Based on the Nutty Irishman Cocktail this no bake pie is filled with Bailey’s Irish Cream, Frangelico and of course we needed chocolate! This no bake pie is perfect for your next event!

I love pie, I didn’t grow up with much pie but when I did have pie it was often Cherry Pie with Custard. But I think I’ve had my fair share of Cherry Pie because once I get past the nostalgic thought I shake my head thinking Noooo not cherry pie!!

What I do love though is pies that are made with an Oreo Crust and chocolate! Because lezzzz be honest here I can’t get enough chocolate in my life. And if you are satisfied with the amount of chocolate in your life, you are lying. Okay maybe you’re not and maybe I have a slight addiction to chocolate. Shhh don’t tell anyone.

Anyways I also have a slight addiction to Baileys Irish Cream, especially in a Nutty Irishman drink. Baileys+ Frangelico= THE BEST DRINK EVER! I always have a few on St. Paddy’s cuz, well, they are bomb.

Last year I made a Bailey’s No Bake Pie but this year I just to take it up a notch and base the pie off of my favorite drink and add in some chocolate. Cuz, well, we already went over my addiction.

Make this pie Sunday night, let it sit in the fridge set up all beautifully and then Monday make some chocolate curls and serve!! Or you could make it easier and sprinkle mini chocolate chips on top. Either way, make it.

Nutty Irishman Pie (No Bake)

Prep Time: 20 minutes

Yield: 1 9 inch Pie

Ingredients

  • 28 Oreo Cookies ( 2 rows)
  • 1/2 stick of butter
  • 1 cup milk chocolate chips
  • 1 8oz block cream cheese, softened
  • 2 cups heavy cream
  • 3/4 cup Bailey's Irish Cream
  • 3 tbsp Frangelico
  • 1 good quality chocolate bar, frozen

Instructions

  1. In a food processor blend Oreo cookies until crushed to a fine crumb. Pour into a bowl and mix in 1/2 stick melted butter. Press into a 9 inch pie dish. Cover and chill for at least 1 hour.
  2. In a bowl on top of a saucepan or double broiler melt the chocolate. You want the saucepan to have about 1 inch of water and the bowl to sit on top of saucepan- as in not touching the water. Melt the chocolate and watch carefully, as chocolate burns easily. Once completely melted and smooth set aside.
  3. In the bowl of an electric mixer beat cream cheese for 2 minutes. Scoop into a clean bowl. In the same mixing bowl whip the heavy cream and first 1/2 cup Bailey's until stiff peaks form. Once whipped cream is formed fold in cream cheese, chocolate and remaining 1/4 cup of Bailey's Irish Cream and Frangelico. Pour into prepared pie dish. Cover and chill for at least 4 hours or over night. Using a vegetable peeler take a chocolate bar that has been frozen peel curls of chocolate to put on top of pie Or use this tutorial for chocolate curls or sprinkle on mini chocolate chips.

Guinness Chocolate Cookies

Anyways back to these cookies. Well, first of all, they have Guinness in them. So of course they win right off the bat, cookies and booze! And for those of you who have never baked with Guinness before it doesn’t make the baked good taste like Guinness it just really intensifies the chocolate flavor. It’s like the real deal for chocolate lovers. AKA me!

So there is cocoa powder, dark chocolate chips and milk chocolate chunks AND reduced Guinness so the chocolateness is redic. You chill this dough but hey I almost like dough that you chill better because who doesn’t just love taking dough straight out of the fridge to bake? That’s why the store bought dough is the best! Guinness Chocolate Cookies

Cook Time: 9 minutes

Yield: 36 Cookies

Guinness Chocolate Cookies

Ingredients

    Guinness Mixture
  • 1 11.2oz bottle of Guinness
  • 1/3 cup brown sugar
  • Cookie Dough
  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 tbsp vanilla extract
  • 2 cups all purpose flour
  • 1 cup cocoa powder, sifted
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/4 cup dark chocolate chips
  • 1 1/4 cup milk chocolate chips

