The countdown is on for my European adventure šŸ™‚ I cannot wait to see my nan in England and then off to Barcelona for a few days then on a cruise around the Mediterranean which ends in Venice and back to England for a bit. On to the reason this post is here…berry sweet rolls. They are absolutely delicious. When I rolled out the dough, added the berries and then rolled them up to cut the red juices started squirting out every where-looking like I just cut myself. This is the same dough I used in my favorite Cinnamon Rolls, it is so easy to make. So soft and moist, seriously I la la love it!! And making rolls is so easy. I used Organic Mixed Berries from Trader Joe’s- strawberries, blackberries, blueberries and raspberries and also some extra frozen blueberries from Costco. There were tucked inside this gorgeous dough, baked to perfection and drizzles with a lemon cream cheese glaze. One of my new favorites for breakfast. Honestly, delicious.

As pathetic as I am I actually didn’t feel to0 guilty eating these because there was fruit in them. Crazy? I know. How do I feel guilty eating Cinnamon Rolls with Cream Cheese frosting but not about eating Berry Sweet Rolls with a Lemon Cream Cheese Glaze? It makes no sense at all but in my screwed up mind it does šŸ˜‰

Berry Sweet Rolls

Cook Time: 25 minutes

Yield: 12

Berry Sweet Rolls

Moist, soft dough is filled with juicy strawberries, blueberries, blackberries and raspberries. Drizzled with a tangy lemon cream cheese glaze.

Ingredients

  • 1 package instant dry yeast
  • 1 cup + 2 tbsp warm water (110F-115F)
  • 1/4 cup sugar
  • 2 tbsp butter, melted
  • 4 1/2 tsp tsp nonfat dry milk powder
  • 1 tsp salt
  • 3 - 3 1/4 cups all purpose flour
  • 2 1/2 cups mixed frozen berries
  • 2 heaping tbsp cornstarch
  • 1/3 cup sugar
  • 1 8oz block cream cheese, at room temp.
  • 2 cups powdered sugar
  • 2 tbsp lemon juice
  • 1/2 tsp lemon extract

Instructions

  1. In the bowl of an electric mixer dissolve yeast in warm water. Add sugar, butter, milk powder, salt and two cups of flour. Mix until smooth. Slowly add in remaining flour to form a soft (not super sticky) dough. If using a dough hook, switch out the mixer hook and knead for 5-6 minutes in the electric mixer. I take the dough out of the mixer every minute or so and knead by hand. If not using a dough hook put the dough on a floured work surface and knead for 5-6 minutes.
  2. Preheat oven to 200F and then turn oven OFF. Spray a large bowl with cooking spray and place the dough inside.Place a clean kitchen towel on top of bowl and place bowl in warm but not on oven.
  3. In a medium sized bowl mix frozen berries, cornstarch and sugar. Set aside.
  4. Check dough after an hour it should have doubled in size, punch down. Grease a 9x13 baking pan and set aside.
  5. Place dough on a floured work surface, roll dough into a 16inchX 12inch rectangle. Sprinkle berries evenly over dough. Roll tightly and cut into 12 equal size pieces. At this point I wrap in plastic wrap and place in fridge over night.
  6. In the morning take out rolls and cream cheese and set on the counter to come to room temperature. Preheat oven to 350F and bake rolls for 25-30 minutes or until golden brown.
  7. In the bowl of an electric mixer beat cream cheese for two minutes, slowly add in powdered sugar, lemon juice and extract.
  8. Once rolls have cooled for 10 minutes drizzle glaze on top. Enjoy šŸ™‚

A few weeks ago I made these muffins, then these. So I had the Ā muffin itch again, I tend to get like that with baking. And I had a jar of dulce de leche starring at me so dulce de leche apple muffins were born. Moist, chock full of apples, swirled dulce de leche in the batter and a dulce de leche glaze? Dulce De Leche Apple Muffins

Ingredients

  • 2 cups flour
  • 1/2 cup quick oats
  • 1 cup granulated sugar
  • 3 tsp baking powder
  • 1/2 tsp cloves
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 2 eggs
  • 1/2 cup sour cream
  • 2/3 milk
  • 1/3 oil
  • 2 tsp vanilla
  • 1 large apple, cut into small chunks (mine came out to 1 1/2 cups)
  • 1 cup dulce de leche

