulated sugar I had only about 1/4 cup left but had 4 bags of powdered sugar and 4 bags of brown sugar!! Typical! But it made me make brown sugar caramel and I LOOOOOOVED it!

I made the caramel the night before so when I made the cake it was super easy to put together. But you could very easily make the caramel first then make cake right after.

I took the cake to work first but sngagged a little piece to come home and photograph. We enjoyed the cake cold with more brown sugar caramel drizzled on top and of course a scoop of vanilla ice cream. Lez be hoenst ice cream is a fabulous addition to most cakes! After I photographed the pieces at home I deciede to warm it up wtih vanilla ice cream. And now I am stumped, I do not know which I like better cold or warm?! Oh the decisions! I cannot wait to make this again!!

Caramel Apple Cake

Prep Time: 20 minutes

Cook Time: 45 minutes

Total Time: 1 hour, 5 minutes

Yield: 10 slices

Apple slices in Brown Sugar Caramel are a top of this upside down moist apple cake.

Ingredients

    Caramel
  • 2 cups brown sugar
  • 1 stick butter
  • 1/2 cup heavy cream
  • Apple Cake
  • 4 medium size Granny Smith apples
  • 1 1/2 cups flour
  • 11/2 tsp baking powder
  • 1 tsp salt
  • 3 eggs
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 1 stick butter melted
  • 1 tbsp vanilla
  • 1 medium Granny Smith apple, cut in chunks
  • 1/2 cup Caramel (see above recipe)

Instructions

    Caramel
  1. Cook brown sugar and butter until reaches in a thick bottomed saucepan until the temperature reaches 320F, (be careful, as can burn easily) then add cream, whisk vigorously until completely combined. Set aside and let cool.
  2. Apple Cake
  3. Preheat oven to 350F and grease a 10 inch round cake pan at least 2 1/2 inches deep.
  4. Peel and chop 4 medium sized Granny Smith apples. Cut 2 apples into 1/2 inch slices and 2 into 1/4 inch slices. In a medium saucepan cook 1/2 cup of the caramel and the 1/2 inch apple slices for 4 minutes add in the remaining apple slice and stir until apples are evenly coated. Pour into prepared pan.
  5. In a medium sized bowl mix the flour, baking powder and salt together. Set aside. In the bowl of an electric mixer combine eggs and sugars for 2 minutes on medium speed. Add in melted butter and vanilla. Slowly add dry ingredients and mix until just combined, fold in chopped apples. Scoop 1/2 cups worth of teaspoon size balls of caramel into batter. Pour batter on top of apple mixture and bake for 45-55 minutes or until toothpick inserted comes out clean. Let cool on wire rack for 20 minutes then place a large serving plate on the top of cake pan and flip cake. Drizzle reaming caramel sauce on top if you want.

Originally I wanted marshmallow fluff for these bars, I was gong to stuff it in the middle, I even patted half of the batter down and went to grab the fluff and of course there was no fluff to be found! Just my luck! So I improvised and to be honest I like this version better than my original idea. Candy stuffed blondies a layer of melted chocolate, marshmallows and chopped up caramel. If that isn’t heaven in a bit I don’t know what is.

Go now, make these with all that leftover Halloween candy, okay I realize it isn’t even Halloween yet but I have been buying “Halloween” candy for weeks now!! So I have tons to use up! And you probably will too after Thursday!

Chewy Gooey Candy Blondies

Easy one bowl blondies are stuffed with chopped up candy bars topped with melted chocolate, marshmallow and caramel. These Chewy Gooey Candy Blondies will leave you wanting more!

Ingredients

  • 1/2 cup unsalted butter melted (1 stick)
  • 3/4 cup dark brown sugar
  • 1/4 cup granulated sugar
  • 1 tbsp vanilla extract
  • 1 egg, at room temp
  • 1 cup ap flour
  • 1/2 tsp baking soda
  • pinch salt
  • 1 1/4 cup chopped up candy, or chocolate chunks/chips
  • 1 cup chocolate chips
  • 2 cups mini marshmallows
  • 1/2 cup carmels, chopped small

Instructions

  1. Preheat oven to 350F and line a 8X8 baking dish with foil and grease heavily.
  2. In a medium bowl mix together melted butter and sugars. Add in vanilla extract and egg until combined. Add flour, baking soda, salt and mix until just combined. Fold in chopped up candy, I used Heath Bars, Peanut Butter Cups and Rolos. Bake for 23 minutes, until light and golden brown.
  3. Sprinkle chocolate chips on top of hot bars place back in oven for 2 minutes. Take out of oven and spread chocolate evenly. Sprinkle marshmallows on top then chopped caramel bits, place back in oven for 3-5 minutes-until marshmallows and caramel begin to melt together just a little. Take out of oven and cool on a wire rack for at least 1 hour.

Being in the restaurant business, Monday isn’t a dreadful day and Friday isn’t  joyous day, something goes on EVERY day so sometimes I don’t even know what day I am on. I am not complaining but sometimes I giggle to myself when I have no idea what day it is, then I feel lost and confused so I yell out to someone “what day is it?” and I get an answer and a laugh.

Another thing that is constant for me is cookies, I never ever, I mean never ever ever get sick of them. How could you? And with such variety, how could you? Naturally I needed a new type of cookie so I decided to play with two cookie recipes I have previously posted, Salted Caramel Chocolate Chip Cookies and Brown Butter Snickerdoodles.

These cookies were SOOO chewy and sooo tasty! I couldn’t stop eating them, literally I took them to work to share with my co workers then got scared I wouldn’t have enough so I stole some back. Pathetic? Yes, thats me..

Salted Caramel Snickerdoodles

Yield: 30 Cookies

Salted Caramel Snickerdoodles

Ingredients

  • 1 1/2 sticks unsalted butter
  • 2 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons cream of tartar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 tsp cornstach
  • Previously Browned Butter
  • 1/2 cup salted caramel
  • 1 cup dark brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 tablespoon vanilla extract
  • 3 tablespoon plain greek yogurt/sour cream
  • 1 cup Heath Bits
  • Cinnamon Sugary Topping
  • 1/4 cup granulated sugar
  • 2 teaspoons cinnamon

Instructions

  1. In a saucepan melt butter and "brown it". Heat the butter on low-medium and let it melt and cook until it browns, watch carefully as it can burn quickly. Once browned set aside for 10 minutes to cool then place in fridge to solidify
  2. In a medium bowl mix together the flour, baking soda, cream of tartar, 1/2 tsp cinnamon and salt. Set aside.
  3. Im bowl of an electric mixer combine browned butter, salted caramel, brown sugar and 1/2 granulated sugar until mixed together. Add in egg and egg yolk. Add in vanilla and greek yogurt.
  4. Slowly mix dry ingredients into wet ingredients, then fold ini Heath Bits. Wrap in plastic wrap and chill for at least 30 minutes.
  5. After chilling preheat oven to 350F and line a baking sheet with a silpat liner.
  6. Cinnamon Sugar Topping
  7. In a small bowl combine granulated sugar and 2 teaspoons of cinnamon.
  8. Scoop dough to 2 tablespoons size and roll in cinnamon sugar.
  9. Place on baking sheet and bake for 9-11 minutes. Take them out when they look almost done. Let cool on pan for 5 minutes then transfer to a wire rack.
