I was feeling Christmasy what can I say? It’s December after all so no one can give me crap for that. Like people do in November…

I am all about Christmas. I love it. It truly is the best time of the year. And since I love Granola, it was only natural for a Christmas Granola to be made.

This came together in a cinch. I used my favorite Maple Almond Granola Clusters recipe and tweaked it for Christmas.

This literally takes all of 5 minutes together and in the words of my mother “You need to package this up and sell it” it is that good. Perfect for Christmas Gifts.

What makes this Christmas? Cranberries, Pistachios, Mixed Spice & Orange. To me that is Christmas. The flavors anyways.

Fair warning, you will need to hide this in the cupboard so it is out of sight otherwise you will eat the whole batch within a day.

Damit this was addicting. Perfect for snacking when its 7:30am and you’re knee deep in chocolate cake and sugar cookies and need to stop eating raw cookie dough.

 

Christmas Granola

Ingredients

  • 64 Grams (1/4 cup) Coconut Oil
  • 74 Grams (1/3 cup) Brown Sugar
  • 74 Grams (1/3 cup) Real Maple Syrup
  • 1 Tablespoon Vanilla Extract
  • 1 Large Orange, Zested and half juiced
  • 2 Teaspoons Mixed Spice
  • 110 Grams (1 Cup) Unshelled Pistachios, roughly chopped
  • 30 Grams (1/3 Cup) Sliced Almonds
  • 360 Grams (4 cups) Rolled Oats

Instructions

  1. Preheat oven to 325F and line a baking sheet with a silpat liner or parchment paper.
  2. In a medium bowl mix together the maple syrup, brown sugar, coconut oil, vanilla extract, mixed spice, zest of full orange and half of oranges juice . Fold in oats, almonds and pistachios and mix until fully combined.
  3. Dump onto baking sheet and using a spatula press down so granola is in a compact even layer.
  4. Bake for 30 minutes then sprinkle cranberries on top, bake for an additional 10 minuets, the granola will be a beautiful golden brown.
  5. Let cool on baking rack for 1 hour then break into clusters. Store in an air tight container for up to 2 weeks.

Yogurt has been my go to breakfast lately because the thought of oatmeal or even a waffle with peanut butter & fruit makes me start sweating. The past few weeks have been absolutely dreadfully hot! I find myself waiting to do my makeup in the car (not while driving) so I can have the ac blasting all over my face.

I look forward to October when *hopefully* the weather cools down. Last “winter” we had like two days of rain, I bought a new coat and three new sweaters last season that STLL have the tags on them because it was never cold enough to wear them. I hope this year it is.

Well, back to the yogurt. Chobani Pineapple Greek Yogurt is my favorite of all time. But the boring routine of yogurt each morning is annoying so I like to add granola.

I was out of my go to recipe so I decided to make a new granola, Cooke Butter Granola. Because who doesn’t freaking LOVE cookie butter?! No one I know!

The best part about this is the cluster are so big, so its perfect for crumbling on top of your yogurt or snacking on for your mid morning snack.

 

Cookie Butter Granola

Ingredients

  • 1/3 cup Coconut Oil
  • 1/4 cup Brown Sugar
  • 1/4 cup maple syrup
  • 1 tsp Vanilla extract
  • 1/3 cup Cookie Butter
  • 3 cups Rolled Oats
  • 1 cup Quick Oats

Instructions

  1. Preheat oven to 325F and line a baking sheet with a silpat liner or parchment paper.
  2. In a medium bowl mix together the coconut oil, brown sugar, maple syrup,cookie butter and vanilla extrat.Fold in oats and almonds and mix until fully combined.
  3. Dump onto baking sheet and using a spatula press down so granola is in a compact even layer.
  4. Bake for 35-40 minutes, the granola will be a beautiful golden brown.
  5. Let cool on baking rack for 1 hour then break into clusters. Store in an air tight container for up to 2 weeks.