Instructions

    Guinness Mixture
  1. In a saucepan over medium heat cook the Guinness and brown sugar together for 15-20 minutes. The mixture will reduce to 1/3 cup. Set aside to cool for a few minutes.
  2. Cookie Dough
  3. In the bowl of an electric mixer beat butter for 2 minutes, add sugars and beat for another 4 minutes. Add eggs and vanilla mix for 2-3 minutes until fully incorporated. Mix in Guinness mixture.
  4. In a medium bowl mix together flour, cocoa powder, baking soda and salt.
  5. Slowly add dry ingredients into wet ingredients, until just combined. Fold in chocolate and let chill for at least 2 hours or up to 2 days.
  6. Preheat to 350F and line a baking sheet with silpat liner, if using. Place 2 tbsp size balls of dough on sheet and place more chocolate on top of each dough for looks if you want. Bake for 9 minutes, dough will be just set but take out of the oven and let cool for 10 minutes before transferring to a wire rack.

Let me tell you about a horrible night in my life. I was sat at home with my sister just relaxing. Daydreaming about some sort of dessert but too lazy to bake anything myself. Lydia wanted Cannoli and I, well I wanted Tiramisu. So naturally Roman Cucina would be expecting  a visit from us. We called in our order and I threw some sweats on and drove down to the restaurant. I made Lydia get out of the car and pick up the desserts.

We got home, Lydia grabber her Cannoli box out of the bag and sat down on the sofa. I made myself some tea, grabbed a fork and picked up my box of tiramisu. At this moment I thought to myself “wow, this feels light, I wonder if they cut back on portions” ( Why the hell do I know how heavy a piece of Tiramisu should be? Cuz I have issues!!!) I plopped down on the sofa next to Lydia and opened my to go box.

A strangers leftover spaghetti. And this stranger had my untouched tiramisu. Heartbroken  I sank into my seat as my sister looked over and laughed at me. I had driven 15 minutes there and 15 minutes back for spaghetti?!!

Fast forward months later and I feel like tiramisu but don’t feee like making or buying lady fingers so cake, lets make a Tiramisu Cake I thought to myself. And boy am I glad I did. This cake was really quite easy to put together. And it was a show stopper. So gorgeous, mostly because of these chocolate curls. So easy to make and make any cake go from ordinary to glamorous!

Tiramisu Cake

Moist Yellow Cake is brushed with a Boozy Coffee Syrup topped with a Marscarpone Cream Filling and tons of Cocoa Powder & Easy Chocolate Curls

Ingredients

    Cake
  • 1 1/4 cups cake flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp table salt
  • 1 cup sugar
  • 5 large eggs (2 whole and 3 separated), room temperature
  • 6 tbsp unsalted butter, melted and cooled slightly
  • 2 tbsp water
  • 2 tsp vanilla extract
  • 2 tbsp Kahlua Coffee Liqueur
  • Cream Filling
  • 1 1/4 cups heavy whipping cream
  • 1 8oz container Marscarpone Cheese, at room temp.
  • 1/2 cup powdered sugar
  • 1 tbsp vanilla extract
  • 3 tbsp Kahlua
  • Coffee Syrup
  • 1 tbsp instant coffee
  • 3 tbsp boiling hot water
  • 2 tbsp Kahlua
  • 1/4 cup mini chocolate chips
  • cocoa powder for dusting

Instructions

    Cake
  1. Preheat oven to 325 degree and grease and flour a 9 by 2-inch cake pan.
  2. In a medium bowl whisk flour, baking powder, salt, and all but 3 tablespoons sugar in mixing bowl. Whisk in 2 whole eggs and 3 yolks (reserving whites), butter, water, vanilla and Kahlua. Mix until smooth- no lumps remaining.
  3. In the bowl of an electric mixer beat the 3 egg whites at medium speed until frothy. Keep whisk attachment still running and slowly add in the 3 tbsp of sugar, beat on medium-high speed until soft peaks for about 1-2 minutes.
  4. Stir one-third of egg whites into cake batter. Fold in remaining egg whites to batter until no white streaks remain. Pour into prepared pan and bake until toothpick inserted in center of cake comes out clean, 30 to 40 minutes. Cool in pan 10 minutes in pan then invert to a wire rack.
  5. Cream Filling
  6. In a large mixer beat heavy whipping cream until light and fluffy, a few minutes at high speed. Scrape whipped cream out, then put marscarpone in bowl and beat that for 2 minutes. Add in powdered sugar, vanilla and Kahlua beat until fully combined. Fold in whipped cream until fully combined.
  7. Coffee Syrup
  8. In a small bowl place instant coffee granules, add boiling water and mix until no granules remain. Stir in Kahlua.
  9. Assembly
  10. Once cake is cool cut in half. Place first half on cake plate. Using a pastry brush brush the cake with the coffee syrup, use half for the first layer. Then scoop half of the cream mixture on top, dust cocoa powder and sprinkle all chocolate chips on top. Place second cake layer, brush with remaining coffee syrup. Top with remaining cream and dust with cocoa powder. Optional to make chocolate curls, check out this how to on chocolate curls. Let cake chill and marinate for at least 3 hours before serving. Store in fridge.