Instructions

  1. Preheat oven to 375F and heavily grease a muffin pan.
  2. In a medium bowl mix together flour, sugar, quick oats, baking powder, cloves, nutmeg and salt. Set aside.
  3. In a large bowl mix together eggs, sour cream, milk, oil and vanilla. Slowly mix in dry ingredients, just until no flour streaks remain. Fold in apple chunks and 1/2 cup of dulce de leche.
  4. Fill muffin pans all the way to the top with batter. Sprinkle streusel on top. Bake for 18-20 minutes. Until a toothpick inserted in comes out clean. Place on wire rack to cool.
  5. Drizzle remaining dulce de leche on top of muffins. Store in an air tight container.

I have never been a muffin girl, unti lately. I do recall years ago my mom or teaches getting a large pack of muffins from Costco and one was apple with a maple glaze. I remember always begging for that muffin. It was delish.

Well it’s been a few years. And the other day the muffin just popped in my head. Baked goods seem to do that to me. Anyways I left work that day and stopped at Target to pick up some ingredients. Well un benounced to me the Target by my work has a 1/8 of a baking aisle and carries not fresh fruit. So no apples for the muffins I wanted. šŸ™ I was annoyed. But later that night I happened to go to Trader Joes and got my apples šŸ™‚ so muffins would be made the next day ! WOO HOO

Apple Muffins w/ Maple Glaze

Fresh apple chunks and spices fill this moist, fluffy muffin. Take it to the next level with a maple glaze. These muffins are everything and more and will be made time and time again in my kitchen!

Ingredients

  • 2 cups flour
  • 1/2 cup quick oats
  • 3/4 cup brown sugar
  • 1/4 cup granulate sugar
  • 3 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp cloves
  • 1/4 all spice
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 2 eggs
  • 1/2 cup sour cream
  • 2/3 milk
  • 1/3 oil
  • 2 tsp vanilla
  • 1 large apple, cut into small chunks (mine came out to 1 1/2 cups)
  • 1/2 cup flour
  • 1/4 cup brown sugar
  • 8 tbsp butter, at room temp.
  • 1/4 cup oats
  • Pinch cinnamon, nutmeg and cloves
  • 1 heaping cup powdered sugar, sifted
  • 3 tbsp maple syrup
  • 1 tsp maple extract
  • 1 tbsp hot water

Instructions

  1. Preheat oven to 375F and heavily grease a muffin pan.
  2. In a medium bowl mix together flour, quick oats,sugars, baking powder, cinnamon, cloves, all spice, nutmeg and salt. Set aside.
  3. In a large bowl mix together eggs, sour cream, milk, oil and vanilla. Slowly mix in dry ingredients, just until no flour streaks remain. Fold in apple chunks.
  4. To make streusel topping in a medium bowl mix flour, brown sugar, butter, oats, pinch of cinnamon, nutmeg and cloves.
  5. Fill muffin pans all the way to the top with batter. Sprinkle streusel on top. Bake for 18-20 minutes. Until a toothpick inserted in comes out clean. Place on wire rack to cool.
  6. In a small bowl mix together powdered sugar, maple syrup, maple extract and hot water. If too think add a tsp of water at a time to reach desired consistency. Drizzle on top of muffins.

Toffee Sprinkle Banana Bread

Prep Time: 10 minutes

Cook Time: 55 minutes

Total Time: 1 hour, 5 minutes

Yield: 10

Ingredients

  • 1 stick butter, melted
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 tbsp vanilla extract
  • 2 eggs
  • 2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 5 oz ish container greek yogurt
  • 3 very ripe bananas
  • 1 cup toffee bits
  • 1/2 cup sprinkles

Instructions

  1. Preheat oven to 350F and grease a 9X5 loaf pan.
  2. Melt butter. In a large bowl combine butter, granulated sugar and brown sugar. Add in vanilla and eggs. Mix until just combined. In a small bowl combine flour, baking soda, and salt. Mix dry ingredients into wet ingredients until just combined.
  3. Fold in bananas, greek yogurt, toffee bits and 1/4 cup sprinkles. Pour batter into prepared pan sprinkle top with remaining sprinkles. Bake for 55-65 minutes minutes or until toothpick inserted comes out clean.

