I often find myself getting ready for work and sticking my head in the freezer to cool off before I put my make up on. I can’t help it I get so hot so easily. Sometimes I feel like I am having hot flashes but then I remember I am only 25.

When the freezer is too full for me to stick my face in to cool down sometimes I make a breakfast smoothie to cool down and on days that I have no self control, which let’s be honest is more often than not, I  reach for some frozen treat. I know way to start your day off right Elizabeth!

Let me tell you this was an AWESOME way to start my day off. I absolutely adore anything with an Oreo crust and then add sprinkles AND ice cream?!! Hello BABY!! Get me in!! I won’t lie though, this pie is extra sweet as in you only need a sliver unless you are a sugar addict like myself then just eat the whole damn thing 😉

Golden Oreo Cake Batter Ice Cream Pie

Prep Time: 20 minutes

Yield: 10 Slices

Golden Oreo Cake Batter Ice Cream Pie

Ingredients

    Golden Oreo Crust
  • 30 Golden Oreos, crushed
  • 1/4 stick butter, melted
  • Cake Batter Ice Cream
  • 2 cups heavy whipping cream
  • 1 can sweetened condensed milk
  • 1/2 cup dry yellow cake mix
  • 1/2 cup sprinkles
  • 10 Golden Oreo's, broken into pieces
  • Sprinkles for decoration

Instructions

    Golden Oreo Crust
  1. In a medium bowl combine crushed Oreos and butter until fully combined. Press mixture into a 9 inch pan pan, making sure to make an even layer that goes high up on the sides of the pie plate.
  2. Cake Batter Ice Cream
  3. In the bowl of an electric mixer whisk the heavy cream on high until stiff peaks form.
  4. Meanwhile in a bowl combine condensed milk, cake mix, sprinkles and Golden Oreos.
  5. Fold the condensed milk mixture into the heavy whipping cream.
  6. Pour into prepared pie crust, sprinkle the sprinkles on top, cover with plastic wrap and freeze for at least 6 hours or over night.
  7. Store in freezer.

I love pie, I didn’t grow up with much pie but when I did have pie it was often Cherry Pie with Custard. But I think I’ve had my fair share of Cherry Pie because once I get past the nostalgic thought I shake my head thinking Noooo not cherry pie!!

What I do love though is pies that are made with an Oreo Crust and chocolate! Because lezzzz be honest here I can’t get enough chocolate in my life. And if you are satisfied with the amount of chocolate in your life, you are lying. Okay maybe you’re not and maybe I have a slight addiction to chocolate. Shhh don’t tell anyone.

Anyways I also have a slight addiction to Baileys Irish Cream, especially in a Nutty Irishman drink. Baileys+ Frangelico= THE BEST DRINK EVER! I always have a few on St. Paddy’s cuz, well, they are bomb.

Last year I made a Bailey’s No Bake Pie but this year I just to take it up a notch and base the pie off of my favorite drink and add in some chocolate. Cuz, well, we already went over my addiction.

Make this pie Sunday night, let it sit in the fridge set up all beautifully and then Monday make some chocolate curls and serve!! Or you could make it easier and sprinkle mini chocolate chips on top. Either way, make it.

Nutty Irishman Pie (No Bake)

Prep Time: 20 minutes

Yield: 1 9 inch Pie

Ingredients

  • 28 Oreo Cookies ( 2 rows)
  • 1/2 stick of butter
  • 1 cup milk chocolate chips
  • 1 8oz block cream cheese, softened
  • 2 cups heavy cream
  • 3/4 cup Bailey's Irish Cream
  • 3 tbsp Frangelico
  • 1 good quality chocolate bar, frozen

Instructions

  1. In a food processor blend Oreo cookies until crushed to a fine crumb. Pour into a bowl and mix in 1/2 stick melted butter. Press into a 9 inch pie dish. Cover and chill for at least 1 hour.
  2. In a bowl on top of a saucepan or double broiler melt the chocolate. You want the saucepan to have about 1 inch of water and the bowl to sit on top of saucepan- as in not touching the water. Melt the chocolate and watch carefully, as chocolate burns easily. Once completely melted and smooth set aside.
  3. In the bowl of an electric mixer beat cream cheese for 2 minutes. Scoop into a clean bowl. In the same mixing bowl whip the heavy cream and first 1/2 cup Bailey's until stiff peaks form. Once whipped cream is formed fold in cream cheese, chocolate and remaining 1/4 cup of Bailey's Irish Cream and Frangelico. Pour into prepared pie dish. Cover and chill for at least 4 hours or over night. Using a vegetable peeler take a chocolate bar that has been frozen peel curls of chocolate to put on top of pie Or use this tutorial for chocolate curls or sprinkle on mini chocolate chips.