Notes

This is a great make ahead dessert, the cake is best after chilling in the fridge for a long while.

So the other day I made these Pecan Laceys but as I was making them both my mother and nan walked by asking if I was making Brandy Snaps, but I wasn’t.

The pecan laceys were gorgeous. But today was another day and I needed to make these damn Brandy Snaps everyone was talking about. I remembered seeing a recipe by Ree Drummond on her website/cookbook so naturally I knew it would be a fool proof recipe.

I made these quickly and took them to work on one of the nights we had the Christmas Carolers, these were perfect, everyone loved them.

The only thing is you need to eat them soon after they have been filled, as in a few hours otherwise they get too soggy. I absolutely loved these and can’t wait to make them again. I used a lot heavier of  a hand when pouring the Brandy then Ree’s recipe but of course adjust to your liking. 🙂

Brandy Snaps

Ingredients

    Cookie
  • 1 stick unsalted butter
  • 1/2 cup molasses
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 2 tbsp brandy
  • 3/4 cup flour
  • 1/8 tsp salt
  • 1/4 tsp ground ginger
  • Brandy Cream Filling
  • 2 cups heavy whipping cream
  • 1/3 cup sugar
  • 1/4 cup Brandy

Instructions

    Cookies
  1. Preheat oven to 325F and line a baking sheet with a silpat liner or parchment paper.
  2. In a large skillet melt butter, molasses and sugars over medium heat. Let mixture cook for a minute or two then take off heat.
  3. Whisk in flour, ginger and salt to butte/sugar mixture. Add in brandy and stir to combine.
  4. Using a tbsp scoop cookie batter on to prepared sheet, only do 6 cookies per sheet, the cookies SPREAD.
  5. Bake for 10 minutes, or until the cookies are bubbling on the sheet. Remove sheet, place on wire rack and let cool for 5 minutes. Peal the cookie off of the sheet and place around a cannoli maker or the round metal handle of a potato mashed. You want to create a tube shape. Place molded cookies on a cold plate ( this will help them retain their shape) let all cookies cool completely.
  6. Brandy Cream Filling
  7. In the bowl of an electric mixer combine heavy whipping cream, sugar and brandy.Beat on high until stiff peaks form. Using a pastry bag and small-medium tip fill each brandy snap, serve directly after filling or up to 2 hours. Be careful as the cookies go soggy.

SOOOO tonight I saw Michael Buble in concert let me just say OH MY FREAKING GOSH THAT CONCER WAS AMAZING!!!!!!!!!!!! I literally cried while listening to some of the songs. I have been itching to see him for years but there was always some sort of conflict. This year my sisters and I bought 2 tickets for our parents as their Christmas present. But my mom was sick and my dad wouldn’t go without her so my sisters were going to go. But, naturally I wanted to go as well but I had work. Well, I asked around got my shift covered but was not sure if we could get anotehr ticket.

Luckily my sisters best friend works in the box office of this venue and pulled a few strings and viola I had a ticket!!! Naturally I brought some baked goods to the ticket office as a thank you, it’s what us bakers do- thank people with food! LOL

We got our tickets and we had 5th row!!!!! Seriously haven’t been this close since I saw the Spice Girls reunion tour a few years ago. I cannot speak highly enough of how Michael Buble interacted with the audience and he also kind of took everyones breath away, what a talented guy!!! If you ever get the chance to go see him, do it, so worth the money. I felt sad that my parents couldn’t go because they LOOOVE him as much as we do… guess it looks like more Buble tickets will be bought next time he is in town!! I cannot wait to see him again!!!