Strawberry Blueberry Muffins

Ingredients

  • 2 cups all purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 stick (1/2 cup) unsalted butter, melted
  • 1/2 cup milk
  • 1/3 cup greek yogurt
  • 1 large egg
  • 1 tbsp vanilla extract
  • 3/4 cup strawberries, diced
  • 1/2 cup blueberries
  • 1/2 cup flour
  • 1 tsp cinnamon
  • 1/3 cup brown sugar
  • 6 tbsp butter, unsalted

Instructions

  1. Preheat oven to 400F and line a muffin/cupcake liner with liners. Set aside.
  2. In a large bowl combine flour, baking powder and salt. Set aside.
  3. In a bowl combine butter, milk, greek yogurt, egg and vanilla extract. Mix wet ingredients into the dry ingredients. Fold in strawberries and blueberries. Scoop batter into prepared muffin pan and fill 2/3rds of the weigh.
  4. In a small bowl combine flour, cinnamon and brown sugar. Rub butter into mixture. Sprinkle on top of batter. Bake for 18 minutes or until toothpick comes out clean.

Bagel Bombs

I have a weird relationship with cook books I NEED to have them. I buy tons on amazon and then amazon goes ahead and suggests another cookbook I need. It is aĀ viciousĀ cycle! Ā The problem is I look at them ooh and aww and then the book is put on the shelf. Rarely touched.

So my new goal is to bake/cook something from a cook book at least once a week. I bought theĀ Momofuku Milk BarĀ CookbookĀ a while ago, and while I absolutely LOVEĀ visitingĀ Milk BarĀ every timeĀ I am in NYC the cookbook has not been used. Until now! I already planned to make cinnamon rolls for my birthday morning so I decided to add bagel bombs to the menu.

These are SO easy to make and SO delicious. Seriously amaze!

The dough was super easy to make, I made it the night before to make things even easier. I cut the dough into chunks and placed a cube of frozen cream cheese mixture on top.

Brush these babies with an egg wash, sprinkle some cheese on and bake!

Bagel Bombs

Cook Time: 25 minutes

Yield: 16 bagel bombs

Ingredients

  • 3 1/2 cups flour
  • 1 tbsp salt
  • 1/2 packet yeast
  • 1 3/4 cup water
  • 5 oz bacon
  • 16 oz cream cheese
  • 3 scallions thinly sliced
  • 2 tsp sugar
  • 1 tsp salt
  • 1 egg
  • 1 cup good quality cheese grated

Instructions

  1. Stir together flour, salt and yeast in the bowl of electric mixer. Add water and continue mixing. The mixture will come together in a "shaggy mass". Put the dough hook on and mix for 3 minutes or until the dough is smoother and in one big ball. Continue to knead dough for 4 more minutes on low speed. The dough should bounce back when prodded.
  2. Spray a large bowl with cooking spray and place dough in bowl. Cover with plastic wrap and let dough rise at room temperature for 45 minutes. Then you can use your dough or if making ahead of time place it in an airtight container at least double its size and place in fridge until using. When ready to use let dough sit at room temp 30-45minutes before using.
  3. Beat cream cheese until light and fluffy 3-4 minutes.
  4. Cook bacon till nice and crisp, then cut into small pieces. Combine bacon fat in with cream cheese.
  5. Mix in scallions, sugar, salt and bacon pieces. Place mixture in an 8X8 pan and freeze for at least 1 hour or over night.
  6. Preheat oven to 325F and line a baking sheet with silpat liner. On a dry countertop punch down dough and then divide into 16 equal pieces. Gently stretch each piece of dough into a mini disc shape between 2-3 inches wide. Take cream cheese mixture out of freezer and cut into 16 equal chunks. Place one chunk of cream cheese on the middle of dough disc. Pinch dough together to fully enclose cream cheese, roll dough between hands to ensure fully closed.
  7. Crack and egg and whisk it for 1 minute. Brush egg mixture on top of bagel bombs and sprinkle with cheese. Bake for 20-30 minutes.

Homemade Maple Granola

Juice bars have been popping up everywhere and my yoga pants have been gettings lots of use. I wanted to ease up on the sugar, for that morning anyways. So I made some granola to go with my plain greek yogurt. Have you ever had plain greek yogurt? Ugh I cannot do it! So I decided to add granola for a fabulous texture and sweetness.