Ingredients

    Banana Bread
  • 1/2 cup butter, melted
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tbsp vanilla
  • 2 eggs, at room temp.
  • 1 1/2 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3 bananas, smashed
  • 1 medium sized peach cut into small chunks
  • 1/3 cup greek yogurt
  • Cream Cheese Layer
  • 6oz cream cheese, at room temp.
  • 1 egg, at room temp.
  • 1/4 cup sugar
  • 2 tbsp all purpose flour

Instructions

    Banana Bread
  1. Preheat oven to 350F and heavily grease a 9X5 baking loaf pan.
  2. In a large bowl combine melted butter and sugars. Mix in vanilla and eggs until combined. Add in flour, baking soda and salt mixing until just combined. Fold in bananas, peaches and greek yogurt until just combined. Pour just over half of the batter into prepared pan. Set rest aside.
  3. Cream Cheese Layer
  4. In the bowl of an electric mixer beat cream cheese for two minutes. Add in sugar, egg and flour and beat until combined.
  5. Spread cream cheese batter on top of banana bread batter in pan. Pour remaining batter on top of cream cheese layer.
  6. Bake for 65-70 minutes or until toothpick inserted in the middle comes out clean, you want the bread to be set. If it starts to get too brown place a piece of foil on top of bread the last 20 minutes of baking. Let cool for 30 minutes on wire rack then invert to cool completely.

Maple Almond Granola Clusters

  Maple Almond Granola Clusters I used to love Honey Bunches of Oats cereal but I don’t eat much cereal these days. I do miss those big clusters. So I get my full with a little granola in my Greek yogurt.

Sometimes I will buy store bought granola but let’s be honest it’s crap compared to homemade. And making it is so stinkin easy and takes all of 6 minutes before baking. And it smells delightful.

I made this last week, it makes quite a bit of granola. But that didn’t stop my family. It was gone in three days. Guess that’s what I get for leaving it in a container on the counter. A handful here, there and boom it’s gone.

If I wasn’t in Nashville right now you can guarantee I would be making this.

Prep Time: 5 minutes

Cook Time: 40 minutes

Total Time: 45 minutes

Yield: 4 cups

Ingredients

  • 1/3 cup maple syrup

  • 1 cup quick oats
  • 1 cup sliced almonds

Whenever I go on a “road trip” usually Vegas, San Fran, San Diego, Santa Barbra… I ALWAYS buy a box of white cheddar cheese-its. I seriously cannot get enough of them. Then a while back I saw a recipe for homemade cheese crackers on my friend Kayle’s Blog and I knew I had to make them. I have made them about 5 times now, I love them, my sisters love them, my friends do, heck you will love them!

These are SOO easy to make and SOO delicious. I usually use a Sharp English Cheddar or sometimes just whatever I have on hand, and I always sprinkle them with sea salt. I have even sprinkled parmsean on top of them before baking before, I like cheese what can I say?! 😉

Ingredients

  • 1 cup ap flour
  • 1/4 tsp ground black pepper
  • 8 tbsp unsalted butter, at room temperature
  • 8 oz. sharp English Cheddar Cheese, finely grated
  • Sea salt for sprinkling on top of crackers

Instructions

  1. In a large bowl sifft together flour, salt, and pepper.
  2. In the bowl of an electric mixer beat the butter and cheese together. After a few minutes it will form into a butter cheese ball.
  3. Slowly add the dry ingredients on low. While the dry ingredients are being incorporated if is is too dry, add a splash of milk to help. Put the dough hook on the mixer or knead for a few minutes or knead by hand. Wrap in plastic wrap and refrigerate for 1 hour.
  4. Preheat oven to 350F and line a baking sheet with a silpat liner.
  5. Roll out dough on a heavily floured surface. Roll out till 1/8 inch thick and use a cookie cutter/ small lid to cut out crackers.
  6. Place crackers on silpat liner and press fork into them twice, sprinkle sea salt on and bake 12-15 minutes or until golden brown.

This has got to be my most favorite dip ever!! And BTW it couldn’t be any easier!! It’s not really a recipe I guess, I stop at Target pick up some Buttoni Pesto with Basil, a container of crumbled Feta Cheese and a jar of sun-dried tomatoes.