Anyways this tart, it’s boozy!! As in if you don’t like the taste of alochol it ain’t for you!! This tart was delicious!! I devoured it and also took some to work to share because I am nice like that 😉 Seriously though, Oreo cookie crust, alcohol, chocolate and salted caramel- that is some of the best ingredients ever so it has to be good!!!

Boozy Chocolate Tart

Prep Time: 3 hours

Cook Time: 15 minutes

Yield: 1- 9 inch tart

Boozy Chocolate Tart

Oreo cookie crust, Guinness & Dorda Double Chocolate Liqueur Filling, Dorda Double Chocolate Liqueur Whipped Cream and Salted Caramel make this Boozy Chocolate Tart one you won't be able to say no to!!

Ingredients

    Crust
  • 22 Oreo Cookies, finely ground
  • 4 tbsp butter
  • Filling
  • 1 cup Guinness Stout, cooked down to 1/2 cup
  • 1/2 cup milk
  • 3/4 cup heavy whipping cream
  • 1/4 cup Dorda Double Chocolate Liquer
  • 2 tbsp brown sugar
  • 2 tbsp unsweetened cocoa powder
  • 2 tbsp cornstarch
  • 2 ounces/ 1/4 cup good bittersweet chocolate, finely chopped
  • 1/2 tsp vanilla extract
  • Whipped Cream
  • 1 cup heavy whipping cream
  • 1/2 cup Dorda Double Chocolate Liquer
  • 2 tbsp powdered sugar
  • 1/4 cup salted caramel

Instructions

    Crust
  1. Preheat oven to 350F and grease a 9 inch tart pan with a removable bottom.
  2. Combine crushed oreos and melted butter. Press into tart pan and bake for 15 minutes. Remove and let cool on wire rack as preparing filling.
  3. Filling
  4. In a medium saucepan over medium heat whisk together the guinness, milk, cream, liqueur, brown sugar, cocoa powder and cornstarch. Bring to a boil then let simmer whisking constantly for 2-3 minutes.
  5. Remove saucepan from heat and whisk in chocolate and vanilla. Whisk until smooth. Pour on top of Oreo crust. Place a piece of wax paper on top of filling to prevent a skin from forming. Chill for 3 hours.
  6. Boozy Whipped Cream
  7. In the bowl of an electric mixer fitted with a whisk attachment combine whipped cream, liqueur and powdered sugar until stiff peaks form. Spread on top of chilled tart and drizzle with salted caramel

And just when I want to start baking again the sun will not give over. It has been so hot, wake up in the middle of the night sweating, hot. Sorry was that too much?

Well since I have been waking up so hot I needed something to cool me down!!! Why not ice cream cake? Okay maybe not for breakfast.. but I did have half a slice this morning. I was taking the photos nice and earlier in hopes the cake wouldn’t melt too much. It worked but it also worked on giving me a sugar high and crashing at work.

I whipped up this cake in all of about 10 minutes, well I let the ice cream and Cool Whip sit at room temp for about 30 minutes. Then I popped it in the freezer and let it harden over night. Each bite is filled with Bailey’s Irish Cream, I personally love Bailey’s but you can of course cut the quantity. The Heath Bars add wonderful texture and hey its english toffee, how can it not make anything betteR?! I do not know!!

Bailey's Double Chocolate Ice Cream Cake

Yield: 10

Boozy Double Chocolate Fudge Brownie Ice Pie is chock full of Heath Bar bites upon an Oreo Cookie Crust. Easy and perfect for the hot summer months.

Ingredients

  • 34 Oreo Cookies, finely crushed
  • 5 tbsp butter, melted
  • 1.5 Quart Double Fudge Brownie Ice Cream, at room temp (let sit out for 30 minutes)
  • 2/3 Cup Bailey's Irish Cream
  • 1 cup Cool Whip Topping, at room temp.
  • 1 1/2 cups chopped Heath Bar
  • 1/2 cup chocolate chips

Instructions

  1. Place crushed Oreo crumbs and melted butter in a bowl and mix until combined. In a 9 inch spring-foam pan place the Oreo mixture and press into the bottom and up the sides of the pan. Set aside.
  2. In a large bowl mix together ice cream and irish cream. Fold in whipped topping and 1 cup of Heath bars. Pour into prepared pan. Cover with plastic wrap and freeze overnight.
  3. In a microwave safe bowl melt chocolate chips for 20 second increments until melted. Mine took about 40 seconds. Drizzle on top of cake and place remaining Heath Bars.

