So I know this is kind of a late post. Like its more of a “fall” type dessert and we are in “winter” but inSouthern California we don’t really have seasons as much. So I tend to eat lemon bars in fall and caramel apple bars in winter.

Caramel and apples are two of my all time favorite flavors. It’s a classic and goes back to eating caramel apples as a kid for me.

And then when you add a shortbread crust and an oaty brown sugary crumble, well I kind of die. And while these are bars, and you do not need ice cream, sometimes I like things over the top. Because let’s be honest, everything is better a la mode.

I miss blogging. My job keeps me SOO busy. And this time of year, is the best time of year, is also the craziest time of the year. We have so many people calling in for a last minute reservations, and of course it’s 40 people, coming in tomorrow. We also have the Dickens Christmas Carolers coming in, they carol at disneyland, they are sooo expensive but so amazing!!

My new years resolution is to get back into the swing of things. And I am trying to start that new year resolution now, with these Salted Caramel Apple Bars!

Salted Caramel Apple Bars

Ingredients

    Crust
  • 3/4 Cup AP Flour
  • 3/4 Cup Brown Sugar
  • 1 1/2 cup Unsalted Butter, cold and diced
  • 1/4 tsp Ground Cinnamon
  • Filling
  • 3 Medium Granny Smith Apples, thinly sliced
  • 1/4 cup AP flour
  • 1/4 cup Brown Sugar
  • 1/2 tsp Ground Cinnamon
  • 1/4 tsp Ground Cloves
  • 1/4 tsp Ground Nutmeg
  • Topping
  • 3/4 Cup AP Flour
  • 3/4 Cup Brown Sugar
  • 1/2 tsp Ground Cinnamon
  • 1/4 tsp Ground Cloves
  • 1/4 tsp Ground Nutmeg
  • 6 tsp Unsalted Butter, cold and diced

Instructions

    Crust
  1. Preheat 325F and line a 8X8 pan with foil, so the foil hangs over the sides of the pan. Grease the pan and set aside.
  2. In a large bowl combine the flour, sugar and cinnamon. Using clean hands mix in the cold butter. Rub together with your fingers or a pastry blender. Once combined press into prepared pan.
  3. Bake for 15 minutes.
  4. Filling
  5. In a large bowl place thinly sliced apples, flour, brown sugar, and spices together. Set aside.
  6. Topping
  7. In a medium bowl combine flour brow sugar, cinnamon, cloves and nutmeg. Add in cold butter and rub together to create a thick crumble. Set aside until crust has baked.
  8. Once crust has baked lay apples on top in an even layer and sprinkle topping on.
  9. Increase oven temp. to 350F and bake for 35-38 minutes, until top is golden brown.

I am a big Biscoff Fan. Always have been. Sorry Nutella, it’s all about Biscoff for me. I also love TJ’s version, Cookie Butter. I bake with it all the time.  I also find myself with a spoon and a jar of the stuff. One of my favorite ways to enjoy? Go to Trader Joe’s and Buy a pound plus bar of milk chocolate and a jar of cookie butter then using a chunk of chocolate scoop out a mound of cookie butter. HEAVEN on freaking earth people!! Well, for a foodie like me it is.

Another heavenly food item? Cheesecake so luscious, dreamy, creamy, smooth against  nice crunchy crust. Well I combined the two and added some apples for health reasons 😉 The results were finger lickin delicious. So delicious that these bars were gone FAR too quickly for my liking.

So I am going to Disneyland on Thursday and wanted to go to Club 33 for dinner, oneof my suppliers used to be the General Manager their so he can hook us up with reservations. Well I asked for the reservations but it is going through renovations!! Ugh I was so excited for dinner.. oh well! Will just have to go to the updated restaurant in August!! Roll on August!! LOL I was at Disneyland yesterday and did have the Monte Cristo Sandwich and then a Cookie Sundae from Ghirardelli Square.. ugh what a fattie.