SOOOO tonight I saw Michael Buble in concert let me just say OH MY FREAKING GOSH THAT CONCER WAS AMAZING!!!!!!!!!!!! I literally cried while listening to some of the songs. I have been itching to see him for years but there was always some sort of conflict. This year my sisters and I bought 2 tickets for our parents as their Christmas present. But my mom was sick and my dad wouldn’t go without her so my sisters were going to go. But, naturally I wanted to go as well but I had work. Well, I asked around got my shift covered but was not sure if we could get anotehr ticket.

Luckily my sisters best friend works in the box office of this venue and pulled a few strings and viola I had a ticket!!! Naturally I brought some baked goods to the ticket office as a thank you, it’s what us bakers do- thank people with food! LOL

We got our tickets and we had 5th row!!!!! Seriously haven’t been this close since I saw the Spice Girls reunion tour a few years ago. I cannot speak highly enough of how Michael Buble interacted with the audience and he also kind of took everyones breath away, what a talented guy!!! If you ever get the chance to go see him, do it, so worth the money. I felt sad that my parents couldn’t go because they LOOOVE him as much as we do… guess it looks like more Buble tickets will be bought next time he is in town!! I cannot wait to see him again!!!

Anyways this tart, it’s boozy!! As in if you don’t like the taste of alochol it ain’t for you!! This tart was delicious!! I devoured it and also took some to work to share because I am nice like that 😉 Seriously though, Oreo cookie crust, alcohol, chocolate and salted caramel- that is some of the best ingredients ever so it has to be good!!!

Boozy Chocolate Tart

Oreo cookie crust, Guinness & Dorda Double Chocolate Liqueur Filling, Dorda Double Chocolate Liqueur Whipped Cream and Salted Caramel make this Boozy Chocolate Tart one you won't be able to say no to!!

Ingredients

    Crust
  • 22 Oreo Cookies, finely ground
  • 4 tbsp butter
  • Filling
  • 1 cup Guinness Stout, cooked down to 1/2 cup
  • 1/2 cup milk
  • 3/4 cup heavy whipping cream
  • 1/4 cup Dorda Double Chocolate Liquer
  • 2 tbsp brown sugar
  • 2 tbsp unsweetened cocoa powder
  • 2 tbsp cornstarch
  • 2 ounces/ 1/4 cup good bittersweet chocolate, finely chopped
  • 1/2 tsp vanilla extract
  • Whipped Cream
  • 1 cup heavy whipping cream
  • 1/2 cup Dorda Double Chocolate Liquer
  • 2 tbsp powdered sugar
  • 1/4 cup salted caramel

Instructions

    Crust
  1. Preheat oven to 350F and grease a 9 inch tart pan with a removable bottom.
  2. Combine crushed oreos and melted butter. Press into tart pan and bake for 15 minutes. Remove and let cool on wire rack as preparing filling.
  3. Filling
  4. In a medium saucepan over medium heat whisk together the guinness, milk, cream, liqueur, brown sugar, cocoa powder and cornstarch. Bring to a boil then let simmer whisking constantly for 2-3 minutes.
  5. Remove saucepan from heat and whisk in chocolate and vanilla. Whisk until smooth. Pour on top of Oreo crust. Place a piece of wax paper on top of filling to prevent a skin from forming. Chill for 3 hours.
  6. Boozy Whipped Cream
  7. In the bowl of an electric mixer fitted with a whisk attachment combine whipped cream, liqueur and powdered sugar until stiff peaks form. Spread on top of chilled tart and drizzle with salted caramel

I made this pie 6 days ago, a very long long long 6 days ago. I made it on a whim, I only had a pinch of time before work. But something told me I needed to bake. Usually when this happens I succeed.

I took it out of the oven, drizzled the salted caramel on top and could just tell this was going to be a winner. I took it to work that evening, I also was training my baby sister at work that night- oh what a fun night! Everyone had a slice and LOVED it! Lydia, my sister, said it was soooo good it was on the same level as my chocolate cake! Let me tell you Lydia speaks honestly, I can even tell by looking at her if she likes what I make.