  • 1-7oz container Buttoini Pesto with Basil or (homemade)
  • 1- 5 oz container Feta Cheese, Crumbled
  • 1/4 cup chopped Sun Dried Tomatoes

  1. In a small shallow dish layer the pesto then the sundried tomatoes and feta on top.

Yield: 6 Regular Size Muffins

Maple Cream Filled Pumpkin Muffins

Ingredients

    For Pumpkin Muffins
  • 1 cup all purpose flour
  • 3/4 tsp baking powder
  • 1/4 tsp baking soda
  • 2 tsp pumpkin pie spice
  • pinch of salt
  • 1/2 cup brown sugar
  • Scant 1/4 cup granulated sugar
  • 1 cup pumpkin puree
  • 1 large egg
  • 2 tsp vanilla
  • 1/4 vegetable oil
  • For Maple Cream:
  • 1/4 Cup Shortening
  • 1/4 Cup Butter, at room temp
  • 1 tbsp Maple Extract
  • 1 1/4 Cup Powdered Sugar

Instructions

  1. Preheat oven to 350F and grease a muffin/cupcake pan and set aside.
  2. In a medium sized bowl combine flour, baking powder, baking soda, pumpkin pie spice and salt. Set aside.
  3. In the bowl of an electric mixer combine sugars, pumpkin puree, eggs, vanilla and vegetable oil until fully combined, Mix dry ingredients into wet ingredients until just combined. Scoop batter evenly into muffin pan, don't be afraid to fill them to the top. Bake for 16-18 minutes or until a toothpick inserted in comes out clean.
  4. Maple Cream
  5. Once muffins have cooled completley start filling. In a large bowl combine shortening and butter for 2 minutes. Add in maple extract, then powdered sugar. Beat until fully combined.
  6. Fill a pastry bag and large round top with cream filling poke tip directly into the middle of each muffin and squeeze, the muffin will begin to expand when filled. Dust powdered sugar on top.

So this one time I made this amazing Oat Flour Pumpkin Bread, my sister and I fell in love with it.

It was so moist, perfectly spiced and full of pumpkin flavor, not too oaty, and the maple glaze.. to die!

Then I went outside to snap a few pics, I tripped and it went everywhere. I also cut myself twice at work that day and the phone lines went down and I got a call for some credit card fraud. It was a great day, until my beloved Oat Flour Pumpkin bread fell all over the floor.

I am a clutz. Its a fact. I run into things, I fall over, I spill, I know my balance is not the best. Okay its not good at all. In the past I have dropped baked goods, and it is heartbreaking every time. Luckily I made this, taste it and then went to photograph it. I will be making this again, shortly. I just need a little bit of time, and right now its hard to come by, busy bee is my name!

Ingredients

  • 1 stick/ 1/2 cup unsalted butter
  • 1 cup of granulated sugar
  • 2 large eggs
  • 1 TSP Vanilla Extract
  • 1 3/4 cups oat flour (Blend 1 3/4 cup old fashioned oats until flour)
  • 1 TSP baking soda
  • 1/2 TSP salt
  • 1/2 tsp cinnamon
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg
  • 1/ 2 cup / roughly1 individual container of Greek Yogurt Plain or Vanilla
  • 1 cup pumpkin puree
  • Maple Glaze (Optional)
  • 1 heaping cup powdered sugar, sifted
  • 3 tbsp maple syrup
  • 1 tsp maple extract
  • 1 tbsp hot water

Instructions

  1. Preheat oven to 350F and grease a 9X5 loaf pan.
  2. Melt butter. In a large bowl mix together the butter and sugar. Then add eggs and vanilla. Mix in oat flour, baking soda, salt, cinnamon, cloves and nutmeg.
  3. Fold in greek yogurt and pumpkin into the flour mixture.
  4. Pour into prepared pan.
  5. Bake for 45 minutes. Of course always check with a toothpick to make sure it is fully cooked. Or a knife if you want to reach the bottom.
  6. Optional Maple Glaze
  7. In a small bowl mix together powdered sugar, maple syrup, maple extract and hot water. If too think add a tsp of water at a time to reach desired consistency. Drizzle on top of bread.