Biscoff Apple Cheesecake Bars

Prep Time: 25 minutes

Cook Time: 40 minutes

Yield: 16 Cheesecake Bars

Biscoff Apple Cheesecake Bars

Ingredients

    Crust
  • 1 1/2 cup flour
  • 3/4 cup brown sugar
  • 3/4 cup butter, cold
  • Cheesecake
  • 16 oz Cream Cheese, at room temp.
  • 2 Eggs, at room temp.
  • 3/4 cup granulated sugar
  • 2 tsp vanilla extract
  • 1/4 cup Biscoff or Cookie Butter
  • 2 small Granny Smith Apples, diced into small pieces
  • Biscoff Drizzle
  • 1/4 cup Biscoff Spread

Instructions

    Crust
  1. Preheat oven to 350F and line a 9X9 deep baking pan with foil. In a small bowl combine flour, brown sugar and butter. Cut in butter with a pastry blender, two knives or I like to just rub everything together with my clean hands. Press into prepared pan and bake for 12 minutes. Set on wire rack to cool while preparing remaining components. Reduce oven temp to 325F.
  2. Cheesecake
  3. In the bowl of an electric mixer beat cream cheese for 3 minutes. Then add in sugar and beat for another 2 minutes. Add eggs in one at a time and vanilla. Pour in Biscoff Spread and beat for another 2 minutes. Pour on top of cooled crust. Sprinkle apple chunks on top of cheesecake batter and lightly press down with your hand.
  4. Bake for 38-45 minute, until cheesecake is set. Let cool completely. I like to let the pan sit on a wire rack for 1 hour then chill in fridge for 2 hours.
  5. Biscoff Glaze
  6. Place the Biscoff in a microwave safe bowl and cook for 20 seconds to help thin out the consistency. Drizzle on top of cooled bars. Store in fridge.

Salted Caramel Apple Cinnamon Rolls

Words can not explain my love and adoration for this rolls. Ooey, gooey, soft with salted caramel and cream cheese frosting. Help me contain my drooling for these Salted Caramel Apple Cinnamon Rolls.

I haven’t made cinnamon rolls in a LONG time. I get myself worked up that I don’t have the time for them but when I saw this recipe on Sally’s Baking Addiction I knew I would make time. Even if it meant staying up till 2 am to bake them for breakfast before work that morning.

Boy am I sure glad I did. These were amazing. A perfect well-balanced breakfast for a saturday morning if you ask me!

The salted caramel over the cream cheese frosting really was a treat. I absolutely love cream cheese frosting and this was perfect for these rolls.

Next weekend I am thinking some sort of bananas foster cinnamon rolls? Hmm.. that sounds good to me!!

Lets start this recipe shall we ?

Salted Caramel Apple Cinnamon Rolls

In a mixing bowl add the yeast and warm water. Let sit for a few minutes then mix together. Add in apple juice, egg, granulated sugar, salt, vanilla and 1 1/2 cups of flour. I used the dough attachment to my kitchen aid and every minute or so took the dough out and kneaded it myself. Spray a bowl with cooking spray and put your dough in the bowl and cover up. I heated my oven to 200f and then turned it off and placed the dough in the oven to rise.

In a small saucepan combine 2 tbsp butter and sliced apples. Cook for 5-8 minutes, until apples are very soft then place inside a dish in the fridge. After about an hour and a half the dough had doubled in size.On a clean working surface roll out the dough to a 15×9 rectangle.

In a small bowl mix together brown sugar and cinnamon. Sprinkle on to of dough then layer apples on top.

Sprinkle the remaining sugar mixture and I added a little bit more butter. The Paula Deen in me was coming out 🙂

Tightly roll the dough and use a SHARP knife to cut these babies. 15 rolls is what you will make around 1 inch each.