I had never made granola before but knew it couldn’t be that hard. I was right! ( funny how thatĀ happensĀ šŸ˜‰ ) This granola was super easy ot make and super tasty.

Homemade Maple Granola

Ingredients

  • 3 cups rolled oat
  • 1/2 cup slivered almonds
  • 1/2 chopped pecans
  • 1/3 cup maple syrup
  • 1/4 cup honey
  • 1/4 cup coocnut oil melted
  • 1/4 tsp maple extract
  • 1 tsp vanilla
  • 1/8 cup honey
  • 1/8 cup maple syrup

Instructions

  1. Preheat oven to 350F and line a baking sheet with a silpat liner. In a large bowl mix together the rolled oats, slivered almonds and pecans. Set aside.
  2. In a small bowl mix together the maple syrup, honey, coconut oil and maple extract. Pour over oat mixture. Mix so everything is coated. Spread on to prepared sheet and bake for 10 minutes. After ten minutes take out of oven and mix everything around. Bake for another 15 minutes.
  3. Let cool on tray. Once cooled I drizzled on an a little extra honey and maple syrup, just for fun!
  4. Store in an airtight container for up to 2 weeks.

I started baking at about 11pm and just made a bananas foster base for the bread. I planned on keeping it that way but on Friday I was headed to a Pinterest Party and wanted to jazz it up a bit so I made a bananas foster sauce to pour on top and let it soak into the bread.   • 1 cup brown sugar
  • 1 stick butter
  • 1/4 cup heavy cream
  • 1/4 cup rum
  • 1 tsp banana extract
  • 1 1/2 cup mashed banana (2-3)
  • 2 eggs
  • 1 tbsp vanilla extract
  • 2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp banana extract
  • 1/3 cup Chobani Greek Yogurt or sour cream
  • 1banana, sliced
  • 6 tbsp butter
  • 3/4 cup brown sugar
  • 2 tbsp heavy cream
  • 1/4 cup rum
  • 1/2 tsp banana extract

Instructions

  1. Preheat oven to 350F and grease a 9X5 loaf pan.
  2. In a medium saucepan cook brown sugar, butter, heavy cream, rum, banana extract and masehd bananas. Cook until all fully incorporated and let cook for an extra 2 minutes. Pour mixture into a large heatproof bowl and set aside to cool for 5 minutes. Add 1 tbsp vanilla and whisk in eggs.
  3. In a small bowl mix together flour, baking soda and salt. Fold into wet ingredients. Once no flour streaks remain fold in greek yogurt. Add sliced bananas on top and this is optional but I sprinkle brown sugar and a little butter on top before baking. Bake for 50-60 minutes- stick a toothpick inside to test for wet batter.
  4. In a small saucepan mix together butter. brown sugar, heavy cream, rum and banana extract. Once fully combined cook for another 2-3 minutes. Then you can slice the bread in the pan of poke holes in the bread and then pour the sauce on top and let it soak in.

Tomorrow (well today when this post goes live) I will be visiting Glen Ivy Hot Springs for a fabulous spa day with all my bestĀ girlfriends! Except kitty kat in nyc! šŸ™ I will also beĀ receiving a facial! WOO HOO!! And because I have serious baking issues I have decided to ask everyone over for breakfast before we head to the spa. I will be making bagel bombs and these babies! I love cinnamon rolls and this dough is honestly spectacular I LOVE IT!!!

Ā This sweet bread/roll was delicious. Seriously I found myself picking at the rolls before the cream cheeses frosting made its’s way on top. It is soft, chewy and sweet!

But then cream cheese frosting came along and gosh was I happy!Ā So happy I dug right in and took this baby down.

I make these rolls the night before I want them. Because who really wants to spend all morning making cinnamon rolls? I sure as hell don’t. I want to wake up and and have them before my stomach starts eating away, yelling at me not for feeding it! LOL You can even make the cream cheese frosting the night before to make it even easier.Ā 

Overnight Cinnamon Rolls- Confessions of a Baking Queen Making yeast rolls is not hard at all! If anything, it is just timeĀ consumingĀ waiting for the yeast to do it’s magic. This dough also has milk powder in it-which I LOVE! I picked up a bag of dry milk in the baking aisle at Target.

