I finally booked AUSTRALIA!! WOOO FREAKING HOOOO!!! Bondi Beach here I come and the Whitsundays, well we haven’t booked that little holiday within the big holiday but we are in the process. I am so excited to get away, I need a major break that is for sure. Work has been insane!!

This time two of my beautiful cousins are living in Australia so we are going to have a fun girly trip! I have already started researching Chocolate Tours of Sydney.. I mean come on!! Seriously, get in ma belly!! And Max Brenner!! Ugh how I love thee.

And to be honest Max Brenner in Vegas & NYC are shit compared to all the Max Brenners in Australia, and I went to many- anyone that we saw we visited. I am sure my cousin Lucy is thinking oh no they are coming again, I am going to have to spend so much time at Max Brenner. She hated it, but secretly I think she loved it. We would go in and order like 8 things for 3 of us. Ha it was fabulous!!!!! Waffles, ice cream, chocolate, strawberries, bananas, caramel, drinking chocolate… the list goes on.

I have one regret in life, and that was the first night we were in Australia we went to dinner but I had caught a 48 hour fever, sickness thingy so after dinner Lucy suggested going to Max Brenner and I turned it down, little did I know I would spend every single other day in Australia at Max Brenner. Lesson learned, DO NOT TURN DOWN A CHOCOLATE BAR!

Another thing  I am excited about is the banana bread. Everyone eats banana bread for breakfast there. And toasted with buttah allll over it! Which is lovely cuz people in the States think I am a freak for slathering buttah all over my banana bread. But damn it is so good!! Oh I can imagine it now.

 

So naturally in order to get ready for Australia my diet is consisting of only Brown Butter Toffee Gooey Cake Bars. Healthiest thing around. HA! I wish. I went to TJS and bough salad and brussel sprouts and artichoke hearts.  But on the real though, these bars. Everyone LOVED THEM! One guy at work said he liked them cuz they weren’t that sweet. He is straight trippin- they are sweet, but amazingly sweet. Like go make these now.

Ooey Gooey Brown Butter Bars

Ingredients

    Crust
  • 1 Box Yellow Butter Cake Mix
  • 1 Stick Butter, browned
  • 1 Egg
  • Topping
  • 1 8 oz block cream cheese, softened
  • 2 Eggs
  • 1 tbsp vanilla extract
  • 3 1/2 cups powdered sugar
  • 1/3 cup toffee bits

Instructions

    Crust
  1. Preheat oven to 350F and line a 9X9 pan with foil and grease, set aside.
  2. In a medium bowl combine cake mix, brown butter and egg. Press into prepared pan.
  3. Topping
  4. In the bowl of an electric mixer beat cream cheese for 2 minutes, add in eggs and vanilla extract beating until combined. Add in powdered sugar, beat until combined. Fold in heath bits. Pour batter on top of crust and bake for 40-45 minutes, you want the middle to be set but still a bit jiggly. Let cool completely before cutting.

Two weekends ago I went down to San Diego for a Bachelorette night for one of my favorite bunnies ever! Ashley and I became friends through work and we have all become a little family at our pub. This cutie pie is getting married in about a month and I am so happy for her!

I went with 3 other girls, and since it was a road trip (more like 2 hours) I knew I needed snacks cookies for the drive. And since brown buttah is mah thing and I had a new bag of mini m&m, brown butter oat m&m cookies were made.

They were so good. Perfect size. Perfect texture. And chock a block full of m&ms and chocolate, a definite must in a cookie.

Brown Butter M&M Oat Cookies

Yield: 3 dozen cookies

Brown Butter M&M Oat Cookies

Ingredients

  • 2 sticks butter, (1 cup) browned and set back to solidify
  • 2 cups ap flour
  • 1 cup quick oats
  • 1 1/2 tsp cornstarch
  • 1/2 tsp baking powder
  • 1 tsp salt
  • 1/2 cup granulated sugar
  • 3/4 cup dark brown sugar, packed
  • 1 tbsp vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 1 cup mini m&ms
  • 3/4 cup milk chocolate chpis

Instructions

  1. In a saucepan brown you butter. Let cool slightly then place in fridge or freezer until butter is back at a softened state. (See note)
  2. Preheat oven to 350F and line baking sheet with silpat liner, if using.
  3. Whisk the flour, oats, cornstarch, baking powder and salt. Set aside.
  4. In the bowl of an electric mixer cream the butter and sugars for a few minutes. Add in egg, yolk and vanilla. Mix until fully incorporated. Slowly add in dry ingredients, mixing until no flour streaks remain. Mix in M&M's and chocolate chips. Scoop 1 1/2 tbsp size cookies and bake for 9-12 minutes. Until cookies are golden brown around the edges but still look a little underdone in the middle. Let cool on tray for 5 minutes then transfer to a wire rack to cool completely. Store in an airtight container for 3 days.

Notes

I personally brown butter in batches and keep some in fridge but if you can do it this way too.

I love cookies, in fact I think I am in love with cookies. That’s normal right? And a few days ago it was  National Chocolate Chip Cookie Day! WOOHOOO.. I remember this day last year I was at a group workout class outside and told everyone how I waned to leave and go stuff my face with cookies. The “workout” people were not too impressed. Oops.

There is absolutely nothing better than a hot, fresh, out of the oven chocolate chip cookie. Really nothing. Except going shopping and finding 10 things at Forever 21! And then people asking if you got the shirt at Nordstroms?! Score.