Salted Caramel Apple Upside Down Pie

Ingredients

    Crust
  • 2 cups ap flour
  • 1/2 tsp salt
  • 6 tbsp shortening
  • 2 tbsp cold butter
  • 7 tbsp orange juice
  • Pie Topping
  • 4 tbsp butter, melted
  • 1/2 cup brown sugar
  • 1/2 cup pecans
  • Apple Filling
  • 7 medium apples (I used granny smith and pink lady), peeled and sliced to 1/4 inch
  • 2 tbsp lemon juice
  • 1/2 cup all purpose flour
  • 1/2 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground nutmeg
  • 1 cup salted caramel

Instructions

    Crust
  1. In a large bowl mix together the flour and salt, cut in the shortening and butter. Once the mixture resembles crumbs slowly add orange juice with a fork mixing until the whole mixture begins to form a ball. Divide ball into two pieces, wrap in plastic wrap and refrigerate at least 30 minutes.
  2. Pie Topping
  3. Preheat oven to 375F and line a 9 inch deep dish pie plate with foil and HEAVILY grease with cooking spray.
  4. In a medium sized bowl combine butter, brown sugar and pecans. Place mixture evenly on bottom of pie plate.
  5. Apple Filling
  6. Mix apple slices, flour, brown sugar, cinnamon nutmeg and cloves until fully combined. Roll one ball of pastry out to fit pie plate. Place half of apples evenly on bottom of pastry drizzle 1/4 cup salted caramel on top, place remaining apples then another 1/4 cup salted caramel.
  7. Roll out second ball of pastry to fit pie. Seal both pastry pieces together, you do not need to make a beautiful design because the pie is going to be flipped upside down. Make sure to still cut four 1-inch slits in the pie crust before baking. Bake for 50-55 minutes, check pie at 35 minutes if crust is becoming to brown cover with foil for remaining baking time. Let pie cool on wire rack for 15 minutes. Place serving dish on top of pie and flip over. Drizzle pie with remaining salted caramel. Serve with ice cream.

And just when I want to start baking again the sun will not give over. It has been so hot, wake up in the middle of the night sweating, hot. Sorry was that too much?

Well since I have been waking up so hot I needed something to cool me down!!! Why not ice cream cake? Okay maybe not for breakfast.. but I did have half a slice this morning. I was taking the photos nice and earlier in hopes the cake wouldn’t melt too much. It worked but it also worked on giving me a sugar high and crashing at work.

I whipped up this cake in all of about 10 minutes, well I let the ice cream and Cool Whip sit at room temp for about 30 minutes. Then I popped it in the freezer and let it harden over night. Each bite is filled with Bailey’s Irish Cream, I personally love Bailey’s but you can of course cut the quantity. The Heath Bars add wonderful texture and hey its english toffee, how can it not make anything betteR?! I do not know!!

Bailey's Double Chocolate Ice Cream Cake

Yield: 10

Boozy Double Chocolate Fudge Brownie Ice Pie is chock full of Heath Bar bites upon an Oreo Cookie Crust. Easy and perfect for the hot summer months.

Ingredients

  • 34 Oreo Cookies, finely crushed
  • 5 tbsp butter, melted
  • 1.5 Quart Double Fudge Brownie Ice Cream, at room temp (let sit out for 30 minutes)
  • 2/3 Cup Bailey's Irish Cream
  • 1 cup Cool Whip Topping, at room temp.
  • 1 1/2 cups chopped Heath Bar
  • 1/2 cup chocolate chips

Instructions

  1. Place crushed Oreo crumbs and melted butter in a bowl and mix until combined. In a 9 inch spring-foam pan place the Oreo mixture and press into the bottom and up the sides of the pan. Set aside.
  2. In a large bowl mix together ice cream and irish cream. Fold in whipped topping and 1 cup of Heath bars. Pour into prepared pan. Cover with plastic wrap and freeze overnight.
  3. In a microwave safe bowl melt chocolate chips for 20 second increments until melted. Mine took about 40 seconds. Drizzle on top of cake and place remaining Heath Bars.

This pie is super easy to make. The only real time is the chilling time. I made it the night before I served it.

I made this pie last week on Thursday night so I could bring it for a fat friday lunch time treat!

  • 1 good quality chocolate bar, frozen

Apple Pie with Cloves

“Apple pie with cloves, apple pie with cloves, NO cinnamon.” I’ve heard this phrase a million times over the last year. “I’ll make it for your birthday” I said. And that I did.

I’m not going to lie I was skeptical of an apple pie with no cinnamon, it just didn’t sound right? Well I am happy to say I was pleasantly surprised. The pie was fabulous, the apples were cooked to perfection not crunchy but not soggy. And the crust was spectacular. I really enjoyed the flavor the Clove spice brought through. The pie was sweet but not overly sweet. We enjoyed it with Birds Custard.

I hardly ever use the cloves but I want to play with the spice now!

{Let’s begin with the pie crust}

Place all-purpose flour, salt and chunks of cold butter into a large bowl. Use a pastry blender or two knives or your fingers to rub this mixture together.

Keep mixing the ingredients until you get a texture like bread crumbs. The butter will no longer be in chunks but evenly distributed amongst the flour mixture.  applepieclove (1 of 1)-6

Once you have reached the bread crumb point add cold water and use a knife with a rounded point to mix the water in. The dough will begin to clump together and soon you will be able to form it into a large ball/disc. Wrap in parchment paper and chill for at least 30 minutes. If you chill longer like over night then just make sure you let the dough sit before you use it so it will be workable.