Cinnamon Rolls

Yield: 12 Cinnamon Rolls

Ingredients

  • 1 package instant dry yeast
  • 1 cup + 2 tbsp warm water (110F-115F)
  • 1/4 cup sugar
  • 2 tbsp butter, melted
  • 4 1/2 tsp tsp nonfat dry milk powder
  • 1 tsp salt
  • 3 - 3 1/4 cups all purpose flour
  • 2 tbsp butter, melted
  • 1 1/2 cups brown sugar packed
  • 1 tablespoon ground cinnamon
  • 6 tbsp unsalted butter, softened
  • 8 oz cream cheese, softened
  • 1/4 cup butter ( 1/2 stick)
  • 1 tbsp vanilla extract
  • 2 tbsp heavy cream
  • 2 cups powdered sugar

Instructions

  1. In the bowl of an electric mixer dissolve yeast in warm water. Add sugar, butter, milk powder, salt and two cups of flour. Mix until smooth. Slowly add in remaining flour to form a soft (not super sticky) dough. If using a dough hook, switch out the mixer hook and knead for 5-6 minutes in the electric mixer. I take the dough out of the mixer every minute or so and knead by hand. If not using a dough hook put the dough on a floured work surface and knead for 5-6 minutes.
  2. Preheat oven to 200F and then turn oven OFF. Spray a large bowl with cooking spray and place the dough inside.Place a clean kitchen towel on top of bowl and place bowl in warm but not on oven.
  3. Check dough after an hour it should have doubled in size, punch down. And place on a floured work surface. roll dough into a 16inchX 12inch rectangle. Grease a 9x13 baking pan and set aside. Brush the dough with 2 tbsp melted butter. In small bowl mix together brown sugar and cinnamon. Sprinkle sugar mixture on top of dough and slice the 6 tbsp butter thinly and layer on top of sugar. Roll the dough tightly and cut with sharp knife into 12 pieces. Place rolls into prepared pan, cover with plastic wrap and place in fridge over night or let rise until doubled in size (30 ish minutes) and bake.
  4. When you wake up take cinnamon rolls out of fridge and set on counter to rise/thaw for 45 ish minutes. Preheat oven to 350F and bake for 25-30 minutes. Let sit for 5-10 minutes before putting cream cheese on.
  5. While baking beat cream cheese for 2 minutes in large bowl. Add butter and beat for another 2 minutes. Pour in vanilla extract, heavy cream and powdered sugar. Beat all together for 4 minutes. Slather on top of cinnamon rolls.

Happy National California Strawberry Day! Woo hoo two of my favorite things Strawberries and California! Needless to say this banana bread fills thatĀ requirement! Bursting with strawberry and banana flavors! YUM!

I recently made pudding banana bread. Which was fab! But I won’t lie I love all kinds of banana bread.
Anyways, I had an idea to use strawberry pudding in place of banana pudding. The thing is I don’t think I saw strawberry pudding, I think I just saw strawberry jell-o and bought that.

I mixed everything as normal (thinking it was strawberry pudding) Ā and baked it. As the bread was baking I had a thought. Wait, I don’t think that was pudding Elizabeth, I think it was jello and I was right. I checked the trash and that was definitely Ā a jello box. Needless to say at this point I was a bit skeptical as to how the bread would turn out.Ā 
Strawberry Banana Bread Well, it turned out great. Just what I had hoped for a strawberry tasting banana bread. This recipe is easy and quick like any other quick bread šŸ˜‰ I hope you give this Strawberry Banana Bread a go!

Strawberry Banana Bread

Prep Time: 10 minutes

Cook Time: 60 minutes

Total Time: 1 hour, 10 minutes

Ingredients

  • 1 stick butter, melted
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 2 eggs
  • 2 cups of flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 3oz box Strawberry Jell O Mix
  • 1 cup sliced strawberries
  • 3 Bananas, smashed
  • 1 5oz container Chobani Greek Yogurt (plain, strawberry or banana)

Instructions

  1. Preheat oven to 350F and grease a 9X5 loaf pan.
  2. In a large bowl combine melted butter, granulated sugar and brown sugar. Add eggs one at a time and vanilla. Add flour, baking soda, salt and pudding mix to the wet ingredients, mix until just combined. Fold in mashed bananas, strawberries and yogurt. Pour into prepared pan and bake for 60-70 minutes or until toothpick inserted comes out clean.