Back to cookies. Lately I have been making all my cookies with this recipe. Brown butter and me are best buddies.  Caramel/toffee are my favorite so butter that smells and tastes like toffee/caramel? So I wanted to bake with my best friend, but this time I wanted to use brown butter but not in the liquid form. So, I browned some butter and let it come back to a solid form. I didn’t let the butter get to a completely solid state, but more like softened butter that you would normally use for cookies.

Then I decided I wanted milk chocolate chips, white chocolate chips, and butterscotch chips! Because the more chips the better!

You can totally make batches of brown butter ahead of time and then use it quickly. Or you could just use regular ol buttah. But really brown butter is SO much better! Hope you give these cookies a try, they really were irresistible. Chewy, soft, moist..basically my perfect cookie. Kind of like the red chewy chips ahoy ones.. but 10X better!!

Triple Chip Cookies

Prep Time: 15 minutes

Cook Time: 10 minutes

Yield: 36 cookies

Brown butter gives these cookies a fabulous base cookie and adding butterscotch, white chocolate and milk chocolate chips these cookies are amazing. You will find yourself stuffing your face! 🙂

Ingredients

The other day I was going to a girls Valentines Day party. I made cupcakes but wanted some cookies too. I almost made my version of Perfect Chocolate Chip Cookies but I wanted something new, something different. This is how OTT cookies were born.

These cookies are that. Brown butter, milk chocolate chips, corn flakes, caramel bits, M&Ms and swirls of peanut butter.

I am not a huge peanut butter fan and most cookies that have peanut butter in them are chock full of peanut butter flavor. These have hints of peanut butter but it is not over powering. Perfect for me 🙂

I used Valentine colored M&M’s but obvi you could use any color of M&M’s anytime of the year! 🙂

I pressed the M&M’s into the dough after the dough was rolled out and put on the baking sheet.

Ingredients

  • 3/4 cup oat flour
  • 1 cup all purpose flour
  • 2 tsp cornstarch
  • 1/2 tsp baking soda
  • 3/4 cup (1 1/2 sticks) unsalted butter + 2 tbsp
  • 3/4 cup dark brown sugar
  • 1/2 cup granulated sugar
  • 1 tsp salt
  • 1 egg
  • 1 egg yolk
  • 1 tbsp vanilla extract
  • 7 tbsp peanut butter
  • 1 cup milk chocolate chips
  • 1 cup corn flakes
  • 1/2 cup caramel bits
  • 1/2 cup M&M's

Instructions

  1. In a medium bowl combine oat flour, all purpose flour, cornstarch and baking soda. Set aside.
  2. In a medium saucepan cook the butter except for 2 tbsp. Brown the butter- cook it on medium low until it turns a caramel brown color. You will begin to smell a nutty aroma.
  3. Once butter is browned pour into a mixing bowl, add remaining 2 tbsp butter. Let the mixture sit for 3-4 minutes until all butter is completely melted.
  4. Add dark brown sugar, granulated sugar and salt. Once fully combined mix in the egg, egg yolk and vanilla extract. Mix for 3 minutes.
  5. Slowly mix in flour mixture once about 3/4 combined add in 7 tbsp in different parts of the dough and finish mixing the dough.
  6. Stir in chocolate chips, corn flakes and caramel bits. Chill for at least 1 hour.
  7. Preheat oven to 350F and if using line your baking sheet with a silpat liner.
  8. Scoop dough into mounds and press M&M's into the top.
  9. Cook for 8-11 minutes. Mine cooked for exactly 10 minutes each batch.
  10. Let cool and devour!

Brown Butter Snickerdoodles

WOW. That’s all I have to say these cookies are amazing. Brown Butter Snickerdoodles cookies are the best snickerdoodles I have EVER encountered. Brown butter truly does makes everything better. But we already knew that didn’t we? Brown Butter Chocolate Chip Cookies.

These cookies are thick, puffy, snickerdoodle-y with caramel nutty hints in the background of the cookie.

Seriously Monique came up with a WINNER with this recipe.

Brown Butter Snickerdoodles

This dough is relatively easy to make you just need to chill it before baking. 3 hours to be exact.

Anytime and every time I make Snickerdoodles this will be the recipe I use. Absolutely fabulous. End of story.

Brown Butter Snickerdoodle

Prep Time: 15 hours

Cook Time: 10 hours

Total Time: 3 hours, 35 minutes

Yield: 30

Brown Butter Snickerdoodle

Ingredients

  • 2 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons cream of tartar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup/2 sticks unsalted butter
  • 1 1/4 cup dark brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 tablespoon vanilla extract
  • 1 tablespoon plain greek yogurt/sour cream
  • 1/4 cup granulated sugar
  • 2 teaspoons cinnamon

Instructions

  1. In a medium bowl mix together the flour, baking soda, cream of tartar, 1/2 tsp cinnamon and salt. Set aside.
  2. In a medium saucepan over low-medium heat cook the butter. Cook until it reaches a brown/caramely color. The butter will begin to have a nutty aroma. Take off and pour into another bowl to cool.
  3. Im bowl of an electric mixer combine butter, brown sugar and 1/2 granulated sugar until mixed together. Add in egg and egg yolk. Add in vanilla and greek yogurt.
  4. Slowly mix dry ingredients into wet ingredients. Wrap in plastic wrap and chill for at least 3 hours.
  5. After chilling preheat oven to 350F and line a baking sheet with a silpat liner.
  6. in a small bowl combine 1/4 granulated sugar and 2 teaspoons of cinnamon.
  7. Scoop dough to 2 tablespoons size and roll in cinnamon sugar.
  8. Place on baking sheet and bake for 9-11 minutes. Take them out when they look almost done. Let cool on pan for 5 minutes then transfer to a wire rack.