I took each roll into my hand and sort of squeezed it together to make sure they stayed like a roll 🙂 After they were cut I placed them into a 9X13 baking dish lined with parchment paper. Then I went to bed ! Nighty night! Zzzzzzzz..

When I woke up the dough had risen more and the cinnamon rolls were ready to bake. I loved seeing the apples poke through. Apples were a great addition!

Straight out of the oven on to a cooling rack. It was SOO hard for me to wait for these to cool a bit. I won’t lie I picked at the rolls a few times. I just NEEDED to try them!! SO good I could not wait of the cream cheese frosting and salted caramel.

I whipped up this delicious cream cheese frosting. In a mixing bowl whip cream cheese and butter for 3 minutes. Then add in powdered sugar, vanilla, and heavy cream in. Mix on high for 5 minutes. Add more powdered sugar if you want the frosting thicker.

This is the salted caramel recipe I use: Salted Caramel 

Salted Caramel Apple Cinnamon Rolls

Prep Time: 30 minutes

Cook Time: 30 minutes

Yield: 15 cinnamon rolls

Ingredients

  • 1 pack active dry yeast
  • 1/2 cup warm water
  • 1/2 cup apple juice
  • 1/4 cup granulated sugar
  • 1 tsp salt
  • 1 large egg
  • 1 tbsp vanilla extract
  • 2 tbsp butter, softened
  • 3- 3.5 cups ap flour
  • 1/2 stick butter, softened
  • 2 medium sized apples, thinly sliced
  • 1 cup dark brown sugar
  • 1 tbsp cinnamon
  • 6oz cream cheese, softened
  • 1/4 cup butter, softened
  • 2 1/2-3 cups powdered sugar, sifted
  • 1 tsp vanilla extract
  • 1/4 cup heavy cream

Instructions

  1. In the bowl of an electric mixer add yeast and warm water. Let sit for about 1 minute then stir together. Preheat oven to 200F.
  2. Add apple juice, granulated sugar, salt, egg, vanilla extract, butter and one and a half cups of the flour. Mix until completely combined.
  3. Add in the remaining 1 1/2 - 2 cups of flour with a wooden spoon.
  4. Attach dough attachment to mixer and mix for 5 minutes. Every minute or so I took the dough out and kneaded in with my hands. While dough is in the mixer spray a large bowl with cooking spray. Once the dough has been kneaded for 5 minutes transfer to the greased bowl.Cover with a clean dishtowel.
  5. Turn the oven off and place the bowl into the oven. Let the dough raise for 1-1 1/2 hours until it has doubled in size.
  6. In a small saucepan combine 2 tbsp of butter and sliced apples. Cook for 5-8 minutes until apples have softened. Place into a bowl and in the fridge to cool.
  7. Once dough has risen on a clean and floured surface roll out the dough to a 15X9 rectangle. Make sure to roll the dough out evenly. Place parchment paper on the bottom of a 9X13 inch baking pan and spray with baking spray.
  8. In a small bowl combine dark brown sugar and cinnamon. Use remaining 6 tbsp butter and spread all over the dough. Sprinkle half of the brown sugar mixture on top of butter, then layer apples all over. Sprinkle remaining brown sugar mixture.
  9. Roll the dough VERY tightly. Slice into 1 inch rolls, you will get about 15 rolls. Take each roll and squeeze together. Place in prepared pan. At this point I placed a tea towel on top of the rolls and let them sit on the counter over night. (You could let the rolls raise for another 1 1/2 hours if you don't want to wait over night)
  10. Preheat oven to 375F and cover rolls with foil. Cook for 20 minutes and take the foil off and bake for 5-10 more minutes until golden brown.
  11. Let cool for 15 minutes on a wire rack.
  12. In a bowl mix cream cheese and butter for 3 minutes. Add powdered sugar, vanilla and heavy cream and beat for 3-4 more minutes.
  13. Slather all over cinnamon rolls. Drizzle salted caramel over rolls.

Notes

Most of the prep time is letting the dough rise.