Roll the dough out. I used about 2/3rds for the bottom of the pie and saved the rest for the top of the pie. Make sure you roll the dough out to about an 1/8 of an inch.

Cut your apples up and layer half  of them in the bottom of the pie.

In a small bowl mix together the sugar, cloves, nutmeg, lemon juice and lemon rind. Sprinkle half of mixture over apples.

Layer the rest of the apples followed by the rest of the sugar mixture.

Cut up some butter into cubes and place on top of apples.

Roll out the rest of the pie dough for the top. Pinch the bottom crust and top crust together and seal together  I used the pinch and pressing in method for the edges. I also cut out some dough for the pie to breathe while cooking. And since it was for Rusty’s birthday I decided to write her name out in dough.

  • 1 tsp salt
  • 1¾ stick unsalted butter, cold
  • 14 tsp cold water
  • 6 oz granulated sugar
  • 2 tbsp ap-flour
  • ½ tsp ground cloves
  • ¼ tsp ground nutmeg
  • 1 tsp grated lemon rind
  • 2 tsp lemon juice
  • 2 lb apples ( I used granny smith)
  • 3 tbsp unsalted butter, small cubes
  • 1 egg
  • Splash of milk
  • 1 tsp sugar
Directions
  1. Sift flour and salt together. Add cubed cold butter. Use a pastry blender, your hands or two knives to cut the butter into the flour. This will take some time.
  2. Once the mixture resembles crumbs add your COLD water. I add it in a little bit at a time. Mix with a round edge knife until the mixture begins to clump together then form into a ball. Wrap lightly in parchment paper and set in fridge for at least 30 minutes.
  3. Cut ⅔ of the dough off the ball and roll out on floured surface. Use a floured rolling-pin and roll the dough evenly to about an ⅛ of an inch. Place in pie dish.
  4. Preheat oven to 425F
  5. Peel and cut your apples to medium-sized slices. Keep some lemon juice on top of the apples to prevent them from turning brown.
  6. In a medium-sized bowl combine sugar, flour, cloves, nutmeg, lemon rind and lemon juice. Set aside.
  7. Place half of your apples inside the pie and sprinkle half of the sugar mixture on top. Place remaining apples on top and the rest of the sugar mixture.
  8. Roll out remaining ⅓ of dough for the top of the pie. Make sure to cut some sort of design or just a whole in the dough so the pie has room to breath.
  9. Seal the top and bottom pie crust with whatever design you like.
  10. In a cup mix together an egg, splash or two of milk and a tablespoon of sugar. Using a pastry brush cover the pie crust with it.
  11. Bake for 45-55 minutes

Banoffe Pie

Due to my English background I am very familiar with Banoffe Pie. It is amazing and my Auntie Marguerite always makes it! Maybe because we always request it! 🙂 The other day we had a party for my sissy’s birthday and Banoffee Pie made an appearance. Some of our friends were in shock about how good it was. Thus here I am spreading the word about how simply delicious this is! And it is simple to make. 

This truly is one of my favorite desserts. And you can easily tweak it to what you have on hand, bananas, berries, pineapple…the options are endless! Enjoy!! 🙂

* I used 2 full cans of cooked condensed milk, which was a bit too much but I have adjusted the recipe appropriately

Banoffe Pie

Ingredients
  • 1½ Cups Gram Cracker/Digestive Biscuits crushed into crumbs
  • 1 Cup of Butter
  • 1½ Cans of Sweetened Condensed Milk
  • 2 Large Bananas
  • 1¼ Cups Heavy Whipping Cream
  • ¼ Cup Powdered Sugar
  • 1 TSP Vanilla Extract
  • Milk Chocolate Bar for garnishing
Directions
  1. Preheat oven to 300F.
  2. To caramelize condensed milk pour milk into a large baking dish ( 13X9, 12 X 2..etc) just make sure the dish fits in your large roast pan. Cover condensed milk with foil and place baking dish with condensed milk in roasting pan and fill pan with water. Bake for 2hrs until the right, beautiful caramel color. Let cool completely
  3. Turn oven up to 350F. In a small bowl mix together the graham cracker crumbs and butter, until well combined. Press into a 9 inch pie dish. Bake in oven for 8-10 minutes. Let cool.
  4. Once crust and caramel cooled pour half of caramel over the crust and place sliced banana slices over the caramel and then top with the rest of the caramel. Chill in the fridge for 20-30 minutes.
  5. In bowl of an electric mixer combine heavy whipping cream, powdered sugar and vanilla. Whip on high until stiff peaks form.
  6. Top pie with fresh whipped cream.
  7. Optional- Use a peeler on a chocolate bar to create curls for top of pie.