Last week I had a crazy week, well okay I lied- the last few weeks. But last week was nuts. Normal for me. Anyways on Thursday night I wanted to make some banana bread. I started baking at about 11pm and just made a bananas foster base for the bread. I planned on keeping it that way but on Friday I was headed to a Pinterest Party and wanted to jazz it up a bit so I made a bananas foster sauce to pour on top and let it soak into the bread. While eating this I thought to myself great idea, Elizabeth! I loved this bread. I also loved dipping pieces in a bowl of bananas foster sauce. I have a feeling that you would too.

Ingredients

  • 1 cup brown sugar
  • 1 stick butter
  • 1/4 cup heavy cream
  • 1/4 cup rum
  • 1 tsp banana extract
  • 1 1/2 cup mashed banana (2-3)
  • 2 eggs
  • 1 tbsp vanilla extract
  • 2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp banana extract
  • 1/3 cup Chobani Greek Yogurt or sour cream
  • 1banana, sliced
  • 6 tbsp butter
  • 3/4 cup brown sugar
  • 2 tbsp heavy cream
  • 1/4 cup rum
  • 1/2 tsp banana extract

Instructions

  1. Preheat oven to 350F and grease a 9X5 loaf pan.
  2. In a medium saucepan cook brown sugar, butter, heavy cream, rum, banana extract and masehd bananas. Cook until all fully incorporated and let cook for an extra 2 minutes. Pour mixture into a large heatproof bowl and set aside to cool for 5 minutes. Add 1 tbsp vanilla and whisk in eggs.
  3. In a small bowl mix together flour, baking soda and salt. Fold into wet ingredients. Once no flour streaks remain fold in greek yogurt. Add sliced bananas on top and this is optional but I sprinkle brown sugar and a little butter on top before baking. Bake for 50-60 minutes- stick a toothpick inside to test for wet batter.
  4. In a small saucepan mix together butter. brown sugar, heavy cream, rum and banana extract. Once fully combined cook for another 2-3 minutes. Then you can slice the bread in the pan of poke holes in the bread and then pour the sauce on top and let it soak in.

This cake is soaked in Sweetened Condensed Milk, Evaporated Milk, Heavy Cream & Bailey’s. Basically amazing. The milk mixtures oozes out of the cake. I just wanted to drink it. I HATE milk but all those “milks” mixed together was spectacular!

I made the cake and served it about 4 hours later, so it had time to soak up everything. It was spectacular and the next day even better! This cake is not the easiest to make but worth the few steps. Will definitely be making this again and I hope you give it a try- it really is fabulous 🙂

Bailey's Tres Leches Cake- Confessions of a Baking Queen

Bailey’s Tres Leches Cake

Ingredients

  • 1 cup all purpose flour
  • 1 1/2 tsp baking powder
  • pinch of salt
  • 5 large eggs, separated
  • 1 cup plus 3 tbsp granulated sugar
  • 1/3 cup whole milk (I used 2%)
  • 2 tsp vanilla extract
  • 1/2 cup Bailey's Irish Cream
  • 1/2 cup heavy cream
  • 1 can sweetened condensed milk
  • 1 can evaporated milk
  • 2 cups heavy cream
  • 1/2 cup Bailey's Irish Cream
  • fresh berries for garnishing