Cook Time: 16 minutes

Yield: 12 Regular Size Muffins

Pumpkin Muffins

Ingredients

  • 2 cups all purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp pumpkin pie spice
  • pinch of salt
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 14oz can pumpkin puree
  • 2 egg
  • 1 tbsp vanilla
  • 1/2 cup vegetable oil
  • Streusel
  • 1/2 cup flour
  • 1/4 cup brown sugar
  • 8 tbsp butter, at room temp.
  • 1/4 cup oats
  • Maple Glaze
  • 1 heaping cup powdered sugar, sifted
  • 3 tbsp maple syrup
  • 1 tsp maple extract
  • 1 tbsp hot water

Instructions

  1. Preheat oven to 350F and grease a muffin/cupcake pan and set aside.
  2. In a medium sized bowl combine flour, baking powder, baking soda, pumpkin pie spice and salt. Set aside.
  3. In the bowl of an electric mixer combine sugars, pumpkin puree, eggs, vanilla and vegetable oil until fully combined, Mix dry ingredients into wet ingredients until just combined. Scoop batter evenly into muffin pan, don't be afraid to fill them to the top.
  4. For the streusel in a medium bowl mix flour, brown sugar, butter, oats, pinch of cinnamon, nutmeg and cloves. Sprinkle heavily over muffin batter and bake muffins for 15-18 minutes or until a toothpick isnerted comes out clean.
    For the maple glaze
  5. In a small bowl mix together powdered sugar, maple syrup, maple extract and hot water. If too think add a tsp of water at a time to reach desired consistency. Lay a dishtowel down and place wire rack on top of towel. Dip donuts in glaze, place on wire rack. Enjoy 🙂

I absolute love Quiche Lorraine with some salad.

I made this on a Sunday afternoon, it was a real treat. Heavy cream, eggs, cheddar cheese, white cheddar cheese, grilled onions, bacon, spinach, and some salt and pepper are all the delicious ingredients inside this homemade pastry.

I knew I wanted cheese in the quiche, who wouldn’t?

But two types of cheese was a great decision. And I had half a white onion and half a red onion so I used both. And well bacon, bacon makes everything better. I’m salivating at the thought of bacon right now, seriously I could eat bacon alll day errry day.

And then since I am on a diet I added spinach, it made the whole quiche healthy, right?

Well that’s what I told myself anyways. This is the first quiche I have ever made and how easy it was! LOVE, LOVE, LOVE and can’t wait to make more!! Bacon, Spinach & Onion Quiche

Prep Time: 20 minutes

Cook Time: 55 minutes

Total Time: 1 hour, 15 minutes

Yield: 10 slices

Bacon, Spinach, Caramelized Onions, White Cheddar and Cheddar Cheese make this quiche absolutely delicious, All nestled in homemade pie. This quiche is a cinch to make, and everyone loves it!

Ingredients

  • 1 Pie Crust
  • 1 whole onion, chopped into small pieces
  • 2 tbsp butter
  • 8 slices of bacon
  • 7 large eggs
  • 1 1/3 cup heavy whipping cream
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 cup spinach
  • 2 cups cheddar cheese
  • 1 Pie Crust

Instructions

  1. Preheat oven to 350F and place pre-made pie crust into a 9 inch pie dish, set aside.
  2. In a large frying pan caramelize the onions in the butter, it took me about 10 minutes. Once done put onions on to a plate. Add bacon to frying pan and cook until nice and crispy. Place a paper towel on top of a plate and place bacon on paper towel once done cooking. Once cool chop bacon into small pieces.
  3. In a large bowl whisk together eggs, heavy cream, salt and pepper.
  4. Sprinkle bacon, spinach, onions and cheese on top of pie crust pour egg mixture on top and sprinkle remaining cheese on top. Bake for 45-60 minutes until set and golden brown. (mine baked for 55 minutes) Let cool completely before slicing, this is very important.