Instructions

  1. Preheat oven to 350F and grease a 9X13 inch baking pan. Combine the flour, baking powder and salt in a large bowl. Set aside.
  2. In the bowl of an electric mixer combine egg yolks and 3/4 cup sugar. Mix on medium until very, very light in color. Then add in milk and vanilla extract, mix until just combined. Pour this mixture on top of the flour mixture. Gently fold together until no more flour streaks.
  3. In a clean mixing bowl beat the egg whites on high, until soft peaks form, then add 1/4 cup sugar and beat until you have stiff whites. Fold mixture into batter. Stop just before completely combined and pour into prepared pan. Bake for 34-45 minutes. Let cake cool completely.
  4. Once cool flip cake onto a platter. Using a fork poke the cake numerous times, the more holes the better! In a large bowl combine Bailey's Irish Cream, heavy cream, sweetened condensed milk and evaporated milk. Pour the milk mixture all over the cake. Pour slowly, some liquid will pool but most will be absorbed into cake. Let sit for 30 minutes. Then in the bowl of an electric mixer beat 2 cups of heavy cream,1/2 cup Bailey's Irish Cream and 3 tbsp sugar until thick cream is made. Spread on top of cake and garnish with berries. Keep refrigerated. The more time the milk has to soak in the better.

Pi Day! Woooo Hoooooo

And I celebrate Pi Day with Pie!

This pie is super easy to make. The only real time is the chilling time. I made it the night before I served it.

Bailey's Irish Cream Pie

I made this pie last week on Thursday night so I could bring it for a fat friday lunch time treat!

Bailey’s Irish Cream Pie

Ingredients

  • 28 Oreo Cookies ( 2 rows)
  • 1/2 stick of butter
  • 1 cup milk chocolate chips
  • 1 8oz block cream cheese
  • 2 cups heavy cream
  • 1 cup Bailey's Irish Cream Hint of Mint
  • 1 good quality chocolate bar, frozen

Instructions

  1. In a food processor blend oreo cookies until crushed to a fine crumb. Pour into a bowl and mix in 1/2 stick melted butter. Press into a 9 inch pie dish. Cover and chill for at least 1 hour.
  2. In a bowl on top of a saucepan melt the chocolate. You want the saucepan to have about 1 inch of water and the bowl to sit on top of saucepan as in not touching the water. Melt the chocolate and watch carefully as chocolate burns easily. Set aside.
  3. In the bowl of an electric mixer beat cream cheese for 2 minutes. Scoop into a clean bowl. In the same mixing bowl whip the heavy cream and 1/2 cup Bailey's until stiff peaks form. Once whipped cream is formed fold in cream cheese, chocolate and remaining 1/2 cup of Bailey's. Pour into prepared pie dish. Cover and chill for at least 4 hours or over night. Using a peeler take a chocolate bar that has been frozen peel curls of chocolate to put on top of pie.

So St. Paddy’s is coming up so it was only right I bake with some Guinness, right? Ok let’s be honest I don’t need an excuse to bake with booze! Working at a British pub I don’t shy away from booze in baking 😉 These Guinness Chocolate Brownies with Baileys Cream Cheese Frosting are spectacular but don’t be scared the stout flavor is not over powering. The Bailey’s frosting is another story! 🙂

I really love what Guinness does to baked goods. It really, like REALLY, enhances the chocolate flavor. Takes the chocolate flavor to a whole new level. These brownies were on the top level rich, decadent and UBERLY chocolate. (is uberly a word? it just sounded right to me)

Guinness Chocolate Brownies Baileys Cream Cheese Frosting

Rich, Chocolate Brownies are topped with a Bailey's infused Cream Cheese Frosting.

Ingredients

  • 1 stick of butter salted
  • 1/2 heaping cup of Choc chips
  • 1/2 cup cocoa powder
  • 1/2 cup Guinness ( I simmered about 3/4 cup until it reduced so the flavor was more intense)
  • 1 cup sugar
  • 2 eggs
  • 1 tbsp vanilla
  • 1 scant cup ap flour
  • 3 oz cream cheese, at room temp.
  • 1/2 cup Baileys Irish Cream
  • 2 1/2 - 3 cups powdered sugar

Instructions

  1. Melt butter and Choc chips together over double broiler once combined whisk in cocoa powder let sit for a few minutes
  2. Then whisk in Guinness.
  3. Mix in sugar, eggs one at a time and vanilla fold in flour
  4. Bake at 350F for 35 minutes in an 9X9 pan greased well. Bake until toothpick comes out clean let cool complete before frosting
  5. Beat 3 oz cream cheese for 2 minutes add 1/4 cup baileys and 2-3 cups powdered sugar beat for 3-4 minutes until completely combined and fluffy. Make sure to scrap down sides. Spread on top of brownies.
